- Trim or snap the ends off of the green beans. Slice or chop 5 cloves of garlic into small pieces.
- Bring a 1/2 cup of water to boil in a shallow pan and add the green beans. Cover and cook for 2-3 minutes until bright green. Drain beans and wipe the pan clean.
- In the same pan on medium-low heat saute the garlic in a 1/4 cup of olive oil until lightly golden (about 1-2 minutes).
- Add the green beans to the pan and mix well. Cook for 2-3 minutes longer and add 1 tsp of kosher salt. Taste test and adjust salt, or add pepper if desired. Turn off heat and drizzle some extra virgin olive oil on top before serving. Enjoy!

ITALIAN BEANS AND GREENS
This is a go to recipe for me for pot luck. It is always a hit. Even among people who don't think they like beans or greens. If I make it as a side dish instead of a main, I substitute quartered sauteed mushrooms for the Italian sausage. The Kale is one of the big bags in the produce section. Of course, you can chop your own. I also roast my own garlic on the weekends and save in a jar. It's really worth it for this dish. This is great on it's own, on top of or with with slices of crusty bread. It's hard to mess this dish up. Just don't under cook the kale or it will be too tough.

- Simmer kale in a large pot of salted water until al dente, drain.
- (Can refrigerate kale after cooked for dish preparation at another time.).
- Pre-heat a large pot or frying pan. Add olive oil to taste.
- Saute chopped shallot until translucent.
- Remove skin from the Italian sausage, Break up into bite sized chunks.
- Add sausage to the shallots and brown / cook sausage completely.
- Add drained beans to the sausage.
- Add roasted garlic, sea salt and pepper to taste and stir / flip mixture gently while cooking for 5 minutes.
- If the beans start to stick, add a little water.
- Add cooked kale.
- Add a little water to make a small amount of thick sauce.
- Cover with a lid and simmer for 5 minutes or until ready to serve.
- Also very good made a head and reheated.
- It will keep for a week.

- Prep all vegetables according to specifications above.
- Bring a large pot of water to a boil. Once the water comes to a boil, add salt, then the beans. (See NOTE below.)
- Boil the beans for about 5 minutes or until they are soft. Remove & set aside, keeping the water for boiling the potatoes.
- Bring the pot of water back up to a boil, covering the pot if necessary. Then, add the potatoes to the boiling water and cook for about 10 minutes or until the potatoes are soft. Remove & set aside. Reserve 1-2 cups of the starchy potato water before discarding the rest of the water.
- While the vegetables are boiling, heat the oil in a large sauté pan on medium-high heat. Once the oil is hot, add the onions and sauté until they begin to lightly caramelize (about 10 minutes), stirring occasionally. Add the garlic and crushed red pepper and continue to sauté another 2 minutes.
- Add the cooked beans and potatoes to the onions and mix well. Continue to cook the mixture until the beans are very soft, adding a bit of the starchy potato water if more moisture is needed and partially covering the pan.
- Once the beans are cooked to your desired doneness, season the dish with salt and pepper, then finish with a drizzle of extra-virgin olive oil.
- Serve warm or at room temperature. Buon Appetito!

- Cook the green beans in a large pot of boiling water until just crisp-tender, about 3 minutes. Drain and rinse in cold water. Drain well; set aside.
- Melt the butter and oil in a heavy, large skillet over medium heat. Add the shallots and garlic and saute until tender, about 2 minutes. Add the tomatoes and cook until heated through, about 3 minutes. Add the beans and cook until the juices evaporate and the beans are almost tender, stirring often, about 10 minutes. Stir in the wine and basil. Simmer 2 minutes longer. Season with salt and pepper, to taste. Transfer to a serving bowl, and serve.
- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2-inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.

- Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
