Very nice pork tenderloin that you can serve to any company. The sauce is great in this. Serve over rice or pasta. Original recipe from Annacoyne from Allrecipes and altered slightly for our taste.

2 tablespoons olive oil
1/4 cup chopped prosciutto
2 tablespoons chopped fresh parsley
2 tablespoons chopped sun-dried tomatoes packed in oil
1/4 cup chopped onion
2 -3 garlic cloves, minced
1 1/2 lbs pork tenderloin, cut into 1/2 inch strips
1/2 cup chicken broth
1/2 cup heavy cream
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat the oil in a skillet over medium-high heat.
  • Saute the prosciutto, parsley, sun-dried tomatoes, onion and garlic 5 minutes, until onion is tender.
  • Mix the pork strips into the skillet and brown about 10 minutes, turning once.
  • Stir the broth and heavy cream into the skillet, and season with salt and pepper.
  • Bring to a boil.
  • Reduce heat to low, and simmer 20 minutes, stirring occasionally until pork reaches a minimum temperature of 160 degrees and sauce is thickened.
  • For thicker sauce, mix a little flour with a little water and stir into sauce.

½ cup finely chopped yellow onion
⅓ cup dry white wine
¼ cup unsalted butter
¼ cup Dijon mustard
3 tablespoons white balsamic vinegar
2 tablespoons lemon juice
1 tablespoon whole grain mustard
1 tablespoon turbinado sugar
1 teaspoon lemon zest
1 teaspoon kosher salt
1 teaspoon dried tarragon, divided
2 (1 pound) pork tenderloins
2 tablespoons olive oil
1 teaspoon ground black pepper
1 cup heavy cream

Steps:

  • Prepare a thermocirculator and water bath according to manufacturer's directions. Set thermocirculator to 135 degrees F (58 degrees C); if you want pork cooked medium instead of medium-rare, set to 145 degrees F (63 degrees C), and allow water bath to come up to temperature.
  • Combine onion, wine, butter, Dijon mustard, vinegar, lemon juice, whole grain mustard, turbinado sugar, lemon zest, salt, and 1/2 teaspoon tarragon in a medium microwave-safe bowl. Place in microwave and cook on high power until butter melts and sugar dissolves, stirring halfway through, about 1 minute. (This yields 1 1/2 cups sauce).
  • Place tenderloins in a vacuum-sealable bag with 3/4 cup of the mustard mixture and massage contents of bag to ensure meat is coated evenly in sauce, spacing tenderloins in a single layer in the bag. Seal bag with a vacuum sealer according to manufacturer's directions.
  • Transfer vacuum-sealed tenderloins to warm water bath with thermocirculator; cover vessel with aluminum foil to reduce evaporation. Cook to desired doneness, 45 to 50 minutes; meat will be 135 or 145 degrees F (58 to 63 degrees C) when done depending on desired doneness.
  • Remove bag from water bath, transfer meat to a plate and pat dry with a paper towel. Rub with olive oil and sprinkle with pepper.
  • Heat a large nonstick skillet over medium-high heat. Sear tenderloins in skillet until deeply browned on all sides, 3 to 4 minutes on each side. Transfer to a cutting board to rest for 5 minutes. Wipe skillet clean with a paper towel if any drippings are too dark.
  • Reduce heat to medium. Add remaining 3/4 cup mustard sauce to skillet and allow to come to a simmer, reducing until slightly thickened, 1 to 2 minutes. Add cream and remaining 1/2 teaspoon tarragon to skillet, and cook, stirring occasionally, until sauce has thickened enough to coat the back of a spatula, about 1 minute. Slice tenderloins and serve with sauce.

Steps:

  • Preheat grill for indirect cooking.
  • Finely chop together rosemary and other spices.
  • Rub into surface of pork tenderloins.

  • Let the tenderloins rest for about 5 minutes; slice and serve!

1 1/2 lbs pork tenderloin (whole)
10 fresh basil leaves
1/4 cup parmesan cheese (freshly grated)
3 tablespoons sun-dried tomato paste
1/4 cup pitted black olives (chopped)
2 garlic cloves (minced finely)
6 -8 slices prosciutto ham (thinly sliced)
1 tablespoon olive oil

Steps:

  • Preheat the oven to 375 degrees.
  • Spray a roasting pan with cooking spray lightly.
  • Slice the pork tenderloin lengthwise down the center taking care NOT to cut all the way through.
  • Open out the pork, and season all over with salt, and black pepper to taste.
  • Lay the washed basil leaves, end to end, down through the middle of the cut in the pork.
  • Mix together, the sun-dried tomato paste, the chopped black olives, the minced garlic, and the grated parmesan, in a bowl.
  • Spread the resulting paste evenly, over the basil leaves, across the whole length of the center of the tenderloin.
  • Press the tenderloin back together.
  • Lay the prosciutto slices, side by side, with the edges overlapping by about 1/2 an inch.
  • Place the whole stuffed tenderloin along one edge of the prosciutto, and roll, wrapping the prosciutto completely around the tenderloin.
  • Place the tenderloin, seam side down in the roasting pan.
  • Brush over all with olive oil.
  • Bake at 375, for 30-40 minutes, until cooked through.
  • Let stand for 10 minutes before slicing.

1/2 teaspoon kosher salt
3/4 teaspoon fennel seed (crushed)

Steps:

  • Heat oven to 325°; spray roasting pan rack with nonstick pan spray; trim fat from tenderloin; cut lengthwise into almost halves, open roast flat with cut side up.
  • Mash remaining ingredients into a paste (I like to grind the fennel with the salt & peppercorns in my spice grinder); rub 2T paste on the inside of the tenderloin. Sprinkle with pine nuts (optional); fold pork closed; rub remaining paste on outside of tenderloin and truss with twine if desired.
  • Place pork on the roasting pan rack; roast uncovered for 1hr or to desired doneness. over and let rest for 15 minutes; cut in 1/4" slices.

2 pork tenderloin, about 1 pound each
2 tablespoons butter
8 ounces fresh mushrooms, chopped
1/2 cup green onion, sliced
1 (6 ounce) package long grain and wild rice blend, cooked according to package directions and cooled
1 cup pecans, chopped
2 tablespoons fresh parsley, chopped
2 teaspoons dried Italian seasoning
1/2 teaspoon salt
1 (10 ounce) container alfredo sauce, refrigerated
3 tablespoons Chardonnay wine (dry white wine)

Steps:

  • Heat oven to 425 degrees F. Cut lengthwise slit in each pork tenderloin, cutting to but not through the other side. Set pork aside. Melt butter in large saucepan over medium heat. Add mushrooms and green onions; cook until tender. Remove from heat. Stir in cooked long grain and wild rice mix, pecans and parsley. Set aside 3/4 cup of the rice mixture. Spoon remaining rice mixture into 1 1/2-quart casserole; cover and set aside. Divide 3/4 cup rice mixture between slits in pork tenderloins, spreading evenly in slits. Close slits; secure with toothpicks.
  • Stir together Italian seasoning and salt in small bowl. Sprinkle evenly over top of pork tenderloins. Place pork tenderloins on rack in shallow roasting pan.
  • Roast tenderloins, uncovered, for 25-27 minutes until internal temperature is 145 degrees Fahrenheit, followed by a 5-minute rest time. Bake casserole of rice mixture alongside tenderloins. Meanwhile, for sauce, combine Alfredo sauce and Chardonnay in medium saucepan. Cook and stir over low heat until bubbly. To serve, spoon rice mixture onto serving platter. Remove toothpicks from tenderloins. Cut pork tenderloins into 1-inch-thick pieces; arrange on rice mixture on platter. Serve sauce with pork and rice mixture.
