This sugar-free pie is so delicious, you can't even detect the artificial sweetener in the filling. I always get rave reviews when I bring it to church potlucks. -Teresa Garlick, Glendale, Arizona

Number Of Ingredients 6

Sugar substitute equivalent to 1 cup sugar
1/4 cup cornstarch
1 teaspoon ground cinnamon
8 cups thinly sliced peeled tart apples
1 tablespoon butter
Dough for double-crust pie

Steps:

  • Preheat oven to 375°. In a large bowl, combine the first 3 ingredients; fold in apples. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake 35 minutes. Increase oven setting to 400°; bake until apples are tender, 15-20 minutes.

I finally made from scratch a pie crust. Wanted to share the recipe for it with you all. It is very quick and easy.

PASTRY FOR DOUBLE CRUST PIE
2 c all-purpose flour
3/4 tsp salt
2/3 c shortening
6-7 Tbsp ice water
FILLING
2 c your favorite pie filling (fresh or canned)

Steps:

  • 1. In a small bowl, combine the flour and salt; cut in shortening until mixture resembles course crumbs. Gradually add the water, tossing with a fork until a ball forms. Cover and refrigerate for 30 minutes or until easy to handle.
  • 2. Follow directions for your mini pie maker.

No Sugar Apple Pie image

This sweet, tart apple pie contains no added sugar, for a wholesome take on a classic dessert.

2 (9 inch) pie shell
3 tablespoons cornstarch
1 tablespoon ground cinnamon
1 (12 fluid ounce) can unsweetened apple juice concentrate, thawed
6 cups sliced green apples

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a small bowl whisk together cornstarch, cinnamon, and 1/3 cup of the apple juice concentrate. Set aside.
  • In a large saucepan simmer apples with remaining apple juice concentrate until apples are tender, about 10 minutes. Stir in cornstarch mixture and continue to simmer until thickened. Remove from heat.
  • Spoon apple mixture into pastry-lined pie plate. Cover with top crust. Seal and flute edges. Cut steam vents in top.
  • Bake in preheated oven for 45 minutes, or until crust is golden brown.

I found this recipe on a Splenda ad, tried it and modified it a bit. I have made it several times for my husband who will NOT eat anything sugarfree...he really likes this version of apple pie.

1 cup Splenda sugar substitute
1 tablespoon flour
1 tablespoon ground cinnamon
5 granny smith apples, peeled and sliced
1 golden delicious apple, peeled and sliced
1 tablespoon butter, cut up
1 (15 ounce) package of pillsbury refrigerated pie crusts

Steps:

  • Prepare piecrusts according to package directions, fit 1 piecrust into 9 inch pie plate.
  • Stir together Splenda, flour, cinnamon mixture.
  • Stir and coat apples with flour sugar mixture, pour into pie plate, dot with pieces of butter.
  • Place remaining pie crust on top, crimp edges and make slits in top crust or pierce evenly with a fork to allow steam to escape during baking.
  • Bake at 350 degrees for 50-55 minutes.
  • Makes 8 servings.
  • Great with Sugar Free ice cream or Lite Frozen whipped topping on it.

  • Place dates in a medium bowl and cover with boiling water. Let soak for 20 minutes. Drain the dates, reserving 1/4 cup soaking liquid. Place half the dates in a food processor (reserve the rest for the filling). Add pecans, oat flour, butter, salt and the reserved soaking liquid; pulse until combined. Firmly press 2 generous tablespoons of the mixture into the bottoms and up the sides of each muffin cup. Bake until set, but not browned, 10 to 12 minutes. Let cool in the pan on a wire rack for 15 minutes.
  • Meanwhile, place cider and the reserved dates in a blender or food processor; blend until mostly smooth. Transfer to a medium saucepan; add apples and cinnamon. Bring to a simmer over medium-high heat; reduce heat to maintain a simmer and cook, stirring often, until the apples are mostly tender, 12 to 15 minutes. Remove from heat; stir in vanilla and cornstarch.
  • Using about 2 tablespoons filling for each tart, divide the filling among the crusts. Bake until the crust is browned on the edges and the filling is hot, 12 to 15 minutes. Cool the tarts in the pan on a wire rack for at least 20 minutes. Run a sharp knife around the edges and remove the tarts from the pan.
