One Skillet Mediterranean Pork and Rice image

This One Skillet Mediterranean Pork is a delicious meal the whole family will love. It's easy and quick - only 30 minutes and one pan meal.

1/2 lb Smithfield Roasted Garlic & Herb Loin Filet, cut in strips
2 Tbsp extra virgin olive oil
2 carrots, chopped
1 bell pepper (I used 1/2 red and green peppers)
1 onion, chopped
3 cloves garlic, minced
1/2 teaspoon oregano
2 cups vegetable stock (or water)
1 cup basmati rice
1/2 cup garbanzo beans
10 black pitted olives
1 lemon
fresh parsley, chopped
salt and black pepper

Steps:

  • Heat oil in a large skillet over medium-high heat (I used 12" skillet). Add pork loin filet strips to the skillet, and cook for about 5 minutes, or until cooked through. Transfer cooked strips to a plate.
  • Add chopped carrots, bell pepper, onion, and garlic to the skillet, and if necessary add more olive oil. Season with salt and freshly ground black pepper. Saute for about 5 minutes, or until vegetables are tender.
  • Add rice to the skillet and stir well. Season the rice-vegetable mixture with salt, black pepper, and oregano. Add lemon zest to the vegetable stock and pour over the rice mixture. Bring to a boil, cover and simmer for about 12-14 minutes until rice is cooked.
  • Add the juice of 1 lemon and the cooked pork slices to the rice-vegetable mixture and stir well. Add garbanzo beans, olives and garnish with chopped fresh parsley.

It starts with pork, but which cut you use is up to you-try it with pork chops, pork loin or tenderloin. From there, it gets Italian seasoning and the unexpected addition of Progresso™ cannellini beans, a pantry staple that ups the heartiness factor in this warming dinner. It's a riff on classic rice casserole that keeps the easy prep and one-dish cleanup but switches up the flavor for something fun and out of the ordinary.

1 tablespoon butter
1/2 cup Progresso™ Italian style panko crispy bread crumbs
1 cup uncooked long-grain white rice
1 lb boneless pork chops, loin or tenderloin, trimmed and cut in 1-inch pieces
1 can (15 oz) Progresso™ cannellini beans, drained, rinsed
1 cup chopped red bell pepper (about 1 large)
1 cup chopped onions
2 1/2 cups Progresso™ chicken broth (from 32-oz carton)
2 teaspoons Italian seasoning
3/4 teaspoon salt
2 cups shredded Italian cheese blend (8 oz)
1/2 cup heavy whipping cream
2 tablespoons thinly sliced fresh basil leaves

Steps:

  • In 8-inch sauté pan, melt butter over medium heat. Add bread crumbs; toast 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.
  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Spread rice evenly in baking dish. Top evenly with pork, followed by beans, bell pepper and onions. In small bowl, mix broth, Italian seasoning and salt; pour on top. Cover with foil. Bake 40 minutes.
  • Stir cheese and whipping cream into pork mixture. Replace foil; bake 20 to 25 minutes longer or until rice is tender, pork is no longer pink in center and mixture is heated to at least 165°F in center of casserole. Stir; top with toasted bread crumbs and basil.

3 pounds country-style pork ribs
1 tablespoon canola oil
1 can (14-1/2 ounces) diced tomatoes, undrained
1 cup water
1 cup uncooked long grain rice
1 small green pepper, thinly sliced
1 garlic clove, minced
1 tablespoon sugar
2 teaspoons salt, divided
1/2 teaspoon Italian seasoning

Steps:

  • In a Dutch oven, brown ribs in oil over medium-high heat. Cover and cook over low heat for 1-1/4 hours, turning occasionally. Remove ribs and set aside; drain. , In the same pan, bring tomatoes and water to a boil. Stir in the rice, green pepper, garlic, sugar, 1 teaspoon salt and Italian seasoning. Place ribs over rice; sprinkle with remaining salt. Cover and cook on low for 30 minutes or until rice and meat are tender.

This is my revised version of another pork fried rice recipe. I often substitute chicken for pork, and it doesn't change anything. I have used both basmati rice and long-grain rice which gives the dish only a slight flavor difference. I have also added celery in the past with good outcomes. Enjoy.

1 tablespoon butter
1 (6 ounce) boneless pork loin chop, cut into small pieces
¼ cup chopped carrot
¼ cup chopped broccoli
1 green onion, chopped
1 egg, beaten
1 cup cold cooked rice
¼ cup frozen peas
1 ½ tablespoons soy sauce
⅛ teaspoon garlic powder
⅛ teaspoon ground ginger

Steps:

  • Melt butter in a large non-stick skillet over medium heat. Cook and stir pork, carrot, broccoli, peas, and green onion in melted butter until pork is cooked through, 7 to 10 minutes. Remove pork mixture to a bowl and return skillet to medium heat.
  • Scramble egg in the skillet until completely set. Return the pork mixture to the skillet. Stir rice, peas, soy sauce, garlic powder, and ground ginger into the pork mixture; cook and stir until heated through, 7 to 10 minutes.

6 pork chops, bone-in (3/4 inch)
salt and pepper, to taste
3 tablespoons vegetable oil
2 green bell peppers
1 (15 ounce) can tomato sauce
1 (15 ounce) can Italian-style stewed tomatoes, undrained
1 cup water
1/2 onion, chopped
3 teaspoons italian seasoning
1 teaspoon salt
1 teaspoon pepper
1 garlic clove, minced
2 tablespoons Worcestershire sauce
1/2 cup brown rice, uncooked

Steps:

  • Sprinkle pork chops with a little salt and pepper.
  • Brown chops on both sides in oil in skillet over medium heat.
  • Remove chops from skillet; drain and set aside.
  • Cut the top off of 1 bell pepper; remove the seeds.
  • Cut six 1/4 -inch thick rings from the other bell pepper; set aside.
  • Seed and chop remaining bell pepper.
  • Combine chopped green pepper, tomato sauce, stewed tomatoes, water, onion, Italian seasoning, salt, pepper, garlic, and Worcestershire sauce in a large bowl and mix well.
  • Spread rice evenly in a lightly greased 9x13 inch baking pan.
  • Slowly pour tomato mixture over rice.
  • Arrange pork chops over the rice mixture.
  • Top each pork chop with a pepper ring.
  • Bake uncovered at 350 degrees Fahrenheit for 1 hour or until rice is tender.

1 tsp. dried oregano leaves, crushed
1 each green and red pepper, cut into strips
1/4 cup KRAFT Lite Zesty Italian Dressing
1 can (14-1/2 oz.) Italian-style diced tomatoes, undrained
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Cook rice as directed on package, omitting salt.
  • Meanwhile, cook chops in large nonstick skillet on high heat 2 min. or until bottoms of chops are browned; turn. Sprinkle with oregano; top with peppers, dressing and tomatoes. Bring to boil on medium heat; simmer on low heat 10 min. or until chops are done (145ºF).
  • Remove chops from skillet, reserving vegetable mixture in skillet. Cover chops to keep warm. Cook vegetable mixture on high heat 1 to 2 min. or until peppers are crisp-tender and sauce is thickened, stirring frequently.
  • Spoon rice onto serving plates; top with chops, vegetable mixture and cheese.
