AUTHENTIC PIZZELLE

Authentic Pizzelle image

Delicious and very good also natural, the ferratelle can also be enriched with jam, raganta, or grape jam, honey, hazelnut cream or chocolate or any other sweet sauce. The traditional recipe for making crispy and thin pizzelle includes the following ingredients.

Categories     Dessert

Time 20m

Number Of Ingredients 11

3 eggs
3 tablespoons extra virgin olive oil (or sunflower oil)
1.5 cups flour 00 (sifted)
3 tablespoons sugar
1 pinch cinnamon
1 1 lemon (rind, grated)
1 pinch salt
cinnamon (optional choice)
anise extract (optional choice)
butter (optional for greasing)
vanilla extract (optional choice)

Steps:

  • In a bowl, add the eggs, the sifted flour with a pinch of salt, the sugar and the aromas.
  • By hand with a whisk or an electric mixer, mix the ingredients and add the oil a little at a time. The mixture must appear thick and homogeneous, not too liquid.
  • Let the batter rest for half an hour and then proceed to cooking.
  • Grease the pizzelle iron with a little of the butter and wait until melted. Tip: check out or best pizzelle maker guide.
  • Heat the iron on the stove and when it is hot, fill it in the center with a spoonful of the dough.
  • Close the dish well and cook the pizzelle for a few minutes in the pizzelle maker, until each side is golden and crisp.
  • Remove the pizzelle thus obtained, which can be tasted as lukewarm natural or enriched with sweet creams or jams or anise.

CLASSIC ITALIAN PIZZELLE: MY FAMILY RECIPE

Classic Italian Pizzelle: My Family recipe image

Pizzelles are classic Italian cookies flavored with anise and made in a pizzelle maker.

Provided by Melissa

Categories     Dessert

Time 15m

Number Of Ingredients 8

3 eggs
3/4 cup of sugar
1 3/4 cups of all purpose flour
2 tsp of baking powder
1 1/2 tsp of vanilla extract
3 tiny drops of anise
1 stick (8 tbsp of melted unsalted butter)
1/4 tsp kosher salt

Steps:

  • Whisk together your eggs, sugar, vanilla and anise (see how to anise above) in a medium bowl.
  • Now add your flour, salt and baking powder and mix it well until there are no lumps and it looks smooth.
  • Now add your melted butter and mix that in to your mixture.
  • Pre-heat your pizzelle maker. They are all a little different so follow the manufacturers instructions for this.
  • Once it is heated, add a heaping tablespoon of your thick dough to the middle of each of your pizzelle areas on the iron. Close and cook for about 30-45 seconds until it is a light golden color. If the pizzelle is too light in color you can just close the pizzelle maker and cook the pizzelle for a few more seconds.
  • Once they are cooked, remove the pizzelles from the iron (they will still be soft and pliable at this point) and place on a cooling rack where they will cool and get nice and crispy. Keep doing this until all the dough is used up!
  • Once all of your pizzelles are fully cooked and cooled, you can go ahead and clean them up if you would like by lightly breaking off any parts of the pizzelle that went beyond the design edge. I find this to be relaxing but it is not necessary :)

  • Whisk eggs, white sugar, butter, and anise extract in a large bowl. Sift in the flour, baking powder, and salt until the batter is smooth.
  • When the iron is ready to use, spray with non-tick cooking spray. Place one tablespoon of batter on each of the hot plates, and close the lid. A cookie scoop or melon baller works perfectly for this.
  • Cook until hardly any steam is being produced, usually somewhere between 45 seconds to a minute.
