Steps:

  • Heat oven to 400ºF.
  • Mix oil and dressing mix in gallon-size resealable plastic bag.
  • Add potatoes; seal bag. Shake until potatoes are evenly coated. Spread onto baking sheet.
  • Bake 45 min. or until potatoes are tender.

3 lbs potatoes, peeled & cut into chunks
1/2 cup extra virgin olive oil
1/2 cup minced flat leaf parsley
sea salt
fresh ground black pepper
4 -5 lbs chicken, cut in parts

Steps:

  • Preheat the oven to 425 degrees.
  • Mix the potato chunks in a bowl with half the olive oil, half the parsley, and a generous amount of salt and pepper.
  • Toss to coat well, then spread over the bottom of a large roasting pan large enough to hold all the potatoes in one layer.
  • In the same bowl, mix the chicken parts with the remaining oil and parsley and more salt and pepper, again stirring to coat well.
  • Arrange the chicken over the top of the potatoes, skin side down.
  • Place in the oven and bake for 30 minutes, remove chicken pieces to a plate, stir the potatoes, and replace the chicken pieces, skin side up.
  • Return to oven for an additional 30 minutes.
  • The chicken is done when crisp and brown and the potatoes should be roasted to a fine golden color.

These potatoes are beloved by children and adults alike, and they are very easy to make. Just cube the potatoes (don't bother to peel) and tumble them into a pan. Pour on the olive oil, sprinkle the oregano, peel the garlic cloves (you don't even have to do that if you're pushed for time), mix everything together and stick the dish in the oven. Serve alongside some lamb chops and a simple salad, or just the salad.

  • Preheat oven and prepare baking sheets: Preheat your oven to 425 F degrees. Line a baking sheet with parchment paper or a silpat.

1 (6 to 7-pound) whole, fresh capon chicken (a roasting chicken may be used)
1/4 cup dry rosemary leaves
1/4 cup dry thyme leaves
1/4 chopped garlic
3 medium onions, diced
3 carrots cut into rounds
2 celery stalks, chopped
3 pounds small potatoes, peeled
1/4 cup extra-virgin olive oil
Salt and pepper

Steps:

  • Preheat the oven to 375 degrees F. Wash the capon (actually a castrated male chicken) under cold running water, and soak for 1 hour in a pan of cold water in which 1/4 cup kosher salt has been dissolved. Drain and rinse again, using paper toweling to dry the bird inside and out.
  • Season the capon inside and out with a generous amount of salt and pepper. Put half the rosemary and thyme and all of the chopped garlic inside the cavity of the capon, along with some of the onion, carrot and celery. Tie the legs of the capon together to aid in even roasting and place, breast side down in a roasting pan. Rub the remaining herbs on the outside of the capon, drizzle all the olive oil over the capon, scattering the rest of the vegetables (except the potatoes) in the pan along with the capon. Place the roasting pan into the oven and roast the capon for 20 minutes on its breast, before turning onto its back for an additional 20 minutes. When the capon has roasted for 20 minutes on its back, add the potatoes and continue roasting for an additional hour or until the bird is thoroughly cooked (a meat thermometer registers 165 degrees F at the leg joint). Adjust seasoning with salt and pepper and remove from the oven, allowing the capon to rest for 15 minutes before serving.

5 - 6 very large Idaho russet potatoes, peeled
4 - 6 Tbsp. olive oil
4 very large cloves of garlic, minced (more if you desire)
4 Tbsp. fresh-cut rosemary, chopped
fresh cracked sea salt and black pepper

Steps:

  • Pre-heat oven to 350 degrees F.
  • Slice the peeled potatoes lengthwise into thirds.
  • Holding the sliced potatoes together, slice horizontally into 1" slices.
  • Cut each of these slices of potatoes into 1" cubes.
  • In a very large mixing bowl, toss the potato cubes with olive oil to cover completely.
  • Add the minced garlic, fresh chopped rosemary, salt and pepper.
  • Toss well.
  • Place on a baking sheet with 1" sides.
  • Bake on the middle rack for 45 minutes.
  • With a sharp metal spatula, turn the potatoes over ONCE and once only.
  • Turn up the oven heat to 450 degrees F.
  • Continue baking on the top rack of the oven for 15 - 30 minutes, keeping a very close eye on the potatoes so that they do not burn, but yet turn a golden-brown color.
  • If you are not satisfied with the color of the potatoes at this point, turn the oven onto 'Broil' and bake for another 5 - 10 minutes, once again keeping a very close eye on the potatoes so that they do not burn.

ITALIAN RANCH ROASTED POTATOES

I invented this recipe because I wanted something with a little more flavor than just plain roasted potatoes. This might also be good with other flavors of salad dressing mixes (Fiesta Ranch, Herb and Garlic, Mediterranean). You might also want to add some cheese. I sometimes add some chile powder to the seasoning mixture. Just use your imagination.

1 onion
1 (2/3 ounce) package Italian salad dressing mix (I used Good Seasons)
1 (1 ounce) package ranch dressing mix
1/2 teaspoon garlic powder
2 tablespoons olive oil (I used extra-virgin)

Steps:

  • Preheat oven to 375 degrees. Cover a baking sheet with foil. I use no-stick foil. If not using that, spray foil with cooking spray to keep potatoes from sticking.
  • Scrub potatoes or peel if desired, cut each one in half, then cut each half into eighths. Put into bowl or a zip-lock bag.
  • Cut onion into eighths and add to potatoes. Toss together.
  • Combine salad dressing mixes with garlic powder.
  • Pour 1 T oil over potatoes and toss. Sprinkle with 1/2 of salad dressing mixture and toss. Repeat steps, then pour mixture into prepared baking sheet.
  • Bake for 1 hour, until potatoes are browned.
  • Pour into bowl and serve. I've also splashed the potatoes with a small amount of balsamic vinegar prior to serving.

2-3 leaves sprigs fresh rosemary ((washed and removed from the stem))

  • Heat oven to 400° (200° celcius)
  • Cut and rinse the potatoes. Dry the potatoes with a clean towel.
  • In a large bowl mix together, the towel dried potatoes, rosemary leaves, oregano, garlic, salt and olive oil then place in a large baking pan (use a large baking pan so that the potatoes have room) and sprinkle with another 1/2 - 1 teaspoon (1/2-1 gram) of oregano and 1/4-1/2 teaspoon (1 1/2-3 grams) salt.

4-6 medium yellow-fleshed potatoes, peeled and thinly sliced
Fruity, extra virgin olive oil
Salt and epper
2-3 cloves of garlic
A sprig of fresh rosemary, plus a few leaves

Steps:

  • Peel and slice the potatoes as thinly as you can manage-if you have a mandolin, that would be perfect for the job. Make sure to immerse the potatoes in a bowl of water as you peel them, and slice them quickly, to avoid disclosing.
  • Just as soon as you're done peeling and slicing, pat the potato slices dry with paper towels. In a large mixing bowl, dress the slices with generous amounts of olive oil, salt and pepper, along with a few rosemary leaves and one or two cloves of garlic which you will have minced as finely as possible. (Here's one case when a garlic press comes in handy.) Set aside.
  • Take a large baking dish and rub the insides all over with the cut side of another clove of garlic which you will have sliced in half. Arrange the potato slices evenly in the dish, partially overlapping the top layer of potato slices like roof shingles, in a decorative pattern in the dish: lined up in rows if your dish is square or rectangular, in concentric rings if it's round or oval. Add enough water to come up about half the height of the potatoes-it's best to drizzle the water in at the sides of the dish so as not to displace the dressing. Drizzle the top of the potatoes with some more olive oil and sprinkle with some more salt. Finally, place a sprig of rosemary on top of the potatoes.
  • Roast the potatoes in a moderate (180C/350F) oven for about 45-60 minutes, until all the water has evaporated, the potato slices are soft inside and golden brown on top and around the edges. (Just how brown is a matter of taste-I like mine fairly lightly brown, as pictured.) If the potatoes are not brown enough for you, you can run them under the broiler for a minute or two, till they're done to your liking. Remove the rosemary sprig and let the dish rest for a good 1o minutes or so before serving directly from the baking dish.
