KIDS CAN MAKE: OATMEAL-CHOCOLATE SNACK CAKES
These delightful treats have a soft, tender crumb that harks back to old-fashioned snack cakes from the grocery store. For little kids: Let them dump the ingredients into the mixing bowls, whisk together the dry ingredients and stir in the chocolate chips. For big kids: Let them measure out the ingredients, spray the baking pan with cooking spray and help spread the batter in the baking pan.

Steps:
- Preheat the oven to 350 degrees F. Line the bottom of a 9-inch square baking pan with a foil strip long enough to overhang on 2 opposite sides. Spray the foil lightly with cooking spray; set aside.
- Whisk together the flour, oats, baking soda and salt in a medium bowl; set aside. Whisk the butter, egg, brown sugar and applesauce in a large bowl until combined. Add the dry ingredients to the wet and mix until barely mixed. Stir in the chocolate chips.
- Spread the batter in the prepared baking pan. Bake until the cake is light brown around the edges and a toothpick inserted in the center comes out clean, 25 to 30 minutes. Remove from the oven and let cool on a rack for 15 minutes. Use the foil overhang to lift the cake out of the pan and let cool completely on the rack. Invert onto a plate and peel the foil off. Re-invert the cake onto a cutting board, cut into 12 pieces and serve.

Steps:
- Preheat oven to 350. With an electric mixer, cream the butter and sugars. Add the eggs and mix well.
- Add flour, soda, salt and cocoa and mix until just incorporated. The batter will be very thick.
- Add water to oatmeal and let stand for a few minutes. Once oats are soft, add oats/water mixture to the batter and mix well. Stir in half of the bag of chocolate chips (6 ounces).
- Pour into a greased or buttered rectangular 9×13 cake pan. Sprinkle the top of the cake with the rest of the bag of chocolate chips (6 ounces).
- Bake at 350 for 30-40 minutes or until the surface springs back lightly when touched and your house smells amazing. Do not overbake. Let cool completely.
- For the frosting, melt the butter, sugar, and milk in a large saucepan over medium-low heat. Bring to a boil and boil for 30 seconds.
- Reduce heat to low and add chocolate chips and marshmallows. Stir or whisk until frosting is smooth. Pour immediately over the cooled cake. The frosting crystallizes almost immediately as it cools so it's important to get it on the cake while it's still piping hot. Allow the frosted cake to cool for 5 minutes before serving. Or... not.

- Drain and rinse the beans. Add the beans, cooked oats, banana, coconut milk, egg whites, cocoa powder, sugar, vanilla extract, baking powder and salt to a blender and blend until everything is very smooth.
- Because the flour would make it difficult to blend the dough, take the dough out of the blender and in a big bowl mix the flour into it. Stir until it's incorporated.
- Pour the dough in a baking pan (I like using my springform pan since it's really easy to take the cake out of it), and bake for about 1 hour. After an hour check your cake with a wooden pick and if it still feels wet bake it for another 10 minutes (this is what I did because I like it when my cake comes out dense)
