ITALIAN SNOWBALL COOKIES

Powdery and sweet, makes for a white Christmas

Provided by anitaliandish

Categories     Dessert

Number Of Ingredients 8

¾ cup butter (12 Tbsp.) (170 grams)
½ cup granulated sugar (100 grams)
1 egg
2 tsp. vanilla extract
2 cups pecans - finely chopped
2 cups all-purpose flour (300 grams)
¼ tsp. salt
½ cup (or more) powdered sugar for dusting

Steps:

  • Preheat oven to 350 ° F
  • In a food processor, pulse nuts until fine. If you don't have a food processor, chop on a cutting board. Set aside
  • Beat together sugar and butter until creamy. Use a hand mixer or beat by hand. Beat in egg and vanilla until uniform and creamy.
  • Sift the salt into the flour, and then, one cup at a time, add the flour to the butter mixture and stir by hand. Take your time and let the flour absorb the butter. Add the rest of the flour and continue to mix by hand until uniform. Fold in the nuts. Again, take your time. The dough may seem a bit dry at first, but given a few minutes, the flour will absorb the butter and will make a smooth dough.
  • Line a cookie tray with parchment paper or grease with butter. Roll the dough into small balls, about 2/3 inch or 1 heaping teaspoon (20 grams per cookie if using a scale). Place the balls on the cookie tray and bake for 20 minutes until light brown. It will make about 50 cookies.
  • Remove cookies from oven and cool until warm. Put the powdered sugar in a bowl and a few at a time, roll the cookies around to coat completely.
  • Serve right away or store in an airtight container for up to a week.

ITALIAN SAUSAGE BALLS

Italian Sausage Balls image

This version of sausage balls, a traditional southern appetizer, gets an Italian twist. Pickled cherry peppers add a touch of acid and spice that complements the richness of the sausage and the mozzarella.

Provided by Food Network Kitchen

Categories     appetizer

Time 20m

Yield 24 sausage balls

Number Of Ingredients 6

1/2 pound sweet Italian sausage links, casings removed
1 cup shredded part-skim mozzarella
1/2 cup self-rising flour
2 tablespoons extra-virgin olive oil
24 fresh basil leaves
12 slices pickled cherry peppers

Steps:

  • Position a rack in the top of the oven, and preheat to 375 degrees F. Line a rimmed baking sheet with parchment.
  • Beat the sausage, mozzarella, flour and oil in the bowl of an electric stand mixer fitted with a paddle attachment until the mixture just comes together. Shape the mixture into balls, using a level tablespoon for each, and set them on the prepared baking sheet at least 1 inch apart (you should have about 24).
  • Bake the sausage balls until lightly golden brown and slightly puffed, 12 to 15 minutes, turning them halfway through.
  • To serve, skewer a basil leaf (if the leaves are large, fold them in half), a pepper slice and a sausage ball onto a toothpick. Repeat with the remaining toothpicks and ingredients.

ARANCINI BALLS

Arancini balls image

Adapt these arancini rice balls to your liking: add fresh herbs, sundried tomatoes or chopped ham. You can also make the balls from leftover cold risotto

Provided by Esther Clark

Categories     Dinner, Lunch, Starter

Time 1h45m

Yield Makes 18

Number Of Ingredients 14

2 tbsp olive oil
15g unsalted butter
1 onion, finely chopped
1 large garlic clove, crushed
350g risotto rice
150ml dry white wine
1.2l hot chicken or veg stock
150g parmesan, finely grated
1 lemon, finely zested
150g ball mozzarella, chopped into 18 small pieces
vegetable oil, for deep-frying
150g plain flour
3 large eggs, lightly beaten
150g fine dried breadcrumbs (panko works well)

Steps:

  • Heat the oil and butter in a saucepan until foamy. Add the onion and a pinch of salt and fry gently over a low heat for 15 mins, or until softened and translucent. Add the garlic and cook for another min. Stir in the rice and cook for a further min, then pour in the wine. Bring to the boil and cook until the liquid is reduced by half. Pour in half the stock and simmer, stirring continuously, until most of the liquid is absorbed. Add the remaining stock a ladleful at a time as the rice absorbs the liquid, stirring, until the rice is cooked through (this should take about 20-25 mins). Stir in the parmesan and lemon and season to taste. Spread the risotto out into a lipped tray and leave to cool to room temperature.
  • Scoop the cooled risotto into 18 equal portions - they should be slightly larger than a golf ball. Flatten a risotto ball in your hand and put a piece of the mozzarella in the centre, then enclose the cheese in the rice and roll it into a ball. Repeat with the remaining risotto balls.
  • Put the flour, eggs and breadcrumbs into three separate shallow bowls. Dip each prepared risotto ball into the flour, followed by the eggs and finally, the breadcrumbs. Transfer to a tray and set aside.
  • Half-fill a large, heavy-based saucepan with vegetable oil and heat over medium-low until it reads 170C on a cooking thermometer or until a piece of bread turns golden brown in the oil within 45 seconds. Lower the risotto balls into the oil in batches and cook for 8-10 mins, or until golden brown and melted in the centre. Set aside on a tray lined with a clean kitchen towel.
  • Eat the arancini warm, or serve with a basic tomato sauce for dipping.
