SWEET AND SPICY GOCHUJANG CHICKEN
Super tasty and quick to make - easy Korean gochujang chicken glazed with a quick, sweet and savory sauce.For a fast weeknight meal, slice the chicken and serve in rice bowls with steamed or stir-fried vegetables.

Steps:
- Mix all the ingredients for the sauce in a bowl.
- Put the chicken in another bowl, add 1/4 cup of the sauce and toss around to coat. Prepare a gas or charcoal grill for medium-hot direct grilling, or place a heavy, lightly oiled skillet over medium-high heat on the stovetop.
- Cook the chicken about 5 minutes per side, turning frequently, until the chicken is cooked through. Transfer to a cutting board and let it rest for 10 minutes before slicing 1/2-thick.
- Serve the chicken sprinkled with the green onion and additional sauce drizzled over.

Gochujang Chicken Drumsticks - tender oven baked chicken drumsticks coated in a delicious Korean Gochujang marinade.

- Whisk together the gochujang, soy sauce, maple syrup, garlic and sesame oil in a large bowl or dish.
- Add in the chicken drumsticks and let marinate for at least 1 hour in the fridge (or you can do this overnight if you prefer)
- Preheat oven to 215c, fan 195c, 420f (gas mark 7)
- Add the marinated drumsticks to a baking tray lined with parchment, spray over the top with low calorie cooking spray.
- Bake for 15 minutes, then remove and brush with the juices and bake for another 15 minutes until cooked through and tender.
- Scatter with the spring onion and pinch of sesame seeds.
- Serve with your choice of sides and enjoy!!

Steps:
- Cut the chicken thighs into bite size pieces.
- To prepare marinate mix all the following ingredients (gochujang, soy sauce, wine, brown sugar, sesame oil, minced garlic, gochugaru black pepper and ginger) in a medium glass bowl.
- Mix all marinade ingredients well.
- Place sliced chicken thighs, green onion in with the marinate; toss and press meat into bowl. Top with sliced onion.
- Marinate in refrigerator for 2-6 hours.
- Heat 2 tdsp of oil in a cast iron skillet or wok. Grab most (all if you can) of the onions out of bowl; squeeze marinate out. Add onions to skillet and cook for 3 to 5 minutes.
- Drain marinate (into sink) out of chicken/green onions and add to onions; cook on medium high. Cook until the chicken is cooked through and slightly caramelized.

- Whisk Gochujang, soy sauce, mirin, sugar, sesame oil, and garlic in large bowl. Using a measuring cup, scoop 1/3 cup of the marinade into a small bowl and reserve for later.Â
- Score chicken with 2 or 3 cuts to each drumstick. Make sure not to cut down to the bone. Add to the marinade (not the reserved marinade) and mix well until chicken is fully coated. Turn on the oven to 350F/175C and let the drumsticks marinate while the oven preheats, about 10-15 minutes.Â
- On a parchment lined baking sheet, add chicken drumsticks in an even layer. Make sure not to crowd the pan so the skin gets crispy. Bake until halfway cooked through, about 15 minutes.
- Using the reserved sauce from before, apply as glaze. Brush on the (halfway cooked) chicken every 3-5 minutes or so, until fully cooked -- about 25-30 minutes in total. This will ensure a deeper-flavored, glazed coating vs. roasting alone. When the chicken is fully cooked, broil for the an additional 3-5 minutes to get those charred, crispy bits. Garnish with sesame seeds and green onion (optional). Serve immediately or at room temperature. Â
