Steps:
- Quarter the apples and remove the cores, peel and finely chop the ginger and place both in a pan with 300ml of boiling water. Boil hard for 10 minutes, stirring occasionally.
- Tip the contents of the pan into a blender and blitz until smooth. Rinse the pan, return to the heat and cook the rice according to the packet instructions.
- Steam the carrots in a colander above the rice for 20 minutes with a lid on, then remove them to a plate. Add the broccoli to the colander to steam for the last 5 minutes, then put aside and drain the rice.
- Meanwhile, season the pork all over with a pinch of sea salt and black pepper, finely grate over a quarter of the nutmeg, then pick over the sage leaves and really press them into both sides of the pork.
- Put 1 tablespoon of oil into a large frying pan on a medium heat, then add the pork and steamed carrots. Cook the pork for 4 minutes on each side (depending on its thickness - use your instincts), or until golden and cooked through.
- Remove the pork to a board to rest for a few minutes. Reduce the heat to low, squeeze the orange juice over the carrots, shake the pan to coat them and pick up the sticky bits from the bottom, then leave until it becomes a natural syrupy glaze.
- Slice the pork and serve with the rice, broccoli and carrots. Swirl the yoghurt through half the apple sauce (keep the rest for another day) and serve on the side. Drizzle with any pan and resting juices, and tuck in.

RICE COOKER RECIPE: RASPBERRY APPLESAUCE
Put your 14 to 16 cup rice cooker to use and make this sweet and delicious applesauce, made in your rice cooker! Use Empire State or Gala apples. The result is a chunky, delicious applesauce that is an appealing (or apple-peel-ing) and pleasurable alternative to cranberry sauce for the holiday table. Also a delicious topping for vanilla ice cream.

GRANDMA'S APPLES AND RICE
LIKE MOST women of her generation, my husband's grandmother was a "no-measure cook". This recipe of hers suffered as it was handed down, so I made an effort to work out the kinks. Finally, my husband pronounced the results as good as he remembered, and we declared it the "official" recipe. -Joan Kasura, Silver Spring, Maryland

PERFECT STEAMED RICE EVERY TIME
People always ask why my rice comes out perfectly, even though I don't use a rice cooker. Siu Siu Korzilius, my Chinese cooking teacher, taught me that the secret to flaky rice is in the washing. Rice must always be washed before it's cooked to remove the excess starch which keeps it from being sticky. For brown rice, follow these same instructions but add more water (to several inches over the rice) and cook three times as long.

Steps:
- WASH THE RICE: Rinse under running water, rubbing the grains together between the palms of your hands; continue this rinsing until the water runs fairly clear. THIS WILL TAKE A COUPLE MINUTES; DON'T RUSH THIS MOST IMPORTANT STEP!
- Place rice in a covered sauce pan; add water to 1/2-inch above the rice; put on high heat. Stay in the area -- don't fall asleep -- PAY ATTENTION!
- As soon as it boils rapidly, reduce heat to medium/low and keep simmering for 10 minutes. DO NOT PEEK. DO NOT OPEN THE LID.
- Remove pot from burner but STILL DO NOT OPEN THE LID; let the rice rest undisturbed for five minutes.
- Fluff the rice with a pair of chopsticks before serving.
EASY APPLESAUCE (COOKED IN RICE STEAMER)
This is an incredibly quick and tasty applesauce recipe. The unusual cooking method is both easier and yummier. Unlike stovetop applesauce recipes, this requires no added water so it's richer, and it is also impossible to burn!

Steps:
- Peel, core, and coarsely chop the apples.
- Run apples through a blender until you have the desired consistency. I like mine slightly chunky. (Alternatively, you could finely chop the apples and not use the blender at all.).
- Pour into a heavy ceramic bowl that easily fits inside your rice cooker.
- Add sugar and lemon juice; stir together thoroughly.
- Place a cinnamon stick into the bowl of raw applesauce. Make sure that it is completely covered.
- Fill the metal bowl of your rice steamer so that the water is two inches high.
- Put the ceramic bowl filled with raw applesauce into the rice cooker. Cover and push the "cook" button.
- Walk away! Your rice steamer will do all the cooking, and no need to stir. The length of time it takes to cook probably varies according to your rice steamer, but I have the loveliest applesauce in about 10-15 minutes. Check back periodically and taste until it is done to your liking. Turn off the machine when it's done. You can leave the ceramic bowl in the rice cooker to cool, or remove it immediately with some tongs.

Steps:
- In a medium saucepan with a tight-fitting lid, cover the rice with cold tap water. Swish the rice around until the water becomes cloudy, then slowly pour it out, using your hand to keep the rice from falling out of the pan. Repeat 2 or 3 more times until the water runs mostly clear, then drain well.
- Add 175ml water and bring to the boil over a high heat. Once boiling, lower to a simmer and cover for 15-20 mins until the water is absorbed and the rice is soft. Do not lift the lid while the rice cooks. Remove the saucepan from the heat and let it sit, covered and undisturbed, for 10 mins. Uncover the pan and gently fold the rice over itself to fluff it up a few times before serving.

- Make a hot breakfast. To make oatmeal or other hot cereals, add a little less milk or water than you would for stovetop cooking (and some chopped nuts and dried fruit if you want).
- Steam vegetables. If your machine comes with a steamer rack, use it to cook cut vegetables, tofu, potatoes, or even shrimp, fish fillets, or chicken breasts.
- Make risotto without stirring. Saute onions in butter in an open rice cooker, then add 1 part Arborio rice and 4 parts liquid (such as broth and wine).
- Slow-cook soups, beans, or stews. Give your rice cooker enough liquid and time and it will create long-simmered dishes without scorching or boiling over (the way slow cookers sometimes can).
- Poach fruit. A rice cooker works for healthy desserts of fruit simmered in juice, wine, or maple syrup. Or make applesauce and other fruit sauces. this link is to an external site that may or may not meet accessibility guidelines.
