1 red onion ((large, halved and thinly sliced (1/4-inch) ))
1/2 pound baby potatoes ((quartered or sliced small to cook quickly))
6 baby bell peppers ((any color, cut into 1/4 inch thick batons))
3 cloves garlic ((minced))
1 teaspoon dried oregano
Kosher salt and black pepper
extra virgin olive oil
28 ounces canned San Marzano tomatoes ((whole, peeled with their juices))
Kosher salt and black pepper
1 pound lean ground beef
1 yellow onion ((small, very finely chopped))
3 cloves garlic ((minced))
1 cup fresh parsley ((chopped))
2 teaspoons dried oregano
1 teaspoon dried mint
Kosher salt and black pepper
1/2 cup grated Parmesan
1/4 cup bread crumbs
1 egg

Steps:

  • Heat the oven to 400 degrees F and position a rack in the center.
  • In a large mixing bowl, combine the vegetables, garlic, oregano, salt and pepper. Drizzle 2 extra virgin olive oil and toss to combine. Transfer the vegetables to a large lightly oiled sheet pan and spread them out.
  • In the same large bowl, combine the meat, onions, garlic, parsley, oregano, mint, Parmesan, bread crumbs and egg. Season with a big pinch of kosher salt and black pepper. Drizzle with a little olive oil (about 1 tbsp). Mix until everything is well-combined. Form the meat mixture into 1-inch meatballs and lightly press the center of the meatballs with your thumb (do not completely flatten).
  • Arrange the meatballs (or patties) in the same sheet pan with the vegetables. Pour the canned tomatoes all over. Season with kosher salt and drizzle the top of the tomatoes generously with extra virgin olive oil.
  • Cover the sheet pan with foil and bake in the heated oven for about 15 minutes, then uncover and bake for another 4 to 5 minutes or until the meatballs are fully cooked through.

I think the dill pickles are the secret to this simple yet hearty recipe. When our children were small, they were not too fond of cabbage, but they loved this dish.

3 cups chopped cabbage
1 cup tomato juice
1 egg, beaten
1 small onion, chopped
1 tablespoon chili powder
1 tablespoon cider vinegar
1 tablespoon chopped dill pickle
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 pound lean ground beef (90% lean)

Steps:

  • Place cabbage in a large saucepan; add tomato juice. Cover and simmer over low heat. Meanwhile, combine the egg, onion, chili powder, vinegar, pickle, salt and pepper. Crumble beef over mixture and mix well. Shape into 2-in. balls. Add to cabbage mixture., Cover and cook over low heat for 15-20 minutes or until meat is no longer pink, stirring occasionally.

This meal is so good, and the parmasean cheese in the meatballs makes them very deluctible. I prepare the meat the day before so the flavors mingle, plus making the preparation time easier. I also double the meatball recipe because you can't help but sample one or two before the dish is totally done.

1 slice white bread firm
1/3 c warm milk
3 slice bacon
1 lb ground chuc
1 tsp salt
1 egg
1 Tbsp chopped basil
3 Tbsp parmesan cheese
2 Tbsp grated onion
1 c bread crumbs, dry
1/3 c olive oil, extra virgin
1 1/2 lb fresh cabbage
2 Tbsp olive oil, extra virgin
1 tsp mince garlic
1 can(s) diced tomato
1 medium onion chopped

Steps:

  • 1. soak bread slice in warmed milk, set aside
  • 2. simmer bacon in small skillet with 1/2 cup water covering it for 5 minutes, when cool,drain and chop finely
  • 3. combine meat, bacon, egg, spices, bread pulp, grated onion, parm cheese refridgerate for a couple hours or overnight. shape into 1 1/2 inch balls. dredge in bread crumbs and saute in olive oil. drain on paper towels and keep warm in oven
  • 4. shred cabbage into 1/4" strips. add the 2 tbs oil to meat drippings. sauute garlic until golden, add onions and cabbage. cook on low heat, covered stirring occassionally until tender.about 40 minutes. add salt and pepper to taste. add drained tomatoes and turn up heat, cook 10 minutes. stir in meatballs and heat all thru.

1 pound ground sirloin
1/2 pound ground pork
1/2 pound ground veal
1 3/4 cups dry seasoned bread crumbs
1/2 cup freshly ground Italian Pecorino cheese (2 ounces)
1/2 cup freshly ground Italian Parmesan cheese (2 ounces), plus extra for serving
2 garlic cloves, minced
2 tablespoons chopped fresh parsley leaves
Kosher salt and freshly ground black pepper
2 extra-large eggs, lightly beaten
3/4 cup dry red wine, such as Chianti
1/4 cup good olive oil
2 (32-ounce) jars good marinara sauce, such as Rao's
Creamy Parmesan Polenta (recipe follows) or cooked spaghetti, for serving
4 cups chicken stock, preferably homemade
2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/2 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
  • Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
  • Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
  • Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
  • To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

½ cup milk
2 tablespoons olive oil
1 onion, diced
1 pound ground beef

½ teaspoon red pepper flakes
1 teaspoon dried Italian herb seasoning
2 tablespoons grated Parmesan cheese

Steps:

  • Cover a baking sheet with foil and spray lightly with cooking spray.
  • Soak bread crumbs in milk in a small bowl for 20 minutes.
  • Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
  • Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
  • Preheat an oven to 425 degrees F (220 degrees C).
  • Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
  • Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

½ pound bulk mild Italian sausage
½ pound lean ground beef
½ cup cooked rice
1 egg
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon paprika

2 tablespoons hot pepper and garlic infused olive oil
1 small onion, chopped
3 cloves garlic, minced
12 cups water
6 cubes chicken bouillon
1 medium head cabbage, cored and cut into large pieces
3 carrots, cut into large pieces
2 large potatoes, peeled and cut into large pieces, or more to taste
1 teaspoon chopped fresh oregano
½ teaspoon dried oregano

Steps:

  • Mix sausage, beef, rice, egg, garlic powder, cumin, paprika, salt, and pepper together in a large bowl for meatballs. Cover and refrigerate for 30 minutes.
  • Heat oil in a large pot over medium-high heat. Add onion and garlic; cook and stir for 1 to 2 minutes. Add water and bouillon cubes; bring to a boil. Add cabbage, carrots, and potatoes. Boil gently for 10 minutes.
  • Meanwhile, form meat mixture into regular-size meatballs. Drop gently into the pot and add fresh and dried oregano. Reduce heat and let simmer until meatballs are no longer pink in the centers, about 30 minutes. Add salt and pepper to taste.
