I had this at a potluck and begged for the recipe. It's so creamy and full of flavor that you just want to carry the whole pot of it to your table and keep it for yourself. I'm thinking it could be made a bit lighter in calories if low-fat versions of soup, sour cream, cream cheese and Velveeta are chosen. Note added 11/1/08: Apparently, this recipe is not the same as the one I tasted at the potluck! I no longer work with the woman who "shared" the recipe, so I cannot check the ingredients. I apologize to the 2 chefs here and anyone else who has made this with poor results. For future reviews, I'd love to have suggestions to make this work properly! The dip should be creamy and scoop-able with chips. Again, my apologies!

1 ounce monterey jack pepper cheese
1 (10 1/2 ounce) can cream of chicken soup
1 (8 ounce) carton sour cream
4 ounces cream cheese
3/4 cup Velveeta cheese
1 small onion, chopped fine
garlic salt
2 (5 ounce) cans chicken breasts, drained
crackers or tortilla chips

Steps:

Mix all ingredients into a small crock pot.
Heat thoroughly 3-4 hours on high or 5-6 hours on low.
Serve with bagels, crackers or tortilla chips.

Great for football games or appetizers for a casual get-to-gether. From Cooking with Reynolds Wrap. It says to use a slow cooker liner to make clean up easy, but I just put it straight into the crock. 2 hours of cook time, is the time it takes to cook in the crock pot.

Ingredients

1 lb Velveeta cheese, cut in cubes
1 cup chopped cooked chicken
1 (10 ounce) can diced tomatoes and green chilies, drained
1 teaspoon ground cumin (optional)
1/4 cup chopped green onion

Steps:

Put everything into the slow cooker EXCEPT GREEN ONIONS and mix as best as possible.
Cook on LOW 2 hours until cheese is melted, stirring occasionally.
Shift crock pot setting to WARM.
Add green onions and gently stir to combine.
Serve directly out of crock pot on warm setting.
I serve with corn chips or tortilla chips.

32 ounces American Cheese (cubed (such as Velveeta brand))
8 ounces Cream Cheese (cubed)
10.5 ounces Canned Diced Tomatoes with Green Chiles ((such as RoTel brand))
10.75 ounces Canned Cream Of Chicken Soup
1 pound Cooked Chicken (shredded or diced)

Steps:

Add all ingredients to a 4 to 5 quart slow cooker.
Cover and cook on LOW for 1.5 to 2 hours, stirring every 30 minutes to ensure the cheese is melted evenly.
Turn slow cooker to WARM setting and serve with your favorite cut up vegetables or chips.

2 boneless skinless chicken breasts, frozen
1 (10 1/2 ounce) can Rotel tomatoes & chilies, do not drain
1/2 cup water
1 lb Velveeta cheese, cubed
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
2 tablespoons flour
4 ounces light sour cream
tortilla chips

Steps:

Blend the tomatoes & chilies in a food processor then pour into a crock pot. Add the water & frozen chicken breasts, cover with a lid & cook on low for 3 hours.
Remove the chicken & shred, place back into the crock pot. Stir in the Velveeta & spices.
Mix the flour with a small amount of water. Stir into the crock pot & recover with a lid. Cook for another hour.
Turn off the pot then stir in the sour cream. Serve warm with tortilla chips.

1 lb hamburger
1 (2 lb) box Velveeta cheese
1 (32 ounce) jar salsa (your favorite)
1 (8 ounce) container sour cream

Steps:

Brown hamburger; cook till done and drain fat (if any).
Cut cheese into small chunks.
Mix hamburger and all remaining ingredients in a crock pot.
Turn on low and warm all (It will take about 2 to 2 1/2 hours to warm).
When thoroughly warmed through, serve with your favorite tortilla chips, toasted or grilled bread, corn chips, bagel chips, or whatever you like.

Ingredients

3 lbs chicken pieces
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter (divided)
1 small onion, chopped
1 garlic clove, chopped
1 (10 1/2 ounce) can cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth

Steps:

Place chicken pieces in crock pot and sprinkle Italian seasoning over chicken. Sprinkle with 2 tablespoons melted butter.
Cook on low for 4-6 hours.
Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
Add this mixture to crock pot and cook on low for an additional hour.

2 (10 ounce) cans chicken
2 (8 ounce) packets cream cheese
3/4 cup hot sauce (I use Frank's)
1 cup ranch dressing
2 cups mild cheddar cheese
2 loaves baguette

Steps:

Drain canned chicken and put in medium sauce pan.
Add hot sauce and cook on medium until heated throughout. My personal favorite is Frank's hot sauce.
Add cream cheese and stir until blended thoroughly.
Add ranch dressing and mix.
Add 1-1/2 cups of cheddar cheese and heat for a few minutes until mixed and melted.
Pour the dip into the crock pot and sprinkle the remaining cheddar cheese on the top. Keep heated on low.
I serve on baguette that has been sliced and toasted. However, it is also tasty on corn chips.
