MACARONI AND CHEDDAR CHEESE

- Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. Transfer to a flameproof baking dish and top with remaining cheese. Place baking dish under a hot broiler and brown the Cheddar cheese on top.

- Pre-heat grill pan to high. Place the meat in a bowl. Cut the onion in half. Grate half the onion into the meat using the small grate on a box grater. Chop and reserve the other half onion. Add Worcestershire, chipotles and sauce and grill seasoning to burgers. Drizzle a little EVOO over the bowl and mix meat. Score the meat into 4 sections. Make 3 mini-burgers, each 3 inches wide, 1-inch thick, from each half-pound of meat. Heat a small sauce pot over medium heat. Add EVOO and garlic. Cook garlic 2-3 minutes then add sugar and vinegar, cook 2 minutes more and stir in tomatoes. Season sauce with salt and pepper and allow it to reduce 5-6 minutes more. Grill meat 2-3 minutes on each side and top with cheese, if you like. Place burgers on buns and top with raw chopped onions and warm fire roasted ketchup and serve.
TUNA MELT MAC 'N' CHEESE

- Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
- In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
- In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
- Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
- To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

- Cook pasta in boiling water as per package directions until done.
- Fry sausage in 2 T olive oil until cooked thoroughly, breaking up into small pieces while cooking.
- When sausage is done, transfer to a bowl.
- Add, 2 T olive oil (or more if needed) to pan. Add mushrooms, garlic, butter. Add salt and pepper to taste.
- Saute, stirring frequently, until mushrooms become somewhat limp.
- Add flour and saute for a couple of minutes.
- Stir in chicken stock and milk. Bring to a boil and let it bubble and thicken.
- Stir in tomatoes and hot sauce.
- Add cheese, stir and simmer 5 minutes.
- Stir in sausage.
- Mix into pasta and serve.

ITALIAN MAC-N-CHEESE

- Bring a large pot of water to a boil. Salt water and cook pasta to a chewy al dente, about 8 minutes.
- In a nonstick skillet, brown and crumble the sausage. Drain cooked crumbles on paper towel lined plate. Return pan to heat and add extra-virgin olive oil, butter, garlic and mushrooms. Season liberally with salt and pepper. Saute 3 to 5 minutes, until mushrooms are lightly golden.
- Preheat broiler to high.
- To mushrooms, add flour and stir, cooking 2 minutes. Whisk in stock, then stir in cream. Bring cream to a bubble, then stir in 2 cups of 4 cheese blend. When cheese has melted into sauce, add tomatoes. When sauce comes to a bubble, remove from heat and adjust seasonings, adding hot sauce if desired.
- Combine cheese sauce with sausage and pasta, transfer to flameproof baking dish, casserole or flameproof serving platter. Sprinkle remaining 1/2 cup of 4 cheese blend and the grated Parmesan over the top and brown under hot broiler.
LOW CARB MACARONI AND CHEESE

- Heat oil in 12-inch skillet over medium heat; sauté onion, garlic and mushrooms for 3 to 5 minutes, stirring occasionally. Add half & half and milk, season with salt, pepper and nutmeg. Cook for 10 minutes, stirring occasionally.
- Meanwhile, cook pasta according to package directions. Pre-heat oven to 425 degrees F. Spray a 9x9 baking dish with nonstick cooking spray.
- Toss pasta and sauce together. Add cheeses and optional hot dog slices; stir until well blended and pour into casserole dish. Top with Parmesan.
- Bake uncovered for 20 minutes or until golden brown. Let cool for 5 minutes before serving.
AUSTIN MAC N CHEESE (RACHAEL RAY)
This is a fantastic blend of southwest flavors and oozy cheeses. Very good. I would also add 4-6 oz. of cooked chorizo or other hot sausage to make this a one dish meal. To make it more colorful, add chopped red pepper or green onions after you take it from the oven. Rachael Ray is always joking about how she burns stuff in the broiler. The first time I made this, I set it on fire. No joke! The entire top of the macaroni had flames coming off it--I had to hit it with the back of a spoon to stop it. Just make sure you leave it under the broiler for seconds, not minutes!

- Husk and rinse tomatillos, cut in half. Put in food processor and pulse until chopped.
- Peel onion, halve and add to food processor, chop.
- Clean and seed jalapenos and add to food processor, chop.
- Add this mixture to a medium saucepan, add cumin and garlic.
- Season with salt. Simmer mixture over low heat for 10 minutes.
- Add the juice of one lime.
- Add finely chopped cilantro.
- Cook macaroni to al dente. Drain, return to hot pot.
- In another saucepan, melt butter.
- Over medium heat, whisk in flour for one minute.
- Whisk in milk and broth. Season with salt and pepper.
- Bring to a simmer and cook until thickened.
- Add swiss and monterrey jack cheeses. Stir until melted.
- Preheat the broiler.
- Add the cheese sauce to the pasta and toss to coat.
- In a 9 x 13 baking dish, add half the pasta.
- Add the green tomatillo mixture.
- Top with the other half of pasta.
- Sprinkle with crushed tostada chips and pepperjack cheese.
- Broil until browned --keep a very close eye on this.
- Serve with sour cream if desired.
- Garnish with chopped red pepper or green onions.

RACHAEL RAY'S SUNDAY GRAVY AND MACARONI (SPAGHETTI, REALLY)
This originally was a Rachael Ray recipe with a few modifications from me. Rachael states that she created from her Grandpa Emmanuel whose recipe was an all day event. She wanted to cut it down to 30 minutes. I will tell you that I am pretty sure I couldn't put this recipe together in 30 minutes... More like an hour, but you can cook it longer as I do to get better flavor. Rachael Ray says: "He would toss spaghetti, which he referred to as macaroni in English, with half of the remaining sauce and add lots of cheese to it. The extra sauce would be ladled on top of dinner plates of meat and macaroni. This recipe is all I can do to imitate Sundays with Emmanuel, in 30 minutes." Serve with a crusty loaf of garlic bread to soak in the sauce and you have a great meal! MY COMMENTS: Made as originally written in the recipe there was barely enough sauce for the pound of spaghetti soI increased the amount of sauce. In addition Rachael says it serves 4 Big Servings, but it would have be 4 REALLY big, hungry people as in my family it serves 8 without a problem It is delicious though and this is my version with just SLIGHT changes.

- Heat water for pasta to boil. Salt and cook pasta 7 to 8 minutes, to al dente.
- Preheat oven to 425 degrees F.
- Sauce: Heat a deep skillet or medium heavy bottomed sauce pot over medium high heat. Season pork chops with salt and pepper. Quarter the sausages. Add 1 tablespoon, 1 turn of the pan, extra-virgin olive oil to pan or pot. Place chops in pan or pot and brown 2 minutes on each side, remove. Add another tablespoon oil, 1 turn of the pan, and sausages. Brown sausages 2 minutes on each side and transfer to plate with pork. Add pepper flakes, chopped garlic and onion to the pot and sauté 1 minute - be very careful as the pepper flakes will burn pretty quickly.
- Add broth to the pan and scrape up drippings. Add crushed tomatoes, tomato paste, diced tomatoes, water, sugar and herbs and bring sauce to a bubble. Add meats back to the pot and reduce heat to simmer. Simmer sauce until ready to serve, 12 to 15 minutes (this is the spot where you could really simmer the sauce for a couple of hours more or less if you wanted to).
- Meatballs: Combine ground meat, egg, remaining 2 cloves chopped garlic, 1/3 cup cheese, and bread crumbs. Season with salt and pepper and roll into balls, 1 1/2 to 2 inches in diameter. Place balls on nonstick cookie sheet. Roast meatballs 10 minutes, then slide into Sunday sauce and turn off oven.
- To serve, place pork, sausages and meatballs on serving dish. Pour 1/2 of the sauce into a serving dish to ladle over pasta and meats at the table. Toss cooked spaghetti with remaining sauce in sauce pot, adding a few handfuls of grated cheese to the pot as you toss it. Transfer pasta to a serving dish.
