Flank Steak with Lemon-Lime Herb Sauce image

Provided by Valerie Bertinelli

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 11

1 to 11/2 pounds flank steak
1/2 cup chopped scallions, light green and white parts only (about 5 scallions)
1/4 cup fresh chopped chives (from 1 bunch)
1/4 cup extra-virgin olive oil plus more for cooking the steak
3 tablespoons chopped fresh basil
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon lemon zest and 2 tablespoons lemon juice (from 1 to 2 lemons)
1 tablespoon lime zest and 1 tablespoon lime juice (from 1 to 2 limes)
2 teaspoons whole grain mustard
1/4 teaspoon red pepper flakes
Kosher salt and freshly ground black pepper

Steps:

  • Remove the flank steak from the refrigerator 30 minutes prior to cooking to bring it to room temperature.
  • In a medium bowl, add the scallions, chives, olive oil, basil, parsley, lemon zest, lemon juice, lime zest, lime juice, mustard, red pepper flakes and 1/2 teaspoon kosher salt. Stir to combine and set aside.
  • Heat a grill pan over medium-high heat. Drizzle a small amount of olive oil onto one side of the steak and use a silicone brush to spread it all over the steak. Sprinkle with a nice pinch of kosher salt and pepper. Transfer the meat to the grill pan, seasoning side down. Drizzle the other side of the steak with a small amount of olive oil and once again brush it to cover and sprinkle with salt and pepper. For medium-rare, cook the steak until the internal temperature is 135 degrees F, 4 to 5 minutes per side. Remove the steak to a plate and let it rest for 10 minutes before slicing.
  • Slice the steak against the grain. Add the slices to a platter and spoon on the lemon-lime herb sauce. Serve extra sauce on the side.

Number Of Ingredients 13

1 carton (32 oz) Progresso™ chicken broth (4 cups)
1/4 cup oil
1 small or medium onion, finely chopped
Kosher salt
1 cup uncooked Arborio rice
1 cup dry white wine
1 cup frozen sweet peas
4 oz shredded Parmesan cheese
Black pepper
Vegetable oil, for frying
2 1/2 cups Progresso™ plain panko crispy bread crumbs
1 egg
4 oz mozzarella cheese, cut into 3/4-inch cubes

Steps:

  • In 2-quart saucepan, heat broth to simmering.
  • In 10-inch skillet, heat 1/4 cup oil. Cook onion and a pinch of salt in oil 5 to 7 minutes or until onion is soft and translucent. Add rice; cook and stir 1 minute. Add wine; cook and stir until it has all absorbed into rice.

Golden Eggplant with Green Pea Sauce image

Provided by Food Network

Time 22m

Yield 4 servings

Number Of Ingredients 18

1/2 cup chickpea flour
1 tablespoon garam masala
1 teaspoon ground fennel
1 teaspoon ground cardamom
1 teaspoon Spanish paprika
Pinch salt
1/2 cup yogurt
1 tablespoon fresh lemon juice
Water, as needed
2 tablespoons grapeseed oil
1 eggplant, sliced into 1/4-inch thick slices
Green Pea Sauce, recipe follows
2 cups fresh peas
1 teaspoon ground cumin
1 teaspoon ground coriander
Pinch salt and freshly ground black pepper
1/2 cup yogurt
1/2 cup water, plus more as needed

Steps:

  • In a large bowl, combine the chickpea flour, garam masala, fennel, cardamom, paprika, salt, yogurt, and lemon juice, and mix well. The mixture should have a pancake batter consistency. If it seems too thick, add a little water to thin it out.
  • Begin to heat the oil over medium-high heat and dip the eggplant slices in the batter and then place into the hot oil. Fry the eggplant until golden brown on the first side and then carefully turn the slices and fry on the other side until the eggplant is tender and golden on both sides, about 7 minutes total. If they start to get too brown, turn the heat down to medium. Serve the eggplant with the Green Pea Sauce.
  • To make Green Pea Sauce:
  • Put the peas, cumin, ground coriander, salt, black pepper, yogurt, and water in a blender and puree until smooth. It should be a thick saucy consistency. Add a little more water if it seems too thick.
  • Yield: Approximately 3 cups

BLISTERED SHISHITO PEPPERS WITH SPICY LEMON DIPPING SAUCE

Blistered Shishito Peppers with Spicy Lemon Dipping Sauce image

Provided by Valerie Bertinelli

Time 20m

Yield 4 servings

Number Of Ingredients 10

8 ounces Shishito peppers, cleaned and thoroughly dried
1 tablespoon vegetable oil
Kosher salt and freshly ground black pepper
Spicy Lemon Dipping Sauce (see recipe below)
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons fresh lemon juice
2 teaspoons prepared horseradish
2 teaspoons whole grain mustard
Kosher salt and freshly ground black pepper

Steps:

  • Heat a large cast-iron skillet over medium-high heat.
  • Add the peppers to a large bowl, add the vegetable oil and 1/2 teaspoon salt and a few grinds of pepper and toss to combine. When the pan is very hot, but not smoking, add enough peppers to cover the base of the pan. It's important not to overcrowd the pan to ensure every pepper gets blistered. Let the peppers sit in the pan undisturbed until they start to blister in spots, 30 to 45 seconds. Toss and continue to cook the peppers, stirring frequently, until they are evenly blistered and slightly soft, about 3 minutes.
  • Transfer the peppers to a plate and continue the process if you have any additional peppers.
  • Serve warm with spicy lemon dipping sauce.
  • Add the sour cream, mayonnaise, lemon juice, horseradish, whole grain mustard, ¼ teaspoon salt and ¼ teaspoon pepper to a small bowl then whisk to combine.
