This recipe always gets rave reviews from vegetarians and non-vegetarians alike. Easy to make, but takes time. Serve with salad.

- Sprinkle eggplant slices with salt and set aside for 30 minutes. Rinse and pat dry.
- Preheat oven to 375 degrees F (190 degrees C).
- Heat oil in a large skillet over medium-high heat. Rinse and pat eggplant dry. Cook eggplant and zucchini in hot oil until lightly browned on both sides, about 3 minutes per side; remove with a slotted spoon to drain on a paper towel-lined plate, reserving as much oil as possible in the skillet
- Adding more oil to skillet as needed and let it get hot. Cook potato slices in hot oil until browned, 3 to 5 minutes per side; remove with slotted spoon and drain on a paper towel-lined plate, again reserving oil in the skillet.
- Saute onion and garlic in reserved oil until lightly browned, 5 to 7 minutes. Pour in vinegar, bring to a boil, and reduce heat to medium-low; cook until liquid is reduced in volume and thick. Stir in tomatoes, lentils, 1/2 the juice from lentils, oregano and parsley. Cover, reduce heat to medium-low, and simmer 15 minutes.
- Layer about 1/3 of the eggplant, 1/3 of the zucchini, 1/2 the potatoes, 1/2 the onions, and 1/2 the feta into a 13x9-inch baking dish. Pour tomato mixture over vegetables; repeat layering, finishing with a layer of eggplant and zucchini.
- Cover and bake in preheated oven for 25 minutes.
- Stir butter, flour, and milk together in a small saucepan; bring to a slow boil, whisking constantly until thick and smooth. Season with pepper and nutmeg; stir. Remove from heat, cool for 5 minutes, and stir in beaten egg.
- Pour sauce over vegetables and sprinkle with Parmesan cheese. Bake, uncovered, for another 25 to 30 minutes.

- Slice up your eggplant, then sprinkle it with a salt and leave it for 30 minutes. Pat it dry. Next brush with olive oil on both sides, place on baking sheet, season with pepper and roast on 400F for 12-15 minutes, until soft; Remove from the oven and let them cool;
- Slice up your zucchini, and season with salt and pepper. Brush with oil on both sides, and place on baking sheet and bake with eggplants for about 12-15 minutes; Remove from the oven and let them cool;
- Peel and slice potatoes and cook them in a slightly salted boiling water until fork tender for about 10 minutes; place them in a colander to discard the water and let them cool;
- To prepare your spinach/feta layer, start off by chopping some onions and garlic;
- In a skillet, heat up the olive oil, add onions and cook for 2-3 minutes, until translucent;
- Add garlic and cook for an additional minute;
- Add spinach and let it cook down until totally wilted;
- Then add fresh dill, salt, and pepper and set aside to cool off. This would be the time to adjust seasoning, but be careful with the salt as feta will add some saltiness to this mix.
- In a bowl beat 2 eggs, add feta, salt, and pepper;
- Once the spinach mixture is cooled, add it to the bowl, mix everything together and set it aside.
- To make a tomato sauce you'll start off the same way as above with spinach/feta layer:
- Heat up some olive oil, add onions and cook until translucent;
- Add garlic and cook for one more minute;
- Then add spices: cinnamon, nutmeg, & oregano;
- Add pureed tomatoes, sugar, salt and pepper. Then cover and cook for approximately 20 minutes;
- Adjust seasoning (salt and pepper) as needed.
- In a skillet, melt butter; then add flour and whisk vigorously;
- Gradually start adding milk and mixing it in, until the sauce is smooth;
- Season with salt, pepper, and nutmeg;
- Turn off the heat;
- Add Parmesan cheese and mix well;
- This would be the time to check for seasoning and adjust accordingly;
- Beat 2 eggs and 1 egg yolk and add them to the béchamel sauce, mixing thoroughly.
- Preheat the oven to 350F;
- Using a 9X13" casserole dish, brush it with olive oil or spray with cooking spray;
- Add slices of eggplant and top them with slices of zucchinis;
- Then add tomato sauce;
- Add another layer of eggplant;
- Add a layer of spinach/feta mix;
- Add sliced potatoes;
- Top it all of with your béchamel sauce;
- Sprinkle it with some more Parmesan Cheese;
- Bake it in the oven for 50-55, minutes until golden brown and bubbly;
- Let it cool off for about 20 minutes before serving. Enjoy!

- Preheat oven to 400°F.
- Heat olive oil and butter over medium heat in a large skillet.
- Add onions, eggplant, garlic and seasonings. Cover and let saute, stirring occasionally for about 10 minutes.
- Add tomatoes and lentils with a little liquid. Cook until very thick.
- Stir in tomato paste and heat through. Adjust seasonings to taste.
- Butter a large casserole of oblong baking dish and layer half of the noodles across the bottom. Sprinkle one third of the parmesan over the noodles. Layer half of the sauce over noodles and parmesan.
- Layer the remaining half of the noodles over the sauce, sprinkle with one third of the parmesan and cover with the remaining sauce. *You could refrigerate it at this point if you want to make it ahead of time.
- Custard Sauce:.
- Heat butter in a saucepan over low heat, stir in flour, and let roux cook a few minutes.
- Pour in heated milk, stirring with a whisk.
- Slowly whisk sauce into beaten eggs.
- Pour sauce over entire casserole. It should drain through to the bottom and bind the whole thing together. If it sits on top, slide a butter knife in and out of the layers in a few places.
- Sprinkle with remaining parmesan and cover.
- Bake for 1 hour.
- Serve very hot.
BRIAM: TRADITIONAL GREEK ROASTED VEGETABLES
Briam is simple and absolutely delicious roasted vegetables, prepared Greek style. Potatoes, Zucchini, and Red onions tossed in a mixture of EVOO, garlic, parsley and spices, then roasted in saucy diced tomatoes. This is a healthy, vegan, text-book Mediterranean diet dish that can stand as a main course or served next to other entrees. See tips and suggestions in the notes.

Steps:
- Preheat oven to 400 degrees F. Place a rack in the middle.
- Place sliced potatoes and zucchini in a large mixing bowl. Season with kosher salt, pepper, oregano, and rosemary. Add fresh parsley, garlic, and a generous drizzle extra virgin olive oil. Toss to make sure the vegetables are well coated with the EVOO and spices.
- Grab a large round pan on skillet (I used an 11-inch oven safe pan. See notes for more options.) Pour 1/2 of the canned diced tomatoes in and spread to cover the bottom of the pan.
- Arrange the seasoned potatoes, zucchini, and sliced onions in the pan in rows (simply going around the shape of the pan and alternating.)
- If you have any of the extra virgin olive oil and garlic mixture left in the mixing bowl, pour that all over the veggies, then top with the remaining diced tomatoes from your can.
- Cover the pan with foil (tent foil a bit so it is not touching the veggies). Bake in 400 degrees F heated-oven for 45 minutes. Take pan out briefly to carefully remove foil, then place back in oven, uncovered, and roast for another 30-40 minutes or until the veggies are soft and charred and most of the liquid has evaporated. (ovens do vary, so pay attention and check as needed.)
- Remove from oven. Serve warm or at room temperature with an added generous drizzle of extra virgin olive oil. (see suggestions for to serve along.)

- Briám. An oven-baked dish of mixed vegetables similar to the ratatouille found in southern France. The vegetables used can vary, but they always include potatoes and zucchini, and you’ll usually find tomatoes and eggplant in there too.
- Gigantes. As their name suggests, gigantes are giant white beans cooked in a very Mediterranean sauce of tomatoes and herbs.
- Tomatokeftedes. Plain ol’ keftedes are generally meatballs, but don’t let the name scare you. It turns out these fried balls can also be made from a number of other ingredients besides meat.
- Gemista. This can be either roasted tomatoes or bell peppers (or both) stuffed with a mixture of rice and herbs. Usually served with thick French fries, which are themselves a delicacy not to be missed in Greece.
- Dolmadhes. Famous in Middle Eastern and other cuisines, these stuffed vine leaves, also known as dolmadakia, are filled with a rice and herb mixture similar to the one used in gemista, sprinkled with lemon juice and served cold.
- Fava. A speciality of Santorini, you may also find this appetizer on other Greek isles. Note: this creamy dip is not made from fava beans! It’s actually puréed yellow split peas – a crop that grows particularly well in the fertile, volcanic soil of Santorini.
- Spanakopita. Savoury pies are sold on every street corner in Greece and are the quintessential Greek fast food. Most versions contain some kind of cheese, but don’t worry, vegans don’t have to feel left out.
- Skordalia. This dip is served with bread and served as an appetizer or meze. It’s made from mashed potatoes and garlic. Lots and lots of garlic.
- Melitzanosalata. And here’s one more dip for you. This one is made from eggplant and is quite similar to the Middle Eastern dish known as baba ghanoush Tip: order a few of these dips or other meze and put them together to create a full meal.
- Imam bayildi. The name of this dish is Turkish and literally means “the imam fainted”. As the story goes, the imam in question swooned with pleasure, completely overcome by the flavour of this dish when his wife made it for him.
