SPICY EGG SANDWICH WITH SAUSAGE AND PICKLED PEPPERS



Spicy Egg Sandwich with Sausage and Pickled Peppers image

A sausage patty topped with feta, cilantro, sweet, piquant pickled peppers, and a sunny-side-up egg make for a hearty sandwich that's perfect for brunch, lunch, or dinner. You can find Peppadew peppers at olive bars at most large supermarkets, or check the condiment aisle, where they're sold jarred.

1/2 lb. sweet or spicy Italian sausage, casings removed
1 Tbsp. unsalted butter
2 large eggs
Pinch of kosher salt
Pinch of crushed red pepper flakes (optional)
2 English muffins, toasted
Harissa paste (for muffins)
3 oz. feta cheese, thinly sliced
1/3 cup sliced drained Peppadew peppers (about 3 oz.)
1/2 cup cilantro leaves with tender stems
Mayonnaise (for muffins)

Steps:

  • Using damp hands, form sausage into two 1/4"-thick patties.
  • Heat a large cast-iron skillet over medium-high until hot. Cook patties until golden brown on bottom side, about 2 minutes. Turn and continue to cook until other side is browned and cooked through, 2-3 minutes more. Transfer to a plate. Wipe out skillet.
  • Heat butter over medium in same skillet until melted. Cook eggs, undisturbed, until whites are set, edges are golden, and yolks are still runny, 4-5 minutes. Season with salt and red pepper flakes (if using). Remove pan from heat.
  • Spread harissa on 2 muffin halves. Top with feta, patties, eggs, peppers, and cilantro. Spread mayonnaise on remaining muffin halves, then close up sandwiches.

Although, you can find this sandwich on the menu at many diners, my favorite place to get one of these is right in my own kitchen. Back in the day, when the Catholic religion had a "no meat on Fridays" rule, Mama often made these for Friday lunch (and, sometimes, supper) for my brothers and me. In Chicago, especially during the Lenten season, many of the Italian beef stands offered this sandwich as an alternative to meat on Fridays ( I think that this is possibly how this sandwich came about). Whatever the case, I love this sandwich (and, I don't wait til Friday) and it brings me back to a simpler time!!!!

1/4 cup olive oil
1 medium onion, thinly sliced
2 green bell peppers, cut into strips (or 2 red bell peppers, or one of each)
2 garlic cloves, minced
4 large eggs
1/4 cup grated parmesan cheese (or grated Romano cheese)
salt & fresh ground pepper, to taste
2 fresh hoagie rolls (torpedo or grinder rolls, or 4 slices of fresh Italian bread)
jarred hot giardiniera (optional, usually found in the pickle aisle of your supermarket or Italian delicatessens)

Steps:

  • In a frying pan, heat the olive oil over medium heat. Add the sliced onions and peppers. Cook, stirring occasionally, until the peppers are tender, about 15 minutes. Add the minced garlic during the last couple of minutes.
  • Meanwhile, in a small bowl, combine the eggs, Parmesan cheese, salt, and ground pepper. Beat until well mixed. Add the egg mixture to the pepper mixture in the skillet. Cook, stirring occasionally, until eggs are set, about 5 minutes.
  • Serve in the hoagie rolls (or, on slices of Italian bread). And, if you like hot stuff, add a little hot (as in spicy hot) giardiniera to top it off.

ITALIAN PEPPERS AND EGG SANDWICHES

These sandwiches are so good. I made them for a romantic breakfast in bed situation with very nice results but they would be just as good for lunch or a light dinner. The eggs are tender and creamy, the peppers and onions are slightly sweet and match well with the saltiness of the meat. And who doesn't love ciabatta? Fresh fruit is a nice accompaniment.

1 tablespoon olive oil
1 large onion, halved and cut into strips
1 red pepper, seeded and cut into strips
1 yellow pepper, seeded and cut into strips
3 ounces pancetta or 3 ounces salami, cut into strips
1/4 cup fresh basil, chopped
10 large eggs
1/4 cup mascarpone cheese (can use softened whipped style cream cheese)
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 tablespoons butter
1 loaf ciabatta, quartered and split
4 slices fontina or 4 slices provolone cheese

Steps:

  • Put bread pieces into warming oven until needed.
  • In a large skillet, heat oil over medium heat and sauté onions and peppers until tender (about 10 minutes).
  • Add prosciutto and cook 1 minute.
  • Remove from heat and stir in basil.
  • Keep warm.
  • In large bowl, combine mascarpone, eggs, salt and pepper until completely blended.
  • Melt butter in large skillet over medium heat.
  • When butter starts to foam, add egg mixture.
  • Push eggs gently with a rubber spatula in a figure-8 motion forming soft curds. Cook until just set but still creamy and moist, about 7 minutes.
  • Transfer eggs to bottoms of bread.
  • Top with cheese slices.
  • Spoon pepper mixture over cheese and top with remaining bread.
  • Serve immediately.

i saw this on Everyday italian and have tweaked it to my taste a little. This is by all means to die for. I am a picky eater and would never have thought that eggs and tomato sauce would be good, but this is superb. Breakfast, lunch, brunch, midnight snack. My husband and i love this. The kids not so much, but that means more for us! Please try it and let me know what you think.

2 slices good quality bread, toasted pretty crunchy, per person
1 tablespoon pizza sauce, per slice
2 eggs, per person
garlic salt
parmesan cheese

Steps:

  • toast your bread. I like D'Annuzios. Use a good quality french, italian or ciabatta. Fry egg to your personal preference, me, i like it over easy. sprinkle with garlic salt to taste. Heat pizza sauce in microwave, then spread on toasted bread.You may use more than 1 tbsp if you like it saucey. Place your egg on top of sauce and sprinkle liberally with freshly grated parmesan. You may use marina, spaghetti or plain tomato sauce, but i found i really prefer a good quality pizza sauce. Enjoy!

1/2 eggplant, thinly sliced into 1/4-inch slices
Homemade Italian Dressing, recipe follows
4 crusty hoagie rolls, cut in half lengthwise
8 ounces fresh mozzarella, cut into thin slices
1 pound genoa salami, thinly sliced
8 ounces hot capicola, thinly sliced
8 ounces prosciutto, thinly sliced
1 pound mortadella, thinly sliced
1/4 head iceberg lettuce, shredded
1 medium yellow tomato, cut into 1/4-inch slices
1/2 teaspoon Dijon mustard
1 tablespoon sugar
1/4 cup red wine vinegar
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 clove garlic, minced
1/4 shallot, chopped
1/2 cup olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Lay the eggplant slices on a baking sheet in a single layer and brush liberally with the Homemade Italian Dressing. Roast in the oven until cooked through and golden, 12 to 15 minutes.
  • Build the sandwich on the rolls with the mozzarella first, then the salami, capicola, prosciutto, mortadella, roasted eggplant and top with the lettuce, tomato and a generous drizzle of the Homemade Italian Dressing. Serve while blasting Louis Prima.
  • Place the vinegar, mustard, sugar, Italian seasoning, salt, pepper, garlic and shallots in a blender or food processor. While the machine is running, slowly drizzle the olive oil through the blender top or feed tube until the dressing is combined and emulsified. Adjust the seasoning if necessary; add more oil if you want it less acidic. Store the dressing up to 2 weeks in the fridge.

1 medium russet potato, peeled and cut into 1/2-inch cubes
1 large Italian frying pepper (Cubanelle), seeded and thinly sliced
1 medium onion, thinly sliced
Kosher salt
6 large eggs
4 cups baby arugula
2 teaspoons red wine vinegar
4 seeded semolina rolls, split and toasted
4 slices sharp provolone cheese (optional)

Steps:

  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the potato and cook, tossing, until browned and beginning to soften, 4 to 5 minutes. Add the sliced pepper and onion and season with salt. Cook, tossing occasionally, until the potato is cooked through and the pepper and onion are browned but not completely soft, 8 to 10 minutes.
  • Meanwhile, beat the eggs in a bowl and season with salt. Reduce the heat to low and give the pan a moment to cool. Pour in the eggs and cook, stirring constantly, until just set, 2 to 3 minutes. Remove from the heat.
  • Toss the arugula with the remaining 2 teaspoons olive oil and the vinegar in a bowl. Season with salt. Fill each roll with the scrambled eggs, cheese, if desired, and the arugula.

Italian hero, sub, hoagie, grinder - this classic sandwich has many names, and every deli makes it differently. Its deliciousness lies in the proportion of rich-and-fatty ingredients to spicy-and-crunchy ones. For optimal structure and texture, start with crusty rolls with pillowy insides (or toast soft rolls). Use two to four types of cured meat for a range of umami, and plenty of lettuce and pickles to counterbalance them. Then assemble wisely: Shingle the meat and cheese across the rolls, then top with pickles, onions and dressed lettuce. Once put together, the wet ingredients are wrapped in meat so they're held in place and the bread doesn't get soggy. Wrap with parchment or wax paper for tidier eating and transporting.

1 pound thinly sliced Italian cured meats, such as salami, prosciutto, mortadella, coppa and/or soppressata
1 cup sliced pickled peppers, such as pepperoncini, banana peppers, giardiniera and/or jalapeños
1 small head iceberg lettuce (about 1 pound), thinly sliced
2 tablespoons extra-virgin olive oil

Steps:

  • Rinse the red onion under cold water, then transfer to a large bowl. Add the red wine vinegar, dried oregano and 1 teaspoon salt. Stir to combine and set aside.
  • Arrange the rolls cut side up so they lie flat. Spread with a thin layer of mustard and/or mayonnaise, if using. Shingle the entire surface with the cheese, then the cured meats. Scatter an even layer of pickled peppers.
  • Add the iceberg lettuce and olive oil to the onion-oregano mixture and toss until well coated. Season to taste with salt. Pile the lettuce on one side of the sandwich, then close the sandwich and press down lightly. If packing, wrap the sandwich tightly in parchment paper or foil, then cut in half crosswise. Sandwiches will keep for up to 4 hours refrigerated.
