Really great appetizer for the summer or anytime. Every time I have served these everyone wants the recipe...and they're so easy! Just be sure to refrigerate the cream cheese mixture overnight!

1 (8 ounce) package cream cheese, softened
½ cup mayonnaise
1 (.7 ounce) package dry Italian salad dressing mix
2 loaves French bread, cut into 1 inch slices
2 medium cucumbers, sliced
1 pinch dried dill weed

Steps:

  • In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
  • Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

1 large cucumber
1 (8 ounce) package cream cheese
1 package Italian salad dressing mix
1 package miniature party rye rounds (the small pieces)

Steps:

  • Slice the cucmber into thin slices and set aside.
  • Allow cream cheese to come to soften and then mix the dry italian dressing mix into the softened cream cheese.
  • Refreigerate for 1 hour to allow the flavors to blend.
  • Spread 1 tsp of cream cheese mix onto a slice of party rye and top with a cucumber.
  • Bet you can't eat just one!

1 1/2 Bolillos, or 1/4 loaf crusty Italian bread
6 pickling cucumbers, peeled and cut into 3/4-inch chunks
1 small red onion, thinly sliced
3 Italian Roma tomatoes, chopped
1/2 cup green olives, pitted and cut in half
6 ounces Panela cheese, cut into 1/2-inch cubes
1/4 cup red wine vinegar
1/4 cup olive oil
1/2 bunch cilantro, chopped
3/4 teaspoon salt
1/2 teaspoon cracked black pepper
Lettuce leaves for serving

Steps:

  • Cut the bread, with crusts, into 1/2-inch cubes. Spread on a tray to thoroughly dry, 1 to 2 hours, or dry in a 250 degree oven for 30 to 45 minutes.
  • Mix the cucumbers, onion, tomatoes, olives and cheese together in a bowl. Add the remaining ingredients and the bread cubes. Toss well, cover and chill 30 minutes. Serve cold on lettuce-lined plates.

¼ cup olive oil
2 tablespoons balsamic vinegar

Steps:

  • Rub a peeled clove of garlic around a wooden salad bowl.
  • Pull apart or chop the bread into bite-size pieces.
  • In the prepared salad bowl, combine the bread, tomatoes, cucumbers, red onions, garlic, basil and thyme. Add enough olive oil and vinegar to lightly coat, toss and serve.

6 cups cubed (3/4-inch) country bread (about 1/2 pound)
1/2 seedless cucumber
1 celery rib, thinly sliced (1 cup)
1/2 cup chopped scallion
1/2 cup chopped pitted Kalamata olives
1 tablespoon drained capers, chopped
3/4 cup packed flat-leaf parsley leaves
3/4 cup packed basil leaves, torn
1/3 cup fine-quality extra-virgin olive oil
1/4 cup red-wine vinegar

Steps:

  • Preheat oven to 300°F with rack in middle.
  • Spread out bread in a 4-sided sheet pan and toast in oven, stirring occasionally, until pale golden, 20 to 25 minutes. Cool completely.
  • While bread cools, halve cucumber lengthwise, then core and thinly slice.
  • Toss together bread, cucumber, remaining ingredients, 1/4 tsp salt, and 1/2 tsp pepper and let stand, tossing occasionally, 30 minutes. Season with additional oil, vinegar, salt, and pepper.
