Steps:
- Mix Marinade ingredients together in a large bowl. Add chicken and mix to coat. Marinate for 1 hour - 24 hours (See Note 3 to skip marinating).
- Heat oil in skillet over medium heat. Add chicken and cook for 4 minutes on each side, or until cooked. Transfer to a plate and cover with foil to keep warm while resting.
- Turn heat up to medium high. Add oil if required.
- Add onion and garlic, cook for 2 minutes. Add capsicum and cook for 1 minute or until onion is translucent.
- Add risoni, tomato, chicken stock, Italian herbs, red pepper flakes, salt and pepper. Mix and bring to simmer, then lower heat to medium low or so it simmers gently.
- Cook for 9 - 10 minutes, stirring frequently (otherwise it will stick).
- Take it off the stove when the risoni is just cooked (touch under is ok, finishes cooking in residual heat very quickly). It should still be saucy (see video).
- Stir through parmesan and basil - excess liquid will evaporate in this step.
- Spoon risoni into serving bowls, top with chicken. Serve with extra parmesan and basil.

CRISPY CHICKEN WITH LEMON ORZO
Steps:
- Combine the flour, 2 teaspoons salt, and 1 teaspoon pepper in a shallow bowl. Remove the tenders on the underside of the chicken breasts and save for another use. (This makes the chicken breasts an even thickness so they cook evenly.) Heat the canola oil and 4 tablespoons of the butter together in a large (12-inch) cast-iron skillet over medium heat until the butter has melted and begins to sizzle.
- Dredge the chicken in the flour mixture and shake off any excess. Place the chicken, skin side down, in the skillet and cook over medium heat without moving for 12 minutes. With the chicken still skin side down, place the skillet in the oven and roast for 10 minutes.
- Return the skillet to the stovetop over medium heat (careful; the handle will be hot!). Turn the chicken skin side up, add the remaining 5 tablespoons of butter, and continue cooking for 3 to 5 minutes, until the butter is a nutty brown color and the chicken breasts are just cooked through (an instant-read thermometer will register 130 to 140 degrees F). Off the heat, sprinkle on the parsley.
- Divide the Lemon Orzo with Feta among four dinner plates. Transfer the chicken to a cutting board and slice each breast crosswise in thick slices. Arrange one breast on each plate with the orzo. Spoon a few tablespoons of the brown butter over each chicken breast, squeeze on some lemon, and sprinkle with salt. Serve hot with a fresh wedge of lemon on each plate.
- In a large saucepan, bring 2 quarts of water to a boil. Add 2 teaspoons salt and the orzo. Return the water to a boil and simmer uncovered for 9 to 11 minutes, until the orzo is al dente. Drain.
- Transfer the orzo to a bowl and stir in the lemon zest, lemon juice, olive oil, dill, 2 teaspoons salt, and 1 teaspoon pepper. Fold in the feta and serve hot.
ONE POT ITALIAN CHICKEN AND ORZO
Steps:
- In a small bowl, mix together the Italian seasoning, paprika, garlic powder, pepper and 1 teaspoon of salt. Sprinkle over all the chicken to coat.
- Heat 3 tablespoons of olive oil in a non-stick skillet over medium heat. Once hot, add the chicken and cook for a about 4-5 minutes on each side. (Just until golden on each side)
- Remove the chicken from the pan and set aside on a plate (It's ok if it's not cooked through.)
- Lower the heat to medium-low and add 1 more tablespoon of olive oil, the onion and garlic and cook for about 3-5 minutes or until the onions are softened.
- Add in the white wine and scrape up any bits from the bottom of the pan. Let bubble for about 1 minute.
- Add in the orzo, diced tomatoes, water, cream, spinach, parmesan cheese, 1/2 teaspoon of salt. Stir together until the spinach starts to wilt (just about 30 seconds).
- Add the chicken back to the pan and simmer the mixture on medium-low for 10 minutes while stirring so the bottom doesn't stick. (uncovered)
- Turn off the heat and let everything sit for 5 minutes then serve.
CREAMY ITALIAN ORZO
Orzo is a small Italian pasta that looks very much like rice. This dish is a fabulous blend of creaminess which gently balances the punch of the onion and garlic. Peas and cremini mushrooms are an added surprise in this dish that can be eaten as a side or a main course.

Steps:
- Bring a salted water to a boil over high heat. Add the orzo and cook until tender but still al dente (slightly firm), stirring often, about 8 minutes. Drain, saving 1 cup of the cooking liquid.
- Meanwhile, heat oil in large frying pan over medium heat. Add onion, mushrooms and garlic, and saute until tender, about 2 minutes. Stir in the half and half and peas. Add the orzo and toss to coat. Remove pan from heat. Add parmesan to pasta mixture.
- Stir pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with desired amount of salt, and serve hot.
- Chunks of chicken or shrimp could be added if you choose to serve this as a main dish.
