- Whisk the eggs until frothy and season with salt and pepper.
- Meanwhile, melt 1 tablespoon of the butter in a 10-inch nonstick skillet over medium heat. Add the ham and scallions and cook until the ham is browned and warmed through, then remove to a plate.
- Wipe the pan out and place it back over the heat. Add the remaining 1 tablespoon of butter and swirl around until melted, then add the eggs. Using a rubber spatula, move the outside edges of the eggs inward as they begin to set up. Continue to cook until the eggs are set and begin to get some color. Sprinkle the ham and cheese evenly over the surface of the eggs. When ready to serve, fold the omelet in half and slide out on to a plate.

- Preheat the oven to 350 degrees.
- Heat the olive oil in a 10-inch ovenproof omelet pan over medium heat. Add the bacon and cook for 3 to 5 minutes over medium-low heat, stirring occasionally, until the bacon is browned but not crisp. Take the bacon out of the pan with a slotted spoon and set aside on a plate.
- Place the potatoes in the pan and sprinkle with salt and pepper. Continue to cook over medium-low heat for 8 to 10 minutes, until very tender and browned, tossing occasionally to brown evenly. Remove with a slotted spoon to the same plate with the bacon.
- Meanwhile, in a medium bowl, beat the eggs, milk, 1/2 teaspoon salt, and 1/4 teaspoon pepper together with a fork. After the potatoes are removed, pour the fat out of the pan and discard. Add the butter, lower the heat to low, and pour the eggs into the hot pan. Sprinkle the bacon, potatoes, and chives evenly over the top and place the pan in the oven for about 8 minutes, just until the eggs are set. Slide onto a plate, divide in half, and serve hot.

- Preheat oven to 350 degrees F (175 degrees C). Line a roasting pan with aluminum foil.
- Set ham into the prepared roasting pan and pierce several times with a fork.
- Stir brown sugar, peach preserves, and mustard together in a bowl; spread over the ham. Cover the ham with a sheet of aluminum foil.

- Gather the ingredients.
- Add the olive oil to a skillet and heat it over medium-high heat - do not overheat the oil, if it is too hot the egg will set immediately after it hits the pan and then will be too hard.
- Whisk the eggs until they are frothy - it is important to not add salt or pepper at this stage of the recipe.
- Stir half of the cold butter into the eggs.
- Add the remaining butter to the skillet and swirl it with the oil until it melts and becomes cloudy and bubbly.
- Pour the eggs into the hot skillet and cook, moving a fork quickly through the eggs in small circles and zigzags until the eggs are approximately 80% cooked through.
- Smooth down the top surface of the eggs with the back of a large spoon or a small offset spatula.
- Season the eggs with salt and pepper to taste.
- Sprinkle the shredded cheese and chopped herbs on the eggs and cover with a lid.
- Turn off the heat and allow the omelet to continue cooking for 2 to 3 minutes, depending on how firm you want your eggs.
- Tilt the skillet to the side a bit and, using a rubber spatula, carefully ease the omelet out of the pan and onto a warmed serving plate.
- Gently roll the omelet into the traditional tube shape. Serve with a fresh green salad lightly dressed with French dressing.

- Heat the oil and butter in a nonstick skillet until hot but not smoking. Add the onions and potatoes and cook, covered, for about 10 minutes, stirring the mixture every 3 to 4 minutes. Arrange the tomato slices so they cover most of the surface of the potato-and-onion mixture, cover, and cook for 1 minute.
- Meanwhile, break the eggs into a bowl, add the chives, salt and pepper, and mix together with a fork. Add the egg mixture to the skillet and stir gently with the tines of the fork for about 1 minute to allow the eggs to flow between the potatoes. Then place the skillet under a hot broiler, 3 or 4 inches from the heat, and cook for about 3 minutes, until eggs are set.

Adaptation of a recipe I saw on a cooking show a few years ago. I've listed exactly what I used on this occasion but of course a lot of variations are possible and different styles of cheese may be used.

Steps:
- Whisk eggs in a medium bowl.
- Add grated potato, parsley, ham, pepper, sage and onion to bowl and mix.
- Melt butter in pan over medium heat and add mixture, set temperature so it is just bubbling.
- Evenly spread mushrooms, tomato, capsicum and cheeses over top.
- Cook without turning until top is starting to firm, around 30 minutes.
- If required flip over and cook other side around one minute to set egg.
- Serve cut in half without folding.

- Preheat broiler to a moderate heat.
- In a skillet heat 1 T butter and the olive oil; add diced ham and sausages and saute for about 2 minutes over medium heat until lightly browned.
- Remove ham and sausages and reserve.
- Add potato to pan; saute until soft and golden brown.
- Combine eggs with parsley and green onion; season with salt and pepper.

- Cut 2 medium sized yukon gold potatoes into small pieces, I like to cut each potato in half, then each half in half to end up with 4 evenly sized quarters, cut each quarter into 3 pieces and into 1/4 inch thick slices, thinly slice 1 large onion, finely mince 4 cloves of garic, cut 1 red bell pepper into 2 inch long by a 1/4 inch thick strips, crack 6 organic eggs into a bowl, season them with sea salt & black pepper and whisk until well combined
- Heat a large nonstick fry pan with a medium-high heat and add in a generous 1/3 cup extra virgin olive oil, after 2 minutes add in the pieces of bell pepper and the sliced onions, mix with the olive oil, after 3 minutes and the onions are translucent, add in the pieces of potato, continue to mix so all the pieces of potato are coated in the olive oil, mix occasionally
- After about 15 minutes and the potatoes are fully cooked through, add in the minced garlic, 1/2 tsp sweet smoked paprika and season everything with sea salt & black pepper, mix together until well combined, remove the pan from the heat and transfer the mixture into the bowl with the eggs, mix together until well combined
- Using the same pan, heat it with a low to low-medium heat and add the potato and egg mixture into the pan, spread around so it´s all in an even layer, after about 2 minutes run a spatula through the outer edges of the omelette to ensure that it´s not sticking to the pan, after about 5 minutes grab a plate that is either bigger or a tad smaller than the pan, place it over the omelette, place one hand over the plate while you flip the pan with the other hand, slide the uncooked part of the omelette back into the pan, using the back of a spatula compact the tortilla from the outer edge towards the center, this gives it that classic rounded edge, after another 5 minutes remove the pan from the heat and slide the tortilla into a serving dish, enjoy!
