SAUSAGE & BROCCOLI EGG MUFFINS



Sausage & Broccoli Egg Muffins image

These "muffins" are amazing with Italian sausage or breakfast sausage (I prefer turkey). Broccoli is my favorite veggie (as per the author Erin Myers of mymommyworld.com) but any veggie can be used! Pick your favorite and give it a try!

Number Of Ingredients 8

1 lb Italian Sausage (or any breakfast sausage)
8 large eggs
1 cup broccoli florets (finely chopped)
½ tbsp vegetable oil
¼ cup milk
½ tsp baking powder
salt & pepper to taste
freshly grated Parmesan cheese

Steps:

  • Preheat oven to 375.
  • In a large pan, fry up the sausage until it's no longer pink. Remove from heat and add broccoli florets.
  • In a medium bowl, whisk together eggs, milk, oil, baking powder and salt and pepper.
  • Spray a 12 cup muffin pan with oil (be generous - I was not and these really stuck to my pan).
  • Spoon the sausage mixture evenly into each tin. Pour the egg mixture evenly over the top (the egg pretty much filled each cup to the top).
  • Top each muffin with Parmesan cheese.
  • Bake for 15-20 minutes. Until each muffin starts to turn a golden brown.
  • Let them cool a bit in the tin before trying to remove.
  • Refrigerate overnight and enjoy throughout the week for breakfast or in your kiddos lunch.

1 lb italian sausage (sweet,mild, hot your choice !!)
1 c broccoli florets
8 large eggs
1/4 c milk (or half n half depending on what you want to use)
1/2 Tbsp vegetable oil
1/2 tsp baking powder
s & p salt and pepper to taste
freshly grated parmesan cheese as needed

Steps:

  • 1. Preheat oven to 375 F. Lightly spray a 12-cupcake pan with oil.
  • 2. In a large saute pan, over medium high heat, brown Italian Sausage for about 5 minutes, or until the sausage is no longer pink. Remove from heat and stir in broccoli.
  • 3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.
  • 4. Spoon out the sausage and broccoli mixture evenly into each cupcake.
  • 5. Ladle the egg mixture over sausage and broccoli.
  • 6. Sprinkle with Parmesan cheese.
  • 7. Bake for 15-20 minutes.
  • 8. Notes: Have not tried to freeze although I bet they will freeze great. freeze great Have also made these with some cheddar cheese and left over cooked asparagus. I think there is many combinations to use.

Italian sausage and meze rigatoni come together in this easy three-cheese pasta bake. Plus, the creamy sauce and tender broccoli florets will make both parents and kids more than happy to enjoy this meal.

Number Of Ingredients 13

6 tablespoons unsalted butter
1 pound mild Italian sausage, casing removed
2 cloves garlic, minced
3 tablespoons all-purpose flour
3 cups milk
12 ounces shredded whole milk mozzarella (about 3 cups)
8 ounces shredded fontina cheese (about 2 cups)
Kosher salt and freshly ground black pepper
1 pound meze rigatoni
12 ounces broccoli, trimmed and cut into small florets (from 1 medium bunch)
1 cup panko breadcrumbs
2 tablespoons chopped parsley
1/4 cup freshly grated Parmesan

Steps:

  • Preheat the oven to 425 degrees F. Bring a large pot of water to a boil over high heat.
  • Melt 1 tablespoon of the butter in a large pot or Dutch oven over medium-high heat. Add the sausage and cook, breaking up the sausage with a wooden spoon into small pieces, until browned and cooked through, about 6 minutes. Use a slotted spoon to transfer the sausage to a medium bowl, then reduce the heat to medium.
  • Add 3 more tablespoons of the butter and the garlic to the same pot. Cook until the butter has melted and the garlic is softened slightly, about 1 minute. Whisk in the flour and cook until it's bubbling all over and no longer raw, about 2 minutes. Slowly whisk in the milk, then bring to a steady simmer. Simmer until it has thickened slightly, about 2 minutes. Whisk in the mozzarella and fontina until smooth. Season with 1 1/4 teaspoon salt and a few good grinds of pepper. Keep warm over low heat.
  • Meanwhile, season the pot of boiling water generously with salt (it should taste like the ocean). Add the pasta and cook until al dente, adding the broccoli florets during the last 4 minutes of cooking, about 8 minutes total.
  • Use a spider to transfer the pasta and broccoli into the cheese sauce and stir until evenly coated. Stir in the sausage. Transfer to a 9-by-13-inch baking dish.
  • Melt the remaining 2 tablespoons butter in a small saucepan. Stir in the breadcrumbs and parsley then sprinkle evenly over the pasta. Top with the Parmesan. Bake until the sauce is bubbling around the sides and the breadcrumb topping is golden brown, 12 to 15 minutes. Let sit 10 minutes before serving.

spinach, chopped
tomato, diced

Steps:

  • Mix sausage, salt, pepper, garlic powder, onion powder, paprika, and dried parsley in a bowl until well combined.
  • Grease a muffin tin and start to form shells with the sausage mix. Cover the sides and leave room in the middle for the eggs.
  • In a separate bowl, mix the eggs, salt, and pepper.
  • Pour egg mixture into the middle of each cup.
  • Top with shredded cheese, tomatoes, spinach, or toppings of your choice.
  • Bake at 350°F (180°C) for 30 minutes.

2 cups flour
1/3 cup grated parmesan cheese

14 ounces pizza sauce
2 tablespoons olive oil

Steps:

  • Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
  • Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
  • Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Add 3 T. fat, start with the remaining fat in the skillet and make up the difference with olive oil. Add sausage and mix well. Pour the mixture over the dry ingredients and mix just until blended. Scoop the very thick batter into muffin cups. Bake 20 to 25 minutes or until firm on top. Cool 30 minutes before serving.
