8 cups plums, pitted, Halved (3 lb/1.5 kg)
1 cup onion, Chopped
1 cup water
1 teaspoon gingerroot, Minced
1 clove garlic, minced
3/4 cup granulated sugar
1/2 cup rice vinegar or 1/2 cup cider vinegar
1 teaspoon coriander, Ground
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon cayenne pepper
1/4 teaspoon clove

Steps:

  • In large heavy saucepan, bring plums, onions, water, ginger and garlic to boil over medium heat; cover, reduce heat to low and simmer, stirring occasionally, until plums and onions are very tender, about 30 minutes.
  • Press through food mill or sieve and return to clean pan; stir in sugar, vinegar, coriander, salt, cinnamon, pepper and cloves.
  • Bring to boil, stirring; reduce heat to low and simmer until mixture reaches consistency of applesauce, about 45 minutes.
  • Fill and seal jars; process in boiling water bath for 30 minutes.
  • Makes about 4 cups

4 garlic cloves, minced fine
1/2 ounce fresh ginger, minced
1 small onion, minced
1 cup brown sugar
2 cups water
1/8 cup teriyaki sauce
1 teaspoon sesame oil
1/8 cup soy sauce
1/2 teaspoon crushed dried chili
3 lbs plums, pitted & chopped
1 lemon, juice of, fresh
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Place first 11 ingredients into pot.
  • Bring to a boil then simmer 30 minutes.
  • Mix water and cornstarch.
  • Blend in a blender the solids from the pot with the cornstarch mixture and put back with the liquid simmering all the while.
  • Simmer till thickened.
  • Pour into sterilized jars (size you like) and put into a water bath for 10 minutes.
  • Remove jars from water bath cool and store in a cool dark place.

1 lb plums (finely chopped. Should be about 2 cups)
1 1/2 cups firmly packed brown sugar
2 cups apple cider vinegar
1 1/2 tsp salt
1 onion (diced)
4 cloves garlic (minced or crushed)
2 tbsp tamari or soy sauce
1 tsp dried red pepper flakes
1/4 tsp each allspice, ground cloves, nutmeg, cinnamon, and ginger.

Steps:

  • Combine plums, brown sugar, and vinegar in a large stainless steel pot.
  • Over high heat, bring to a boil. Reduce heat to medium-low and simmer for about 3 minutes, stirring. Add all other ingredients, stirring continuously and bring back to a simmer.
  • Continue to simmer for 30 minutes, stirring occasionally, until thickened.
  • Remove from heat.
  • Use an immersion blender right in the pot, or transfer to a blender and process until sauce is smooth.
  • Transfer to clean, sterilized jars. Process jars for 15 minutes in a boiling water canner.

1 lb mild pork sausage
1 medium onion, minced
1/2 red bell pepper, minced
2 teaspoons ground ginger
2 tablespoons soy sauce
1 large egg, lightly beaten
1 teaspoon ground ginger
1 cup light brown sugar
1 cup plum preserves
1 cup rice vinegar
2 tablespoons soy sauce
6 ounces pineapple juice
3 tablespoons cornstarch

Steps:

  • Thoroughly mix together meatball ingredients and form into meatballs by the tbsp; brown on all sides and cook over medium-low heat until cooked through, 15-20 minutes; remove from heat.
  • Mix together sauce ingredients except cornstarch in a large pan big enough to hold sauce and meatballs (w/lid), cook over low heat until mixture is hot and simmering and mixed through.
  • Mix cornstarch with 5-6 tbsp water to form a slurry and whisk into sauce and stir until sauce is thickened and bubbly; fold meatballs into pan and mix sauce over them.
  • Top with lid and simmer 10-15 minutes over low heat.
  • Serve with hot steamed rice, if desired.

3 ripe plums (if plums aren't ripe, sit them on counter for a few days until ripened)
1 small garlic clove
1/4 teaspoon red chili sauce (or fresh or powdered peppers to taste)
1/2 teaspoon ground ginger (or equivalent amount of fresh grated)
1 teaspoon soy sauce
1 tablespoon raw honey
1 tablespoon brown rice vinegar
1 green onion, finely chopped (white stem and green leaves)

Steps:

  • Cut plums in half and remove stone. Then cut again into quarters. Place plum pieces in a food processor and puree until the there are small flecks of skin still visible. Pour the puree into a mixing bowl.
  • Grate the garlic with a microplane if you have one, otherwise, chop very fine and add to the plum puree.
  • Add chili and soy sauce to plums.
  • In a separate container, mix the honey and vinegar together until the honey is dissolved, then pour the mixture into the plum puree.
  • Add the chopped green onions.
  • Stir and refrigerate at least an hour before serving. Flavors will mellow with time.

1 1/2 cups packed brown sugar
1 cup sugar
1 cup vinegar, 5% acidity
1 small onion (1/2 cup minced)
1 teaspoon crushed dried chili pepper flakes
4 garlic cloves, minced
1 tablespoon fresh ginger, minced
2 tablespoons soy sauce or 1 tablespoon salt
1 tablespoon Thai basil or 1 tablespoon tarragon, minced
1 tablespoon basil, minced

Steps:

  • Place all ingredients in a large heavy bottom pan bring to boil stirring until thick and syrupy 1 1/2 hours when it reaching 215 F degrees.

2 pounds plums, pitted and chopped
1/2 cup diced Garnet yam (i.e., orange flesh)
1/2 cup chopped yellow onion
1/2 cup apple cider vinegar
3/4 cup light brown sugar
1/4 cup soy sauce or tamari
2 tablespoons honey
2 tablespoons grated fresh ginger
2 cloves garlic
1 teaspoon sea salt
For the Spice Mixture (highly recommended but see below for shortcut option):
1 2-3 inch piece cinnamon stick
2 whole star anise
4 whole cloves
1/2 teaspoon sichuan peppercorns ((NOT the same thing as black pepper))
1/4 teaspoon whole fennel seeds
OR 1 teaspoon Chinese Five Spice Powder

Steps:

  • Place all the ingredients except for the spice mixture in a medium-sized pot and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 30 minutes. Use an immersion blender or transfer to a blender to puree until smooth (then return to pot).
  • Place the whole spices (skip if using store-bought five spice powder) in a small dry pan and toast over medium-high heat just until fragrant. Be careful not to scorch the spices or they will taste bitter. Let the spices cool and then place the whole spices in a piece of cheesecloth tied shut with string or in a tea sachet. Do the same if using store-bought ground five spice powder.
  • Place the spice packet in the pot with the plum sauce and continue to simmer uncovered for 25-45 minutes until the sauce is thickened to the desired consistency. Discard the spice packet. Let the sauce cool. Store in the fridge in an airtight non-reactive container. Will keep for up to 2 weeks.
  • CANNING INSTRUCTIONS: Ladle the hot plum sauce into sterilized jars, seal with the lids and process in a boiling water canner for 15 minutes. Turn off the heat and let sit for 5 minutes. Remove the jars and let sit undisturbed for 24 hours then check the seals. Will keep in a dark, cool place for at least a year.

Steps:

  • Place all of the ingredients in a medium saucepan and bring to a boil over medium heat.

The condiment sū méi jiàng is typically made with plums, vinegar, sugar and some spices. Our version of plum sauce has the perfect balance of sweetness, brightness and light spice. It's traditionally used as a dipping sauce for fried foods like spring rolls, egg rolls and fried wontons, and for basting duck, chicken and pork. But there's no need to stop there. Try it tossed with noodles or a stir-fry, or mixed into a salad dressing for a twist.

1 pound fresh plums, preferably red plums for color, pitted and chopped (about 4 cups)
2 sticks brown slab sugar or 1/2 cup light brown sugar (see Cook's Note)
1/4 cup apple cider vinegar
2 tablespoons unseasoned rice vinegar
1 tablespoon soy sauce or tamari
1/4 teaspoon Chinese five-spice powder
2 coins ginger, about 1/2 inch thick
1 dried chile pepper, such as chile de árbol or dried Thai chile, optional
1/4 teaspoon kosher salt

Steps:

  • Place the plums, sugar, apple cider vinegar, unseasoned rice vinegar, soy sauce, Chinese five-spice powder, ginger coins, chile and 1/4 teaspoon salt in a small pot. Bring to a boil, reduce the heat to medium, cover and simmer until the plums are soft, about 20 minutes.
  • Allow the mixture to cool for 5 minutes, then transfer to a blender, filling halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Alternatively, use an immersion blender until smooth.
  • Transfer the blended plum mixture back to the same pot and cook over medium heat, stirring frequently, until the mixture is thick and you can see the bottom of the pot when you run a rubber spatula across the bottom, about 5 minutes.
  • Transfer to a medium bowl or plate to cool to room temperature, about 2 hours.
  • The sauce can be stored in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.

1 small onion, quartered
1 garlic clove, peeled
3-1/2 cups sugar
2 cups cider vinegar
