Steps:
- Place all the ingredients except for the spice mixture in a medium-sized pot and bring to a boil. Reduce the heat to medium-low and simmer uncovered for 30 minutes. Use an immersion blender or transfer to a blender to puree until smooth (then return to pot).
- Place the whole spices (skip if using store-bought five spice powder) in a small dry pan and toast over medium-high heat just until fragrant. Be careful not to scorch the spices or they will taste bitter. Let the spices cool and then place the whole spices in a piece of cheesecloth tied shut with string or in a tea sachet. Do the same if using store-bought ground five spice powder.
- Place the spice packet in the pot with the plum sauce and continue to simmer uncovered for 25-45 minutes until the sauce is thickened to the desired consistency. Discard the spice packet. Let the sauce cool. Store in the fridge in an airtight non-reactive container. Will keep for up to 2 weeks.
- CANNING INSTRUCTIONS: Ladle the hot plum sauce into sterilized jars, seal with the lids and process in a boiling water canner for 15 minutes. Turn off the heat and let sit for 5 minutes. Remove the jars and let sit undisturbed for 24 hours then check the seals. Will keep in a dark, cool place for at least a year.

CHINESE PLUM SAUCE
The condiment sū méi jiàng is typically made with plums, vinegar, sugar and some spices. Our version of plum sauce has the perfect balance of sweetness, brightness and light spice. It's traditionally used as a dipping sauce for fried foods like spring rolls, egg rolls and fried wontons, and for basting duck, chicken and pork. But there's no need to stop there. Try it tossed with noodles or a stir-fry, or mixed into a salad dressing for a twist.

- Allow the mixture to cool for 5 minutes, then transfer to a blender, filling halfway. Put the lid on, leaving one corner open. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Alternatively, use an immersion blender until smooth.
- Transfer the blended plum mixture back to the same pot and cook over medium heat, stirring frequently, until the mixture is thick and you can see the bottom of the pot when you run a rubber spatula across the bottom, about 5 minutes.
- Transfer to a medium bowl or plate to cool to room temperature, about 2 hours.
- The sauce can be stored in an airtight container in the refrigerator for up to 2 weeks or in the freezer for up to 2 months.

15 POPULAR HOMEMADE ASIAN SAUCES | PICKLED PLUM
From pickledplum.com
- Tonkatsu Sauce. Tonkatsu sauce is a quintessential Japanese sauce used as a finishing sauce for dishes such as okonomiyaki and takoyaki. It’s also used for fried dishes like pork katsu and as a sauce for burgers and sandwiches.
- Japanese Restaurant-Style Ginger Carrot Dressing. One of my favorite salad dressings! Served in most Japanese restaurant both here and in Japan, ginger carrot dressing has a strong onion flavor with a hint of ginger and plenty of sweetness and tanginess.
- Ponzu Sauce. Drizzle ponzu sauce on a salad and it instantly tastes light and fresh. The mixture of bonito flakes, rice vinegar, mirin, soy sauce, and yuzu makes this sauce sour, smoky, and full of umami.
- General Tso Sauce. Do you like your General Tso spicy, regular, or sweet? I have all three options available here! What I love about General Tso Sauce is the intense tangy flavor it impart onto meats, seafood, and tofu.
- Hoisin Sauce. Nutty is the first adjective that comes to mind when I think of this particular hoisin sauce. Unlike the one you get in most Chinese restaurants or at the store, it has a lot more depth of flavor.
- Ssamjang. One of Korea’s most famous sauces, ssamjang is smoky, salty, pungent, nutty, and last but not least – addictive! With its multi-layered taste you will be surprised to know that it only requires 7 ingredients and 5 minutes of your time to make!
- Gochujang. If you like super smoky foods, you will love gochujang. Made with gochugaru (Korean red pepper flakes), red miso paste, and a handful of easy to find ingredients, gochujang is more like a paste than a sauce.
- Japanese Kewpie Style Mayo. Eggy, creamy, sweet, fruity, and savory. Much more complex in flavor than American mayonnaise, Japanese Kewpie mayo can be used as a salad dressing, dipping sauce, sandwich spread, and pairs beautifully with cold pasta too.
- Teriyaki Sauce. This classic teppanyaki sauce can be made at home with just 4 ingredients! It can be used as a finishing sauce for meats, seafood, or tofu, or as a glaze for vegetables.
- Nuoc Cham (Vietnamese Dipping Sauce) This is one of those Asian sauces I have trouble with here in America. It’s always too sweet for my taste and I don’t know why Vietnamese restaurants make it that way, because it tastes totally different than that in Asia.
THE 9 BEST PLUM SAUCE SUBSTITUTES FOR YOUR RECIPES
From myconsciouseating.com
- Homemade plum sauce. If you don’t happen to have any plum sauce in your fridge, you can simply make some! Perhaps you’re skeptical about cooking your own sauce, but with the right recipe, it can turn out just as good as the “real deal”.
- Duck Sauce. Duck sauce is often mistaken for plum sauce, as they can have similar appearance, texture, and uses. However, this sauce usually has a bright orange color, it is translucent, and has a jelly-like structure.
- Sweet and sour sauce. If you’re looking for that sweet and sour flavor, the best substitute for plum sauce could be the sweet and sour sauce. This sauce is easy to find, so if you’re having trouble finding a good plum sauce brand, it is definitely your safest bet.
- Hoisin sauce. Hoisin sauce is yet another convenient plum sauce alternative since it has that sticky, thicker texture everyone loves in plum sauce. Since it is widely available both in grocery stores and Asian food stores, you shouldn’t have trouble finding it.
- Soy sauce. Soy sauce is not only a great plum sauce alternative, but possibly the most widely used Asian sauce there is. It has a unique salty flavor, yet sweet flavor, usually a liquid texture, and deep brown color.
- Char siu sauce. Char siu sauce, also known as the Chinese barbecue sauce, is mostly paired with pork. It is most commonly used as a marinade or a glaze for roasted pork fork skewers.
- Teriyaki sauce. Teriyaki is a popular Japanese sauce, and it is best known as a meat marinade. When it comes to the structure, this plum sauce substitute is more on the basic side, since it only contains 4 ingredients: soy sauce, sake, ginger, and sugar.
- Ponzu Sauce. This is yet another traditional Japanese sauce, and a worthy plum sauce substitute if you need a dipping sauce. What makes ponzu stand out is its refreshing citrus aroma, savory bonito flakes, and sweet mirin.
- Caramelised Onion Chutney. Caramelized onion chutney is a unique combination of sweet and savory flavors that can compliment pretty much any dish. You can use it as a condiment with meat and grilled vegetables, a spread on your toast or bruschetta, or a chunky dipping sauce.
