- Cook turkey tenderloin as specified on the package. Always cook to well-done 165°F as measured by a meat thermometer. While the tenderloin is cooking, make the jerk style seasoning mix and pineapple salsa.
- To make jerk seasoning, in bowl combine brown sugar, allspice, red pepper flakes, salt and pepper, cinnamon, cloves and cumin.
- To make salsa, in bowl combine pineapple, onion, red bell pepper, jalapeño pepper, cilantro and lemon juice.
- Shred turkey tenderloin and add to jerk seasoning mix. Stir to combine. Fill tortilla with turkey mixture and top with pineapple salsa.

TURKEY TACOS PICADILLO
Picadillo, a Latin American classic, is typically made with beef, but juicy turkey stands in well here. Scented with cumin and chili powder, the filling for these crunchy tacos is sweet and savory.

- Put the oil, onions, garlic, jalapeno, and spices in a medium skillet, season with salt and cook over medium to medium-low heat, stirring occasionally until tender, about 10 minutes. Increase the heat to medium-high, add the tomatoes and boil to thicken, about 2 minutes. Stir in the turkey and chicken broth, adjust the heat so the mixture simmers and cook until the turkey is cooked through and the mixture thickens but is not dry, about 12 minutes. Stir in cilantro and season with salt and pepper, to taste. Transfer to a serving bowl and cover.
- To make the taco shells: Pour enough frying oil into a small skillet so it's about 3/4 of an inch deep; heat over medium to medium-high. Holding 1 edge of a tortilla with tongs, lay the other half in the oil, keeping it flat with a spatula. Cook until crisp, about 30 seconds to 1 minute. Flip the tortilla over and repeat with the other half, holding the first side of the tortilla at an angle to make an open shell, cook for about 1 minute more. Transfer to a paper towel-lined plate to drain.
- Put the fixings and meat in individual bowls and the taco shells on a platter. Serve, encouraging your diners to build their own tacos, with meat in the shell and the fixings on top.
GROUND TURKEY AND SALSA TACOS
So simple it shouldn't really be a recipe, but for years I never thought of using salsa instead of those salty taco mix packets. Much tastier and more "real food" flavor and yet just as easy! This salsa idea stolen from my sister (Lowfat Linda), or possibly her husband, who didn't think to post it first. :-)

- Fry ground turkey over medium heat with salsa, chopping up well with spatula.
- Chop tomatoes, lettuce well.
- Warm taco shells and fill with meat, cheese, tomatoes, lettuce and top with sour cream or avocado.
- Or warm tortillas in frying pan (or microwave) with shredded cheese and add ingredients and roll up.

- Preheat the oven to 375°; place 8 large taco shells on a rimmed baking sheet and bake 6-7 minutes or until crisp but not brown; remove from oven.
- Meanwhile, heat a large nonstick skillet over med-high heat.
- Add in the olive oil; then add in the turkey and break up with a wooden spoon.
- Season the meat with salt, pepper, and poultry seasoning.
- Add in the garlic, onions, and raisins; then season with the chili powder and cumin.
- Cook 5 minutes, then stir in the beer and deglaze the pan.
- Stir in the tomato sauce and simmer on low heat for 5 minutes.
- Fill the shells with a couple spoonfuls each of meat sauce; top with the cheese and return to the oven to melt, 3 minutes.
- Top with the lettuce, tomatoes, olives, and salsa verde; serve.

- Make the teriyaki sauce by whisking cornstarch with water in a medium bowl. Add remaining sauce ingredients and bring mixture to a boil. Reduce heat and simmer for 7 to 10 minutes. Let cool before you use it for marinating .
- Set aside 1 cup of the sauce. Use remaining sauce and pour over the chicken tenderloins in a medium bowl. Cover and let marinate 6 hours.
- Preheat a large skillet over medium low heat. lightly oil skillet and saute chicken in a pan for 8-10 minutes or till cooks through and browned. slice each chicken into 3 or 4 pieces and put in a medium bowl.Microwave the reserved cup of teriyaki sauce for 30-60 seconds and pour sauce over sliced chicken in the bowl.
- Preheat another skillet over medium heat. Toss a tortilla into the pan for a minute, then flip over and add 2 to 3 tablespoons of shredded cheese across the center. Let tortilla sit in pan until cheese starts melting. Remove tortilla and spoon equivalent of 1 chicken tenderloin into the tortilla. Spoon about 1 teaspoon of teriyaki sauce ( from reserved sauce poured over chicken) over the chicken in each taco.
- Arrange the rest of the taco with shredded lettuce, 1 or 2 tablespoons of pineapple and tomato, and a few green onion pieces. Repeat the process for the remaining tacos.
