ANNIE'S FRUIT SALSA AND CINNAMON CHIPS
Easy to make, tasty fruit salsa and cinnamon tortilla chips. Great as an appetizer or a snack. Great for anytime!

Steps:
- In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves. Cover and chill in the refrigerator at least 15 minutes.
- Preheat oven to 350 degrees F (175 degrees C).
- Coat one side of each flour tortilla with butter flavored cooking spray. Cut into wedges and arrange in a single layer on a large baking sheet. Sprinkle wedges with desired amount of cinnamon sugar. Spray again with cooking spray.
- Bake in the preheated oven 8 to 10 minutes. Repeat with any remaining tortilla wedges. Allow to cool approximately 15 minutes. Serve with chilled fruit mixture.

Steps:
- In a bowl, mix the pineapple and the reserved juice from 1 can, mangos, peppers, cilantro, lime juice and pulp, orange juice, rum, and garlic. Let stand for one hour before adding chicken.
- Strain the juice from the salsa to use for the marinade. Set aside enough salsa without the juice to use for topping the chicken. Marinate the chicken breast halves in the bowl with the remaining salsa and juice mixture for 2 to 6 hours.
- Preheat oven to 325 degrees F (165 degrees C).
- Discard salsa used for marinating, and bake chicken for 30 minutes in the preheated oven, or until chicken juices run clear. Top with reserved salsa to serve.

- Heat oven to 350°F.
- Mix 1 Tbsp. sugar with 1/2 tsp. cinnamon until blended. Cut each tortilla into 8 wedges. Spray with cooking spray, then sprinkle with cinnamon sugar.
- Place tortilla wedges, cinnamon sugar sides up, in single layer on baking sheet. Bake 8 to 10 min. or until lightly browned. Transfer to wire racks; cool completely.
- Combine fruit, remaining sugar and cinnamon in medium serving bowl. Add lemonade; toss to coat. Serve with tortilla chips.

- Wash and cut all of the fresh fruit. This can be done by hand with a sharp knife, using a food chopper, or by pulsing in a food processor a few times. They should be fairly finely chopped and evenly sized so you get a little of each fruit with each scoop. Squeeze the lemon or lime juice over the apples right after cutting them to keep them from turning brown.
- Add all over the chopped fruit to a large bowl along with the fruit preserves and toss well to coat. Let sit 15 minutes, then toss again and taste. You can add 1-2 tablespoons of sugar if needed. Refrigerate until ready to serve.
- Brush the tortillas with the melted butter or spray with baking spray. Stack five tortillas at a time and use a sharp knife or pizza cutter to slice into triangles.
