DUBLIN CODDLE

- Preheat oven to 300ºF.
- Place a large Dutch Oven on the stove, over medium-high heat, and add the diced bacon. Cook until golden brown, about 5 minutes. Using a slotted spoon, remove into a paper towel-lined plate, to soak up the excess grease. Reserve.
- Add the sausages and brown on all sides, about 2 minutes per side. Remove and reserve.
- Discard most of the fat rendered in the pot, leaving just a couple tablespoons. Add the onions and sauté until beginning to brown, 3-4 minutes. You can add a little vegetable oil, if needed. Then, add the garlic and sauté until fragrant, 1-2 minutes.
- Optional: Pour the beer to deglaze the pot, cooking and scraping all the browned bits from the bottom, until almost all evaporated. Remove the onions and reserve.
- Remove the Dutch Oven from the heat.
- Add half the potatoes to the bottom of the pot. Season with black pepper and sprinkle some chopped parsley. Then, add half the onions and top with half the cooked bacon. Repeat with another potato layer seasoned with pepper and parsley, followed by onions and bacon. Finish by layering the sausages, whole or cut into chunks.
- Pour the chicken broth. Bring the pot back to the stove and bring to a boil, over medium-high heat.
- Cover and transfer the pot to the oven. Cook for at least 2 hours (and up to 4 hours), checking every now and then to see if more liquid needs to be added. There should be at least 1 inch of liquid at the bottom of the pot at all times, to prevent burning.
- Taste and season with salt and pepper, if needed.
- Garnish with more parsley and serve!

- Heat olive oil in heavy large pot over medium-high heat. Add beef and sauté until brown on all sides, about 5 minutes. Add garlic and sauté 1 minute. Add beef stock, Guinness, red wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir to combine. Bring mixture to boil. Reduce heat to medium-low, then cover and simmer 1 hour, stirring occasionally.
- While the meat and stock is simmering, melt butter in another large pot over medium heat. Add potatoes, onion and carrots. Sauté vegetables until golden, about 20 minutes. Set aside until the beef stew in step one has simmered for one hour.
- Add vegetables to beef stew. Simmer uncovered until vegetables and beef are very tender, about 40 minutes. Discard bay leaves. Tilt pan and spoon off fat. Transfer stew to serving bowl. Sprinkle with parsley and serve. (Can be prepared up to 2 days ahead. Salt and pepper to taste. Cool slightly. Refrigerate uncovered until cold, then cover and refrigerate. Bring to simmer before serving.).

- Quarter the potatoes, and blanch until just tender.
- Brown sausage and bacon.
- Sauté garlic, onions, potatoes, and mushrooms in butter.
- Place the sausages, bacon, and vegetable mixture in large pot.
- Add the broth and Guinness stout and bring to a simmer.
- Cover and simmer at least 1 hour.
- Finish with thyme, salt, pepper, and butter.
- Serve as a stew with Irish soda bread or other hearty bread.

IRISH STEW
The epitome of comfort food, traditional Irish stew has only a few ingredients: mutton, onions and potatoes. In southern Ireland carrots are added, and some cooks venture so far as to add turnips. - Pat lamb dry and season well with salt and pepper. Put oil in a heavy-bottomed soup pot over medium-high heat. Brown meat on all sides, working in batches.
- Set meat aside and add onions and carrots to pot. Season with salt and pepper. Cook vegetables, stirring, until lightly browned, about 5 minutes. Heat oven to 350 degrees.
- Return meat to pot, add broth and bring to a simmer. Put in thyme sprig and arrange potatoes on top (it's fine if potatoes are not completely submerged). Season potatoes, cover pot and transfer to oven.
- Bake for about 1 hour, until lamb is quite tender when probed with a skewer or paring knife. Remove fat from top of broth. Ladle stew into shallow bowls and serve.

- Add the bacon to a large Dutch oven (or any heavy, oven-safe pot with a tight lid) and turn the heat to medium. Cook, stirring often, until the bacon renders it fat and turns crisp, about 5 minutes. Use a slotted spoon to remove the bacon to drain on paper towels. Remove most of the fat, leaving about 2 tablespoons in the pot.
- Add the sausages in a single layer, being careful not to crowd the pot. Work in batches, if necessary. Cook, turning occasionally, until golden brown all over (sausage won’t be fully cooked at this stage), about 7 minutes. Remove sausages to a plate and set aside. Repeat with remaining sausages, if necessary.
- Add the onions, along with a pinch of kosher salt (the bacon and sausages are both salty) and black pepper, and cook, stirring occasionally, until onions turn soft and slightly golden, about 7 to 10 minutes. If the bottom of the pot threatens to burn, add a tablespoon or so of water and scrape the bottom of the pot with the spoon.
