MY GRANDMA'S BRAISED CABBAGE

Number Of Ingredients 9

2 tablespoons butter
1 yellow onion, sliced with the grain
1/2 head large or 1 small red cabbage, quartered, thinly sliced (core removed)
1 tart apple, peeled and grated
1 tablespoon brown sugar
1/4 cup red wine
1/4 cup apple cider vinegar, plus a splash
1/4 cup water
Salt and freshly ground pepper

Steps:

  • In a medium pot or Dutch oven, cook the onions in the butter over medium heat until softened, about 5 minutes. Add the cabbage and cook, stirring, for a few minutes. Add the apple, brown sugar, wine, vinegar, and water, and bring up to a simmer, stirring. Cover and braise for 30 minutes, stirring once and checking on the texture. Cook a little less for a firmer cabbage; a little more for softer cabbage.
  • Add a small splash of cider vinegar just before serving.

FRIED IRISH CABBAGE WITH BACON



Fried Irish Cabbage with Bacon image

1 (12 ounce) package bacon
¼ cup bacon drippings
1 small head cabbage, cored and finely chopped
ground black pepper to taste

Steps:

  • Cook bacon in a deep skillet over medium heat until crisp, 5 to 7 minutes. Remove bacon from skillet and drain on a paper towel-lined plate. Reserve 1/4 cup drippings in skillet.
  • Cook and stir cabbage in hot bacon drippings over medium heat until cabbage wilts, 5 to 7 minutes.
  • Crumble bacon over cabbage. Stir and simmer until bacon is warmed, 2 to 3 minutes. Season with black pepper.

This comes from a magazine article written by a local chef in March 2001 for St. Patrick's Day. He had spent a month in Ireland years ago learning to cook Irish. All of his recipes are wonderful.

2 tablespoons unsalted butter
1 medium yellow onion
1/2 head white cabbage, cored and sliced
1 tablespoon sugar
2 teaspoons salt
2 teaspoons pepper
2 tablespoons whole grain mustard
1 cup water
1/4 cup heavy cream

Steps:

  • In a large, heavy pot, melt the unsalted butter and saute the onions, salt and pepper until the onions are clear.
  • Add the sugar and cabbage and stir 4 to 5 minutes.
  • Add the water and mustard, cover and simmer on low heat for 15 to 20 minutes, stirring occasionally.
  • Then add the cream and cook, uncovered, for about 5 minutes more.

I hesitate to post this, because it is just so simple.....but just in case no one has done this, here it is! If pressed for time you can use cole slaw mix, but it isn't as fresh as cutting your own, and with such a simple recipe freshness is best.

4 green onions, chopped
3 tablespoons butter, melted
9 cups cabbage, shredded (about 1 1/2 lbs)
3 carrots, scraped and grated
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Saute the green onions in melted butter in a large skillet until it is tender.
  • Add the cabbage and carrot; saute 4 minutes or until crisp-tender. Stir in the salt and pepper.

1 onion, sliced
50g butter
200g smoked lardon, or diced bacon
1 Savoy cabbage
150ml boiling water

Steps:

  • Fry the onion in butter for 2 mins, then add the bacon and cook for a few mins more until golden.
  • Stir in the cabbage and boiling water. Cook for 2 mins over a medium heat until wilted, then cover, turn the heat to low and cook for another 5 mins.
  • Uncover and stir well; the cabbage should have a little colour. If not, increase the heat and cook for a few moments more. Season to taste.

  • Clean the cabbage - remove outer leaves, cut into quarters, remove stalk and any tough ribs. Cut into rough shreds. If using bacon, slice into thin strips and cook until crispy in a pan over medium heat, then set aside to drain over a paper towel).
  • In a deep pot for which you have a lid or Dutch oven over medium heat melt the butter and sauté the minced garlic until just fragrant. Add the cabbage and toss well so it gets coated with butter. Add the water, season with salt and pepper, stir and cover with lid. Cook for 3 minutes.
  • Remove the lid, stir cabbage, replace lid and cook for another 2-3 minutes. Remove from the heat, stir in a knob of butter and serve. If you prepared crispy bacon bits sprinkle them on top as garnish or fold them into the buttered cabbage before you serve it.

  • Remove the outer leaf off the cabbage head and remove the hard stalk at the very end. Place 3 slices of bacon folded over in the center of the cabbage leaf, together with 1 teaspoon of peppercorns.
  • Bend the sides of the cabbage leaf inwards over the bacon and peppercorns, then roll up the cabbage leaf. Secure it with some cotton thread, that will withstand boiling water.
  • Cut the cabbage head into two halves. Remove the inner hard core of the cabbage by slicing on either side of it. Wiggle it and it should pop right out.
  • Peel the leaves off the cabbage head, layer by layer. Pop them in a colander and rinse them under cold water.
