1/2 cup packed brown sugar
1 teaspoon pepper
3/4 teaspoon salt
6 pounds pork baby back ribs
1/4 cup honey
1 bottle (12 ounces) dark beer or beef broth
1/4 cup cider vinegar
1 bottle (18 ounces) barbecue sauce

Steps:

  • Combine the brown sugar, pepper and salt; rub over ribs. Place ribs bone side down on a rack in a large shallow roasting pan. Drizzle with honey. Combine beer and vinegar; pour around ribs. Spoon some of the beer mixture over ribs., Cover tightly with foil and bake at 325° for 1 hour. Reduce heat to 250°; bake 2 hours longer or until tender., Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Drain ribs. Grill, covered, over medium heat for 10-15 minutes or until browned, turning and basting occasionally with barbecue sauce. Serve with remaining barbecue sauce.

2 slabs baby back ribs,( about 5 lbs.)
2 Tbsp granulated garlic
2 Tbsp smoked paprika
1 1/2 Tbsp smoked alderwood salt
1 Tbsp coarse black pepper
3 Tbsp brown sugar, firmly packed
1/2 tsp red pepper flakes
2 Tbsp dried chive or parsley flakes
1/2 c hickory smoked all natural seasoning
2 can(s) guiness irish stout beer (14.9 oz ea.)

Steps:

  • 1. Remove the silver skin from the back side of the ribs. By using a sharp knife, place the tip of the knife near the outer edge of the bone, and lift the membrane carefully and pull to remove. This allows the spices to penetrate the ribs, and the ribs to get very tender during the cooking process.
  • 2. Combine all the spices in a small bowl, then pour into a food processor and blend together, then season the ribs liberally on both sides. Allow to marinate at least an hour or two, but preferably over night., so that the spices can penetrate the ribs. If refrigerated over night, allow ribs to come to room temperature for at least an hour or so before placing in the roaster.
  • 3. Brush both sides of ribs liberally with the liquid smoke. Using about 1/4 cup per each slab of rib
  • 4. Follow manufacture's direction to preheat roaster. I preheated @ 325 degrees F.While roaster is preheating. Add in the rack Spray rack with non stick cooking spray. Then pour in the 2 cans of beer. This will create moisture while the ribs are cooking and prevent them from becoming dry during the cooking process. The beer should always be BELOW the bottom of the rack.
  • 5. Place each slab of ribs on the rack with the top side facing up. Add the lid and allow to cook for about 4 hours or until ribs are tender. Check periodically to make sure there is still liquid in the bottom of the roaster. May add additional Beer or water or other liquid of choice if needed.
  • 6. Once fully cooked brush ribs on both sides with your favorite Barbeque Sauce. I used Sweet Baby Rays. Allow to continue cooking for 10 to 15 additional minutes if desired, before serving.

Beer isn't just for drinking. Here, it's drizzled on top of the ribs to help the meat break down as it cooks low and slow in an oven. It's also the star ingredient in the barbecue sauce that glazes these super tender ribs that are finished off on a grill for a slightly smoky flavor.

2 tablespoons light brown sugar
2 tablespoons smoked paprika
1 tablespoon celery salt
1 tablespoon garlic powder
1 tablespoon onion powder
1/4 teaspoon ground allspice
Kosher salt and freshly ground black pepper
Two 1 1/2-pound racks baby back ribs
One 12-ounce bottle bock-style or dark beer
1 small shallot, minced
1/2 cup ketchup
1/4 cup molasses
2 tablespoons whole-grain mustard
1 tablespoon chipotle in adobo sauce plus 1 tablespoon chopped chipotle
1 tablespoon sherry vinegar
Vegetable oil, for the grill grates

Steps:

  • Combine the light brown sugar, smoked paprika, celery salt, garlic powder, onion powder, allspice, 2 tablespoons salt and a generous amount of pepper in a small bowl. Rub the mixture on both sides of the rib racks.
  • Wrap each rib rack in 3 pieces of aluminum foil and refrigerate for 6 hours and up to overnight.
  • Preheat the oven to 300 degrees F. Place the ribs side-by-side on a baking sheet. Unwrap the foil slightly, pour 2 tablespoons beer over each rib rack and then seal the foil tightly. Bake until the ribs are tender, and the meat can easily be pierced and pulled away with a fork, about 2 hours 30 minutes. Let cool, uncovered, until warm, about 20 minutes. Alternatively, cover and refrigerate for up to 1 day.
  • Put the shallots and remaining beer in a small saucepan and bring to a boil over high heat. Boil until the beer reduces to 1/4 cup, about 10 minutes. Whisk in the ketchup, molasses, whole-grain mustard, chipotle in adobo sauce, chopped chipotle and sherry vinegar. Reduce the heat to medium-low and let simmer, stirring occasionally, until the sauce thickens slightly and reduces to about 1 1/4 cups, 8 to 10 minutes.
  • Prepare a grill or large grill pan for medium-high heat. Clean and oil the grill grates.
  • Brush the top of each rack of ribs with 1/4 cup of the barbecue sauce. Working in batches as needed, grill, sauce-side down, until browned and slightly charred, about 4 minutes. Cut the ribs between the bones, slather with the remaining 1 cup of sauce and serve.

4 lbs short ribs*, bone-in, individually English cut
1 1/2 tbsp coarse salt
2 tsp ground black pepper
2 tbsp cooking oil
1 yellow onion
2 carrots
2 celery stalks
3-4 cloves garlic
2 tbsp tomato paste, (optional)
1 tbsp flour
18 oz dark ale or lager, (malt forward, with roasty notes such as porter, stout, brown ale, dunkel lager)
2 cups beef stock
2 tbsp dark brown sugar
1 sprig sage
4 sprigs thyme, (more for garnish)
1 tbsp Dijon mustard, (optional, if making gravy)
slurry (1 tbsp corn starch mixed in 2 tbsp cold water), (optional, if making gravy)

Steps:

  • Preheat your oven to 275 F.
  • Clean and rough chop all the veggies and set aside. Pat dry the ribs and liberally season with salt and pepper on all sides.
  • Over medium-high heat the cooking oil in a braiser/Dutch oven or large heavy skillet and sear the short ribs for about 1-2 mins on each side. Work in batches so that you do not overcrowd the pan. When nicely browned, remove the short ribs and set aside.
  • Lower the heat to medium, add the veggies, stir them and let them soften for a few minutes. Add the flour and tomato paste (if using) stir and cook for about a minute.
  • Deglaze by adding the beer and be sure to scrape all brown bits from the bottom of the pan. Add the beef stock, the bay leaves, sage, thyme and stir in the brown sugar. Add the short ribs, distribute evenly and increase heat to bring to boil.
  • Once boiling cover and place in the oven for about 3 hours. The ribs should be very tender before you take them out of the oven.
  • When the short ribs are done, remove them from the braising liquid (carefully, the meat will be very tender) and let them rest for a few minutes. You can then remove the tendons and bones before you serve them.**
  • Use a large, heavy skillet and complete steps #2 thru #5 from the Braiser/Dutch oven method above.
  • Very carefully transfer the braising mixture and the ribs to your slow cooker and cook on low until they reach your desired tenderness.
  • If you want to make a gravy from the braising liquid first scoop out the vegetables and discard them. Using a large spoon skim off and remove as much of the fat floating on top of the liquid. Then strain the braising liquid using a sieve.
  • Heat a pan***over medium heat, add the strained braising liquid and the Dijon mustard and bring to simmer, mix to incorporate, add slurry and stir to thicken.

These Braised Baby Back Ribs are fall-off-the-bone tender and the Zesty BBQ Sauce is amazingly delicious! A bit sharp, a bit sweet, a bit spicy - these ribs and sauce will make your taste buds sing!

3/4 cup ketchup (or tomato sauce)
3/4 cup water
2 tablespoons white wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons light brown sugar (not packed)
1 teaspoon kosher salt
1 teaspoon paprika (regular or smoked)
1 teaspoon chili powder
1/2 teaspoon ground black pepper
1/4 teaspoon cayenne pepper, or more to taste
1 1/2 large yellow onions, sliced, and slices cut into quarters
2 3/4 to 3 pounds pork baby back (or pork loin back) ribs
1 tablespoon extra virgin olive oil (not needed if using a good nonstick pan)
Kosher salt, to taste
Fresh ground pepper, to taste

Steps:

  • In a medium mixing bowl, stir together the ketchup, water, vinegar, Worcestershire sauce, sugar, salt, paprika, chili powder, black pepper and cayenne pepper. Stir in onions. Set aside.
  • Remove membrane from bone side of ribs - see easy to follow directions from Weber. Cut into individual ribs. Pat dry. Season with salt and pepper.
  • In a large heavy skillet or Dutch oven, heat olive oil over high heat. Add half of ribs and brown on all sides. Remove and set aside. Repeat with remaining ribs. Drain any oil or fat off from the pan. Add reserved ribs back; spoon BBQ sauce over all. Cover tightly and cook at a low simmer for 1 1/2 to 2 hours, or until meat is very tender. Stir occasionally.
  • Preheat oven to 225 degrees.
  • Remove ribs from pan and place in a covered baking dish in the oven to stay warm.
  • Cool sauce to room temperature. Skim any grease off the surface of the sauce. Purée in a blender until smooth. Place back in pan and bring to a medium boil. Cook, stirring often, until thickened, around 15 minutes. Taste and adjust seasonings as needed (I like to add a touch more vinegar and salt).
  • To serve, baste ribs with some of the sauce, passing the rest on the side (I like to put it in individual dipping bowls for each person).

1-1/2 teaspoons butter
1-1/2 teaspoons canola oil
1 large onion, thinly sliced
1 cup water

1 teaspoon whole allspice

  • In a Dutch oven, brown ribs in butter and oil for about 3 minutes on each side; drain. Remove and keep warm. In the same pan, cook and stir the onion for 2 minutes. Add water, salt, sugar and pepper, stirring to loosen browned bits from pan., Place bay leaves and allspice on a double thickness of cheesecloth; bring up corners of cloth and tie with kitchen string to form a bag. Place in pan. Return ribs to pan. Bring to a boil. Reduce heat; cover and simmer for 1-1/2 to 1-3/4 hours or until meat is tender., Remove ribs and keep warm. Discard spice bag. Skim fat from pan drippings. Combine flour and cold water until smooth; gradually stir into drippings. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve with ribs.

1 rack baby back rib rack
sweet barbecue sauce
olive oil
vegetable oil
hickory chips
water, to use at the grill
1/2 cup brown sugar
1 teaspoon garlic powder
1 teaspoon garlic salt
1 teaspoon black pepper
1 teaspoon paprika
1 teaspoon onion powder

Steps:

  • Combine rub* ingredients in a plastic bag, shake to mix.
  • Rub olive oil on ribs then generously cover both sides of ribs with rub, there's enough to do 2 racks.
  • Wrap tightly in plastic wrap and refrigerate for a minimum of 4 hrs or as long as 24 hours.
  • For covered charcoal grill: Start coals 30-45 minutes prior to cooking, soak a couple hand fulls of hickory chips in water.
  • Meanwhile, place each rack of ribs, curved side down on two layers of heavy duty aluminum foil, which have been wiped with a thin coat of vegetable oil use a piece of foil large enough to seal over the top.
  • Form a pan with the foil.
  • After coals turn white push them all to one side, drain wood chips, place soaked wood chips on hot coals, replace grill top.
  • Soak some more chips.
  • Place ribs and foil on cool side of grill, carefully pour water to the foil 'pans' to no more than 1/2" up the sides of the ribs.
  • Replace lid on grill.
  • Every 30 minutes add a few coals and some of the soaked chips and reverse the position of the ribs (rotate and reverse).
  • Turn over about 1/2 way through the cooking process so they finish curved side up.
  • Depending on your grill it could take as long as 4 hrs or as little as 1 hr to cook.
  • To finish ribs, remove from heat, drain liquid from foil pan (reserve for sauce if desired) carefully cut racks into serving sized chunks (3-4 ribs), brush with sauce and return to hot side of grill for a few minutes to brown a bit.
  • You can brown them under the broiler right in the foil pans if coals are not hot enough.
  • This procedure can be replicated on a two (or more) zoned gas grill.
  • Put the chips in another foil 'pan' and place them over the heat, when they start to smoke put the ribs over the cool side and cover.
  • Replenish chips as necessary, rotate and reverse rib pans about every 30 minutes.
  • *This is a sweet rub and may be a bit too sweet for some tastes, if so decrease sugar.

12 ounces Guinness stout
1 large onion (sliced)
1/4 soy sauce
1/4 cup packed brown sugar
2 tablespoons sesame oil
1 tablespoons minced garlic

Steps:

  • Place ribs in a large pan or resealable plastic bag. Combine marinade ingredients. Pour marinade over the ribs. Place in the refrigerator and marinate for at least eight hours.
  • Preheat oven to 350 degrees.
  • Wrap ribs in a double layer of foil. Place ribs in the oven and bake about 1 hr and 30 mins.

STOUT BEER BRAISED SHORT RIBS

4 pounds bone-in beef short ribs, cut crosswise into 2-inch pieces
Salt and freshly ground pepper
2 tablespoons vegetable oil
1 large onion, chopped
4 garlic cloves, minced
1 leek, white and light green parts only, chopped
2 medium carrots, peeled and chopped
2 celery stalks, chopped
1 tablespoon all purpose flour
2 cups stout beer
3 cups beef broth
2 tablespoons brown sugar
5 sprigs thyme
2 bay leaves
1 tablespoon Dijon mustard
Chopped parsley to taste

Steps:

  • Preheat oven to 300 degrees.
  • Pat the short ribs dry with a paper towel and season generously with salt and pepper. Heat the oil in a large Dutch oven, over medium high heat. Brown the short ribs on all sides, about 2-3 minutes per side, working in batches if necessary. Remove browned short ribs to a plate and discard most of the fat, leaving about 2 tablespoons in the pot.
  • Lower the heat to medium and add the onions, garlic, carrots, celery and leek. Cook for about 5 minutes, stirring occasionally, until softened and fragrant. Add the flour and cook, stirring constantly, until well combined.
  • Add the beer and beef broth and, using a wooden spoon, scrape all the brown bits from the bottom of the pot. Then, stir in the brown sugar, bay leaves and thyme sprigs. Add the short ribs and bring to a boil. Once boiling, cover and transfer to the oven.
  • Cook until the short ribs are very tender, about 3 hours.
  • Option #1 - Serve same day. Remove pot from the oven and carefully scoop out the ribs from the pot. Remove the bones and tendons, being careful not to shred the meat. Reserve. Strain the liquid through a fine-meshed sieve into a clean saucepan. Stir in the mustard and cook the sauce until it's reduced to a consistency thick enough to coat the back of a spoon, removing the excess fat as it rises to the surface. Season sauce to taste with salt and pepper. If the short ribs have cooled, you can add them to the sauce to reheat them.
  • Option #2 - Make one day ahead. Remove pot from the oven and let it cool to room temperature. Carefully remove ribs from the liquid and remove bones and tendons, being careful not to shred the meat. Strain the liquid through a fine-meshed sieve, getting rid of the veggies. Return the short ribs to the sauce and refrigerate overnight. The next day, the fat will have solidified on the surface. Remove it and discard. Remove the ribs and heat the sauce. Then, run the sauce through a fine-meshed sieve again, into a clean saucepan. Stir in the mustard and cook the sauce until it's reduced to a thick consistency. Season sauce to taste with salt and pepper. Add the short ribs to the pan to reheat.
  • Serve, garnished with chopped parsley or thyme sprigs.

45 pounds baby back ribs, diamond scored on bone side
2 quarts Rib Spice, recipe follows
Salt and pepper
3 quarts porter or other dark beer
3 quarts vegetable stock
5 white onions, julienned
Molasses Barbeque Sauce, recipe follows
2 1/2 cups brown sugar
1 cup chili powder
1/2 cup granulated onion
1/2 cup salt and pepper, mixed
1/2 cup salt and pepper, mixed
1/4 cup granulated garlic
1/4 cup dried oregano
2 cups ketchup, such as Heinz
1/2 cup molasses
1/4 cup cider vinegar
4 1/2 tablespoons steak sauce, such as A1
1/4 pound brown sugar
1/2 tablespoon chili powder
1/4 teaspoon granulated garlic
1/4 teaspoon granulated onion

Steps:

  • Rub the ribs liberally with the Rib Spice and let them sit, covered, in the refrigerator overnight.
  • Prepare a charcoal grill.
  • Season the ribs with salt and pepper. When the coals are very hot, grill the ribs for 5 to 7 minutes per side.
  • Preheat the oven to 300 degrees F.
  • Arrange the ribs in roasting pans. Pour the beer and vegetable stock over the ribs and spread the onions over the top.
  • Cover each roasting pan with plastic wrap and heavy-duty aluminum foil. There should be no holes in the plastic wrap or the foil. Braise the ribs until a bone comes out with minimal resistance when pulled, about 2 hours. Do not over-braise.
  • Remove the plastic wrap and foil and let the ribs cool in their braising liquid.
  • To serve, prepare a charcoal grill. Warm the ribs over medium heat and baste with the Molasses Barbeque Sauce. Serve hot.
  • Combine the brown sugar, chili powder, granulated onion, salt and pepper, granulated garlic and dried oregano in a large bowl and whisk until well combined.
  • Combine the ketchup, molasses, vinegar and steak sauce in a medium saucepan over low heat. Once the mixture comes to a simmer add the sugar, chili powder, granulated garlic and granulated onion. Stir the sauce often to prevent the sugars from scorching and do not allow the sauce to boil. Simmer for 30 minutes. Yield: enough for 3 racks of ribs.

BABY BACK RIBS BRAISED LOW AND SLOW

2 full racks of baby back ribs
1/4 cup white distilled vinegar
1/3 cup prepared yellow mustard
1/4 cup Meat Spice Blend (link below)
1 tablespoon kosher salt, optional
2 packets Goya sazón seasoning
1 tablespoon Jamaican curry powder
1 cup light brown sugar
1 teaspoon crushed red pepper flakes, optional
1 12 oz bottle of lager (beer)

Steps:

  • Line a sheet pan with aluminum foil to use as a holding vessel for the ribs.
  • In a mixing bowl, combine the mustard, meat spice blend, salt, sazón, curry powder, sugar, and red pepper flakes (if using).
  • Remove the ribs from the packaging and "wash" them with white distilled vinegar. Don't dry the ribs as the moisture will help the spice rub adhere to the ribs. Arrange the ribs on the prepared sheet pan.
  • Slather half of the spice rub on to one side of the racks of ribs. Flip them over and coat the other side with the remaining spice rub.
  • Stack the seasoned rib racks on top of one another and wrap them tightly in plastic film, then wrap them again in foil. This will contain any leaks that may occur while the ribs are marinating. Return the racks to the sheet pan and marinate the ribs in the refrigerator for 24 hours, or overnight.
  • Preheat your oven to 250°F. Place an oven rack in the lower part of the oven.
  • Unwrap the ribs and arrange them, in a single layer, in a large roasting pan. Pour the ale or lager over the ribs and cover the pan, tightly, with aluminum foil.
  • Cook the ribs for 3 hours, or until their internal temperature reaches 190°F.
  • A half-hour before the ribs are due to come out of the oven, preheat a charcoal or gas grill to medium-high heat.
  • Transfer the ribs to the pre-heated grill and sear them for 5-6 minutes on each side. Remove them from the grill and allow them to rest for 15 minutes before cutting and enjoying.

I love my slow cooker and I love beef ribs. So when I decided to cook up a bunch of these "fall off the bone ribs" with Guinness my favorite Irish beer I knew I'd have a winner! And don't worry if you can't have alcohol, just replace the beer with Root Beer or Dr. Pepper.

½ onion (coarsely chopped)
2 cloves garlic (diced)
1 tablespoon olive oil
1 tablespoon sea salt
½ teaspoon black pepper
5-6 pounds beef ribs
12 ounces Guinness beer (or your favorite beer, root beer, dr. pepper, or cola)
½ cup red wine vinegar
1 cup beef stock
1½ cup barbecue sauce

Steps:

  • Add chopped onion and garlic with olive oil in your slow cooker on the saute setting, allow to cook for a few minutes.
  • Add ribs on top of onions and season them with sea salt and black pepper.
  • Add in all of the remaining ingredients, turning your slow cooker to low.
  • Cover and cook on low for 7-8 hours or on high for 4 hours.
  • When ribs are done, remove them from the slow cooker pouring sauce from the slow cooker into a saucepan.
  • Pour off excess grease from liquid and reduce liquid in the saucepan over high heat until the sauce has thickened slightly.
  • Serve sauce over ribs and enjoy!

Brush the ribs with the sauce and grill, turning and brushing with more sauce, until richly glazed and browned, about 2 minutes longer. Serve the ribs with extra sauce for dipping.
