Years ago, there was a deli in the town I worked and everyday faithfully, I would stop there for the Tuna sandwich (which was the best ever!) I became friends with the older lady that always worked the deli and she gave me the recipe. I will never forget what she told me.."The more colors in your Tuna, the better the flavor" sadly, the deli went out of business, but I never forgot her recipe. This tuna has lots of veggies in it, but if you dice them very small, it's so good! Remember, Tuna is a finicky meal.. too much mayo makes it watery and too little makes it dry and fishy.. be sure to use your best judgement and liking. (This recipe makes a lot) you can lessen it

Ingredients

2 (12 ounce) cans of solid albacore tuna (in water)
1 small green bell pepper (finely diced)
1 small red bell pepper (finely diced)
1 small onion (finely diced)
1 celery (finely diced)
2 medium sized dill pickles (finely diced)
4 tablespoons mayonnaise (heaping, use a regular kitchen tablespoon)

Steps:

Drain tuna very well and add to large bowl
dice all of the above very small as indicated and add to tuna.
I add about 3 -4 heaping kitchen sized tablespoons of Mayo into the tuna you may have to add a little more or a little less based on your preference
add a few shakes of black pepper and salt (opt).
Chill in airtight container in fridge. The longer you let it chill, the better the flavor. This can be served on pretty much any kind of bread. My personal favorite, onion rolls or seedless rye!

16 slices whole grain walnut bread
Cream cheese
Strawberry jelly
4 strawberries, hulled and thinly sliced

Steps:

Spread 8 of the bread slices with cream cheese, and the remaining 8 with jelly. Sandwich cream cheese slices with strawberry slices. Using star shaped cookie cutters, cut out shapes. Place strawberry slice on top of the sandwich, for garnish.

1 cup shredded cooked chicken breast
1 hard-boiled large egg, chopped
1/2 cup unsweetened crushed pineapple, drained
1/3 cup mayonnaise
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup chopped pecans, toasted
1/2 cup fresh baby spinach
8 slices white bread, crusts removed

Steps:

In a small bowl, combine the chicken, egg, pineapple, mayonnaise, salt and pepper. Cover and refrigerate for at least 1 hour. , Just before serving, stir in pecans. Place spinach on 4 slices of bread; top with chicken salad and remaining bread. Cut each sandwich into quarters.

1 egg
1/2 teaspoon prepared mustard
1/4 cup dry bread crumbs
1 can (6 ounces) tuna, drained and flaked
1 tablespoon vegetable oil
2 sandwich rolls, split

Steps:

In a bowl, combine the egg, mustard, crumbs and tuna; mix well. Shape into four patties (mixture will be soft). In a skillet over medium heat, fry patties in oil on both sides until lightly browned. Place two patties on each roll.
