Instant Pot Tilapia with Vegetables image

Instant Pot Tilapia with Vegetables is a quick, easy and helathy pressure cooker dinner with white fish and your favorite crisp vegetables.

Number Of Ingredients 10

1 pound fresh tilapia (approximately 2 fillets)
1 teaspoon dried basil or herbs of your choice
1 tablespoon olive oil
¼ teaspoon salt
⅛ teaspoon ground pepper
1 cup broccoli florets
1 medium zucchini (sliced)
1 medium yellow squash (sliced)
1 medium carrot (sliced)
1 cup water

Steps:

  • Wash and pat dry tilapia fillets and cut lengthwise each fillet.
  • In a medium bowl, mix tilapia fillet with dried basil, olive oil, salt, and pepper. Let it marinate for 15 minutes.
  • Add a cup of water to the instant pot and place the trivet. Add the marinated tilapia fillets over the trivet and close the instant pot lid. Switch on the "Pressure cook/ Manual mode" at high and set timer for 3 minutes. Turn the pressure knob to sealing position.
  • Once cooking is done, quickly release pressure by carefully turning the knob to 'vent' position. Once all the pressure was released, carefully remove the lid.
  • Add the sliced vegetables such as broccoli florets, zucchini, yellow squash, and carrots over the cooked tilapia fillets. Sprinkle the vegetables with salt. Close and secure the instant pot lid again to its position and turn the pressure knob to sealing position. Pressure cook for '0' minutes.
  • Once cooked, quick release the pressure by carefully turning the knob to 'vent' position. Remove the instant pot lid and carefully transfer the cooked vegetables and tilapia fillets into a serving plate.
  • Serve the tilapia fillets, cooked vegetables along with your favorite sides or sauce.

Instant Pot tilapia and vegetables cooked together is the perfect healthy pressure cooker dinner for your family cooked in no time. Try fish this way!

1 lb tilapia (fillets, frozen)
6 small new potatoes (cut in half)
2 medium carrots (peeled, sliced into thick angled pieces)
1 c green beans (frozen)
3 tbsp butter (or 1 tbsp per fillet, we had 3 pieces)
1/4 tsp paprika
1/4 tsp pepper
1 tsp sea salt
1 stalk celery (optional, cut into thick chunks)
1/4 c vegetable broth (or water)

Steps:

  • Put your sliced vegetables into the bottom of your pot, then place a trivet on top of them so it sits flat on bottom.
  • Place fish fillets on trivet. Pour your broth or water on top of the fish so it drains down on top of everything. Mix spices together and sprinkle over the top of each piece so they're seasoned. Can sprinkle fresh parsley on top too if you wish.
  • Put 1 tbsp of butter on top of each fillet. Close lid and steam valve and set to high pressure for 8 minutes. Then do a quick release when done.
  • Lift out trivet and serve fish on plates with sides of veggies. Season again with a pinch of salt and pepper if you wish, according to taste.

This is my family's favorite tilapia dish, which is great because it's so easy to make! You can use any white fish you prefer in this recipe.

Number Of Ingredients 11

nonstick cooking spray
8 medium red potatoes, cut into chunks
1 medium yellow bell pepper, cut into 1-inch pieces
4 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon salt, divided
½ teaspoon ground black pepper
2 cups cherry tomatoes, halved
4 (4 ounce) fillets tilapia fillets
1 teaspoon lemon zest
1 medium lemon, juiced

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Spray a baking dish with nonstick cooking spray.
  • Place potatoes, bell pepper, garlic, oil, and 1/2 teaspoon salt in the prepared dish; toss to coat.
  • Bake in the preheated oven for 30 minutes. Add tomatoes. Place tilapia fillets on top of vegetables and sprinkle with remaining salt, pepper, and lemon zest. Continue to bake until fish flakes easily with a fork, about 10 minutes.
  • Squeeze lemon juice over fish and serve.
