3/4 cup plain Greek yogurt
1/3 cup mayonnaise, such as Duke's
2 tablespoons buttermilk, optional
1/2 cup fresh parsley leaves
1/4 cup chopped fresh chives
1 tablespoon chopped fresh basil
2 teaspoons chopped fresh tarragon
1 clove garlic
2 teaspoons lemon zest
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Process the yogurt, mayonnaise, buttermilk, if desired, parsley, chives, basil, tarragon, garlic, lemon zest, lemon juice, Worcestershire, salt, and pepper in a food processor 30 seconds or until smooth. Cover and refrigerate until ready to serve.

1 garlic clove, minced
1/2 teaspoon salt
1 cup fresh cilantro, chopped
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/8 teaspoon cayenne pepper

Steps:

  • Put the garlic and salt into a small bowl and mash the into a paste.
  • Transfer the paste to a mini food processor.
  • Add the remaining ingredients and blend well.
  • Serve with steak.

Easy Green Goddess Dressing image

This homemade green goddess dressing recipe is so easy to make! It's creamy, fresh, completely delicious-and a great way to use up your leafy herbs. Recipe yields about 1 1/4 cups dressing; multiply if desired.

Number Of Ingredients 6

1 cup plain Greek yogurt, preferably full-fat (made with whole milk)
1 cup lightly packed fresh herbs (tender stems are fine): use cilantro, parsley, dill, basil and/or mint, with up to 1/4 cup chives or green onion (sliced into 1/2″ segments)
Optional: Up to 2 tablespoons fresh tarragon leaves
1 medium clove garlic, roughly chopped
1/2 teaspoon fine sea salt
Lots of freshly ground black pepper, to taste

Steps:

  • Combine all of the ingredients in the bowl of a food processor. Process until smooth and green, with tiny flecks of herbs.
  • Taste, and add more salt or pepper if desired. Use as desired, or cover and refrigerate for later. This dressing will keep well in the fridge for 5 to 7 days.

1/2 cup light sour cream
3 tablespoons fresh tarragon
2 tablespoons snipped fresh chives
2 teaspoons lime juice
1 clove garlic, smashed

Steps:

  • In a blender container or food processor bowl combine yogurt, 1/4 cup sour cream and tarragon.
  • Cover and blend or process until smooth.
  • Transfer to a small bowl.
  • Stir in remaining sour cream, chives, lime juice and garlic.
  • Store any remaining sauce, covered, in the refrigerator up to 3 days and serve with salad greens.

This is from Eating Well magazing. I haven't made it yet, but I ripped out the recipe and now need to get it on here b4 I lose it! I plan to try it sometime soon. The recipe sez that cutting the salmon into small pieces by hand will take time, but it will be worth it. Remember to leave time to chill these before cooking (20 minutes to 2 hours).

1 lb wild salmon, skinned
2 tablespoons red onions, finely chopped
2 tablespoons fresh cilantro, chopped
1 teaspoon fresh ginger, finely chopped
1/4 teaspoon sea salt
1/8 teaspoon pepper, freshly ground
1 tablespoon extra virgin olive oil
3/4 cup low-fat mayonnaise
1/4 cup reduced-fat sour cream
4 anchovy fillets, rinsed and chopped
3 tablespoons chopped fresh chives
2 tablespoons chopped fresh parsley
1 tablespoon capers
2 teaspoons lemon zest, grated
1 teaspoon lemon juice
fresh ground pepper

Steps:

  • With a chef's knife, chop the salmon using quick, even, straight up and down motions (don't rock the knife or you will make the salmon mushy). Try to cut the salmon into 1/4" pieces.
  • Transfer to a large bowl and gently stir in the onion, cilantro, ginger, salt and pepper, being careful not to over mix.
  • Divide the mixture into 4 patties, about 1" thick.
  • Chill in the fridge for at least 20 minutes or up to 2 hours before cooking.
  • Heat the oil in a non-stick skillet over medium heat. Add the burgers and cook until brown on both sides, and just cooked through (about 4-6 minutes total).
  • FOR THE SAUCE:.
  • Combine all ingredients in a food processor and pulse to combine.
  • Serve 2 tbsp of the sauce with the salmon burgers.
