MAPLE BOURBON POT ROAST

Steps:
- Heat a pan large enough to fit your pot roast with vegetable oil over medium-high heat.
- Pat the pork roast dry with paper towels. Set aside.
- In a small bowl combine brown sugar, cinnamon, coriander, salt and ground black pepper. Once combined, rub the seasoning mixture over all sides of the pot roast.
- Brown pot roast 3-4 minutes each side.
- In a small bowl combine apple juice, bourbon and vanilla.
- Line the bottom of the crock pot with potatoes and apples. Once meat has finished browning, set meat on top of the potato and apple mixture.
- Pour the bourbon apple juice mixture over the pot roast, then drizzle maple syrup over the pot roast.
- Cook on low for 8 hours. Reserve some of the liquid after cooking for drizzling on the meat, for au jus or for keeping the meat juicy when storing leftovers.
SLOW COOKER POT ROAST
Taking the time to make a smooth, thick gravy for this slow-cooked dinner is worth it. As the pot roast cooks, the water and juices from the vegetables and meat will thin the gravy out, creating just the right consistency.

- Sprinkle the roast all over with 2 1/2 teaspoons salt and 1 1/2 teaspoons pepper. Coat in flour and shake off any excess. Heat 2 tablespoons of the oil in a large nonstick skillet over medium-high heat. Add the roast to the skillet and cook until golden brown on all sides, about 8 minutes, turning as needed. Transfer the roast to the insert of a 6-quart slow cooker, along with the carrots, celery, onions and garlic.
- Add the remaining 1 tablespoon oil to the skillet over medium heat. Add the tomato paste and stir until the oil begins to turn brick-red, about 1 minute. Add the flour and wine and whisk until thick (it's OK if there are some lumps). Add the beef broth, bay leaves, thyme, allspice, 1/2 teaspoon salt and a few grinds of pepper and bring to a simmer, whisking, until the gravy is smooth and thickens slightly, about 4 minutes.
- Pour the gravy into the slow cooker. Cover and cook on low for 8 hours. The roast and vegetables should be tender.
- Remove the roast and let rest for a few minutes. Discard the thyme stems and strain the vegetables, reserving the gravy. Toss the vegetables with half the parsley and season with salt and pepper. Stir the remaining parsley into the gravy and season with salt and pepper. Slice the roast against the grain. Serve the meat and vegetables on a platter, moistening them with some of the gravy; serve the remaining gravy on the side.
WHISKEY POT ROAST

- Preheat the oven to 275 degrees F.
- Generously sprinkle the chuck roast with salt and pepper.
- Heat the olive oil in large pot or Dutch oven over medium-high heat. Sear the roast in the pot for about a minute on all sides until it is nice and brown. Remove to a plate.
- Add the carrots and onions to the pot and cook until brown, 1 to 3 minutes. Stir in the tomato paste and cook, stirring, for another minute. Turn off the heat and add the whiskey, deglazing and scraping the bottom of the pot. Place the roast back into the pot and add enough beef stock to cover the meat halfway. Add the rosemary and thyme.
- Cover the pot with the lid, transfer to the oven and roast until the meat is fall-apart tender, about 4 hours. Break the beef apart with tongs or whatever cutlery you have on hand and serve with some of the carrots from the pot, the whiskey sauce and a side of mashed potatoes.

POT ROAST WITH BOURBON MAPLE GLAZE
This recipe came from an old cooking board on AOL and it's a winner! Mashed potatoes are a must to serve with this.

- Marinate the roast in the red wine overnight in the refrigerator. Remove meat from the marinade and pat dry with paper towels. Heat 1 tbsp of olive oil in a large pot. Brown meat on all sides and remove. Add the remaining olive oil, celery, carrots and onions and cook over medium heat for a few minutes. Add the garlic and cook 1 minute more.
- Deglaze with bourbon (stand back, the bourbon may ignite momentarily). Add the beef stock, roast and maple syrup. The liquid should just about cover the meat and vegetables. Lower the heat to a simmer; cover pot and cook 3 to 3 1/2 hours, turning meat occasionally so that it will cook evenly. If it still seems a bit liquidy after 2 1/2 hours, tip the lid off a bit to allow steam to escape and the sauce to thicken.
- When meat is fork tender, remove from pot. Add peas and corn. Cook for another 10-15 minutes. Slice meat into thick 1/2" slices. Mound mashed potatoes on center of plate. Top with meat slices and pour sauce over everything.
DON'S POT ROAST (CROCK POT)
My husband loves to make pot roast in the crock pot on the weekends. This is his favorite way of making them. Depending on the size of the roast, you can add all of the veggies to the crockpot for a one-dish meal. It's also good with a pork roast.

- In a large, heavy skillet, sear the beef in the oil until browned all over. Transfer the beef to your slow cooker.
- Scatter the onion, carrots and garlic around the beef.
- In a bowl, stir together the broth, bouillon, vinegar, and rosemary. Pour the mixture over the beef.
- Pour the tomatoes on top.
- Season with pepper.

- 1. PREP/PREPARE
- 2. THE ROAST
- 3. Gather your ingredients.
- 4. Place a rack in the lower position, and preheat the oven to 275f (135c)
- 5. Rub the roast down with the oil, and then sprinkle with salt & pepper, to taste.
- 6. Place a pot over medium-high heat, and sear the roast on all sides, about 2 minutes, per side.
- 7. Remove the roast, and reserve.
- 8. THE BRAISING LIQUID
- 9. Gather your ingredients.
- 10. Add the ingredients to the pot, and reduce heat to medium.
- 11. Chef's Note: Use a wooden spoon to scrape the fonds off the bottom of the pot, and incorporate them into the braising liquid.
- 12. Bring up to a simmer, while stirring to incorporate all the ingredients.
- 13. Chef's Tip: Since this braising liquid contains a lot of bourbon, when it comes to a simmer, you might want to avoid the fumes... unless you want to get drunk.
- 14. Return the roast to the pot.
- 15. Tightly cover and place in the oven until fork tender, about 4 hours.
- 16. Chef's Note: If you are doing this in a slow cooker, add the seared roast, and other ingredients to the bowl of your slow cooker, and then set on low for 8 or 9 hours.
- 17. PLATE/PRESENT
- 18. Remove from the pot (or slow cooker), thickly slice, then plate with your favorite veggie and/or starch, and drizzle on some of that yummy sauce. Enjoy.
