GRILLED SHRIMP WITH LEMON AIOLI

Grilled Shrimp with Lemon Aioli image

You'll notice a glaring lack of ingredients in this recipe. Thanks to the intensely flavored cured lemons, the aioli sauce needs little more than some fresh tarragon to reach its full potential. Having said that, you are well within your rights to toss in some garlic or hot pepper if you're in the mood.

Provided by Chef John

Categories     Appetizers and Snacks     Seafood     Shrimp

Time 45m

Yield 4

Number Of Ingredients 8

2 slices cured lemon
½ cup mayonnaise
1 tablespoon minced fresh tarragon
1 teaspoon lemon juice
1 pound extra large shrimp, peeled and deveined
2 teaspoons olive oil
1 teaspoon smoked paprika
½ teaspoon kosher salt

Steps:

  • Soak cured lemons briefly in a bowl with cold water to remove curing brine, about 10 minutes. Dry lemons with paper towels and finely mince.
  • Stir minced lemon, mayonnaise, tarragon, and lemon juice together in a bowl. Cover bowl with plastic wrap and chill aioli in the refrigerator until cold, at least 15 minutes.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Put shrimp in a bowl. Drizzle olive oil and sprinkle paprika and salt over the shrimp, stir to coat shrimp completely.
  • Cook the shrimp on the preheated grill until they are bright pink on the outside and the meat is no longer transparent in the center, about 2 minutes per side. Transfer shrimp to a plate and serve with lemon aioli.

GARLIC SHRIMP WITH WASABI MAYONNAISE

Garlic Shrimp With Wasabi Mayonnaise image

These shrimp are indeed garlicy, and the mayonnaise spicy--that's why we love them so much-- but be forewarned. The wasabi mayonnaise also makes a nice dip for crudites. Preparation time includes marinating time for the shrimp

Provided by FlemishMinx

Categories     Sauces

Time 40m

Yield 2 serving(s)

Number Of Ingredients 12

3/4 cup mayonnaise
1 tablespoon grated fresh ginger
2 teaspoons lime zest
1 teaspoon fresh lime juice
1/2 teaspoon sugar
2 -4 teaspoons wasabi paste, to taste
1 lb shrimp, cleaned and peeled
3 tablespoons extra virgin olive oil
1 tablespoon finely chopped garlic
2 tablespoons grated fresh ginger
1 tablespoon fresh lime juice
fresh ground black pepper, to taste

Steps:

  • Stir together all the ingredients for the wasabi mayonnaise, beginning with 2 tsp wasabi paste, adding and tasting until you achieve your desired level of spiciness; place in the refrigerator until needed.
  • Stir together all the"FOR THE SHRIMP" ingredients, EXCEPT the shrimp.
  • When thoroughly combined, pour over the shrimp, and mix well making sure that each piece is well covered with the marinade.
  • Place in the refrigerator and allow to marinate 15 minutes; do not go much beyond this time, or the lime juice will begin to"cook" the shrimp, making them tough.
  • Put the shrimp (marinade and all) in one layer in a large dry non-stick frypan over medium-high heat, season with pepper to your taste and saute just until pink.
  • I usually get them arranged in one layer, and by this time the first ones are beginning to color; I immediately begin to turn them over one by one and by then the first ones are ready to come out of the pan; by the time I've gotten to the last one they will all be cooked to my liking.
  • Remove to a serving dish and don't forget to bring the wasabi mayo out of the fridge.

WHAT TO SERVE WITH GRILLED SHRIMP - 10 BEST SIDE DISHES ...

  • Cucumber Salad. Shrimp is the perfect dish to serve in summer, as it’s light and refreshing. But you may be wondering what type of side dishes to accompany this entrée?
  • Lemon Butter Rice. If salad isn’t your thing, a side dish of rice is always an easy and satisfying option. Rice also works wonders for those who have trouble with gluten as it provides the same texture without any pesky glutens.
  • Sautéed Spinach and Tomatoes. We all love our grilled shrimp dishes, especially when they come off that grill nice and hot. The one thing that can make them a little too heavy is the sauce.
  • Grilled Corn on the Cob. Did you know that with just about any meal, corn on the cob is a great side dish? And it’s especially true with grilled shrimp.
  • Quinoa Bowls with Avocado and Egg. The quinoa breakfast bowl is perfect for vegetarians and meat lovers alike. A complementary side dish of avocado, egg, paprika with an optional poached or fried egg on top packs a lot of protein in one bite without the need to use animal products like eggs from chickens who have been subjected to cruelty.
  • Mashed Potatoes. Mashed potatoes are one of the easiest sides to prepare, but many people do not know that they can be used with other dishes besides just turkey on Thanksgiving or chicken on Christmas.
  • Baked Asapragus with Garlic. As a substitute for potatoes, roasted asparagus is an excellent side dish to accompany any grilled meat or seafood. The best way I’ve found to roast the stalks of green spears is by spreading them in one layer on my baking sheet and sprinkling liberally with salt, pepper, olive oil and garlic powder before roasting at 450 degrees Fahrenheit until crispy tender.
  • Sautéed Green Beans and Shallots. Green beans are the perfect side dish to serve with grilled shrimp. Sautéing them in a little olive oil, butter or bacon fat adds even more flavor and texture than just steaming.
  • Mixed Greens Salad With Goat Cheese and Pecans. Every chef knows that the right side dish can make or break a meal, so when you’re looking for something new with grilled shrimp on your menu this season, try mixing greens salad with goat cheese and pecans.
  • Grilled & Loaded Smashed Potatoes. This might sound like a totally unexpected side dish, but it is actually the perfect pairing for grilled shrimp and other seafood.
