DAIRY FREE CHOCOLATE PUDDING



Dairy Free Chocolate Pudding image

This is a simple, smooth and creamy vegan chocolate pudding. I like to use ground chocolate as a substitute for the cocoa.

3 tablespoons cornstarch
2 tablespoons water
1 ½ cups soy milk
¼ teaspoon vanilla extract
¼ cup white sugar
¼ cup unsweetened cocoa powder

Steps:

  • In small bowl, combine cornstarch and water to form a paste.
  • In large saucepan over medium heat, stir together soy milk, vanilla, sugar, cocoa and cornstarch mixture. Cook, stirring constantly, until mixture boils. Continue to cook and stir until mixture thickens. Remove from heat. Pudding will continue to thicken as it cools. Allow to cool five minutes, then chill in refrigerator until completely cool.

I've read lots of accounts of how soy milk won't set in Jello Instant Pudding because of the lack of casein, lack of calcium, etc. Here's how I got it to work

1 1/2 cups soymilk
1 package jello instant pudding mix

Steps:

  • 1. Heat soy milk to about 160 to 170. Just under boiling is fine.
  • 2. Follow directions on back of box.
  • You should see your pudding start to thicken as soon as you add in the powder. I used Jello Sugar and fat free chocolate pudding mix and pistachio pudding mix.

LEMON SOYMILK PUDDING

For those looking for healthy soy recipes, and fans of lemon desserts - that would be just about everybody, no?

6 tablespoons cornstarch
2 lemons, zest of, grated
1 pinch salt
1 cup sugar
1 liter soymilk
2 lemons, juice of

Steps:

  • In a large pot (or plastic container if you want to make it in the microwave, which works very well) mix the cornstarch, the grated lemon zest, salt and sugar.
  • Slowly mix in enough soymilk to make a smooth paste.
  • Then mix in the rest, keeping it smooth.
  • Cook over medium heat, stirring constantly until thickened.
  • Stir in as much lemon juice as you like- I recommend 2 large ones but it may be more or less according to taste and how juicy the lemons are.
  • If making in the microwave, microwave on high for 2 or 3 minutes at a time, stirring well in between times, until thickened and then add the lemon juice.
  • If you object to bits of lemon zest it should be strained before you chill it.
  • Anyone who likes lemon desserts goes nuts for this.

3 tablespoons cornstarch
1/8 teaspoon salt
2 1/4 cups vanilla-flavored soymilk
1 large egg
1 teaspoon vanilla extract

Steps:

  • Combine first three ingredients in a saucepan.
  • Combine milk and egg in a bowl.
  • Gradually add milk mixture to sugar mixture, stirring constantly.
  • Cook over medium heat until thick and bubbly, stirring constantly.
  • Cook for one additional minute after bubbling starts, stirring constantly.
  • Serve warm, place plastic wrap on surface and cool to room temperature or chill thoroughly.

Who says roughing it means you can't have dessert? This simple recipe is very tasty, and can be used for backpacking, camping, picnics, or even just to have at home for the kids to make a single serving for a snack.

102 g jello instant pudding mix, any flavour (4 serving size)
3/4 cup skim milk powder

Steps:

  • Before your trip: Empty the pudding mix into a bowl. Add the Instant Skim Milk Powder and mix well. Divide mixture evenly into 4 baggies.
  • At camp: Pour powder into a bowl. Add 1/2 cup cold water. Mix well to get all lumps out. Let stand 3-5 minutes until set. Enjoy the pudding while your campmates are jealous over your awesome dessert.
  • Tip 1: Label the baggies "Instant Pudding - add 1/2c water, mix well, let set, enjoy!
  • Tip 2: Choose your camping style: If you empty the powder into a bowl at camp, then you have a bag to reuse (but you have to wash the bowl). If you add water to the baggie, zip it closed and knead it to mix well, then eat it out the bag (Saves washing a bowl, but you have a dirty bag to add to your trash to carry out).
