EASY SWEET AND SOUR PORK CHOPS
Being a busy single mom, I look for recipes that are quick, simple and don't have 100 ingredients. This one fits the bill to a T. I've served it to my picky parents and sisters who loved it and my 6 year old always asks for seconds (and even thirds at times)! Original recpie called for equal parts of wet ingredients, but I found it too salty and reduce the soy sauce slightly.

- Preheat oven to 350 degrees.
- Place chops in glass baking dish.
- Mix honey, chili sauce and soy sauce in a bowl.
- Pour mixture over pork chops and bake at 350 degrees for one hour or until no longer pink inside.
- I always make mashed potatos and use the left over juices as a gravy.

- Combine sauce and water, and pour over chops.
- Cover and cook on low for 7-8 hours.
- Turn to high and add pea pods.

- Turn on a multi-functional pressure cooker (such as an Instant Pot®) and select Saute function. Add oil and heat until hot. Add pork cubes, working in batches if necessary, and cook until browned on all sides, about 5 minutes. Return all the pork back to the pot and cancel Saute mode.
- Whisk together 3/4 cup water, ketchup, rice vinegar, pineapple juice, brown sugar, soy sauce, ginger, and garlic in a small bowl. Pour over pork and stir to combine.
- Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure using the quick-release method. Unlock the lid and remove. Transfer pork to a plate using a slotted spoon. Cover with foil to keep warm.
- Select Saute mode and stir in onion, pineapple, and red and green bell peppers. Simmer until vegetables start to soften, 6 to 7 minutes.
- Whisk together cornstarch and remaining 1/2 cup water in a small bowl until smooth. Pour slurry into the pot. Cook, stirring constantly, until sauce has thickened to your preferred consistency, about 2 minutes. Return cooked pork back to the pot and heat until just warmed through. Garnish with sesame seeds.

- Sprinkle pork chops with pepper. In a large skillet coated with cooking spray, cook pork over medium heat for 4-6 minutes on each side or until lightly browned. Remove and keep warm. , Add the water, vinegar, brown sugar, soy sauce and Worcestershire sauce to skillet; stir to loosen browned bits. Bring to a boil. - Place pork chops in bottom of crock pot.
- Mix all ingredients EXCEPT cornstarch and water -- also add juice from pineapple can. Pour mixture on top of chops.
- Turn crock pot on high temperature for 1 hour. Cook on low for 5-6 hours.
- During last 1 hour of crock pot time, mix cornstarch in cold water and stir into juices in crock pot. These chops are wonderful served with rice.

- Place paprika in a large shallow dish. Add pork, a few pieces at a time, and turn to coat. Select saute setting on a 6-qt. electric pressure cooker and adjust for medium heat; add oil. Brown pork in batches. Return all pork to pressure cooker., Drain pineapple, reserving juice; refrigerate the pineapple. Add the pineapple juice, onion, green pepper, vinegar, brown sugar, soy sauce, Worcestershire sauce and salt to pressure cooker. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 10 minutes. Quick-release pressure., Select saute setting and adjust for high heat; bring liquid to a boil. If desired, sprinkle with green onions and serve over rice.
