Fresh, sweet squash also lends a nice richness and part-skim mozzarella gives you that gooey cheese goodness. Fresh baby spinach adds vitamins and minerals to this vegetarian main.

9 no-boil lasagna noodles
1 tablespoon extra-virgin olive oil
3 cloves garlic, finely chopped
1 large onion, finely chopped

1/4 cup cornstarch
Two 5-ounce packages baby spinach
1/2 cup fresh flat-leaf parsley leaves, finely chopped, plus more, for garnish
1/4 teaspoon freshly grated nutmeg
1 butternut squash (about 2 1/2 pounds), peeled, seeded, halved lengthwise and cut into 1/4-inch-thick half-moons
2 cups shredded part-skim mozzarella

Steps:

  • Preheat the oven to 400 degrees F. Soak the lasagna noodles in warm water.
  • Heat the oil in a large skillet over medium heat. Add the garlic, onions and salt and pepper. Cook, stirring occasionally, until the vegetables are tender and browned, about 10 minutes. If the mixture becomes too dry, add a tablespoon or two of water.
  • Meanwhile, stir together 1/2 cup of the milk and the cornstarch in a small bowl until smooth. Heat the remaining 3 1/2 cups milk in a large saucepan until bubbling. Stir the cornstarch mixture into the milk and bring to a boil. Simmer, stirring, until the milk thickens to the consistency of a thin batter, about 5 minutes. Stir in the onion mixture, spinach, parsley and nutmeg, and cook until the spinach wilts. Season with salt and pepper. Remove from the heat.
  • Drain the noodles. Spread 1 cup of the spinach mixture over the bottom of a 13- by 9- by 2-inch glass or ceramic baking dish. Arrange 3 lasagna noodles over the spinach. Arrange half of the squash over the noodles, overlapping slightly, and sprinkle with one-third of the mozzarella. Spoon 1 cup spinach mixture over the cheese, and top with 3 noodles, the remaining squash and another third of the mozzarella. Top with 1 cup spinach mixture, followed by the last 3 noodles and the remaining 1 cup spinach mixture. Cover tightly with foil; reserve the remaining mozzarella.
  • Bake for 40 minutes. Uncover and sprinkle the remaining mozzarella over the top. Bake until bubbling and the squash is tender, about 15 minutes. Let stand at least 10 minutes before serving.

1 large butternut squash
6 tablespoons olive oil, divided
3 red onions, medium, julienned
1 pound part-skim ricotta cheese
2 tablespoons rosemary, chopped
2 eggs
1 1/2 cups grated Parmesan cheese, divided
3 tablespoons unsalted butter
Scant 1/2 cup all-purpose flour
3 1/2 cups whole milk
Pinch nutmeg
1 bag chopped frozen spinach (1-pound), defrosted and drained
6 sheets fresh pasta, or no-boil lasagna noodles
Salt
Pepper

Steps:

  • Roast the butternut squash. Preheat oven to 375 degrees. Cut squash in half lengthwise; remove seeds. Place in roasting pan and drizzle with 3 tablespoons of olive oil. Place in oven and cook until soft all the way through, about 1 hour. Set aside until cool. When cooled, remove skin and place in food processor. Purée until smooth, season with salt and pepper to taste, and set aside.
  • To caramelize the onions: Place 3 tablespoons of olive oil in sauté pan. Heat until hot but not smoking; add onions. Toss to coat with oil. Turn heat down to medium and cook until onions are soft and browned, about 25 minutes. Season with salt and pepper to taste. Set aside.
  • Prepare a ricotta cheese mixture. Mix ricotta cheese, chopped rosemary, eggs, half the grated Parmesan and salt and pepper to taste. Set aside.
  • Make a spinach Mornay sauce. Melt butter in a saucepan, add flour and stir. Cook 2 minutes. Add milk and stir until it comes to a boil. Add the rest of the grated Parmesan, the nutmeg and the defrosted spinach. Season with salt and pepper. Set aside.
  • Assemble the dish. Spray a 9" x 13" pan with cooking spray. Spread 1 cup of the spinach sauce on the bottom of the pan. Cover with a layer of fresh pasta sheets. Spread half of the roasted butternut squash on top of the pasta sheets. Top with another layer of pasta sheets. Spread ricotta cheese mixture on top of pasta sheets, and spread caramelized onion on top of ricotta mixture. Cover with an additional layer of pasta sheets. Top with the other half of the butternut purée and then another layer of pasta. Finish by using the rest of the spinach Mornay sauce for the top layer. Cover with aluminum foil and bake at 350 degrees for 1 hour. Uncover and cook for 15 minutes more.

4 tablespoons chopped fresh thyme, divided

4 large eggs

1 9-ounce package no-boil lasagna noodles

Steps:

  • Melt butter in large skillet over medium-high heat. Add onions; sauté until soft, about 8 minutes. Increase heat to high; add mushrooms and cook until tender, stirring constantly, about 3 minutes. Season with salt and pepper. Transfer mushroom mixture to bowl; set aside.
  • Add squash, broth, 3 tablespoons thyme, and 3 tablespoons sage to same skillet. Cover and simmer over medium heat until squash is just tender, about 6 minutes. Uncover and cook until squash is very soft but still retains shape, about 5 minutes. Season with salt and pepper.

For the butternut squash and spinach lasagne: 1 small butternut squash, peeled, seeds removed and cut into 3-4cm chunks 2 onions, peeled and thickly sliced 2tbsp olive oil 250g button chestnut mushrooms, sliced thickly 250g spinach, washed About 6 large dried lasagne sheets Salt and freshly ground black pepper For the tomato sauce: 400ml tomato passata 3tbsp red pesto For the cheese sauce: 75g butter 75g plain flour 600ml hot milk 2tsp dijon mustard 200g Gruyère cheese, grated

Steps:

  • 1. Preheat the oven to 200°C/180°C fan/Gas 6. You will need a shallow 2-litre (3½-pint) shallow baking dish. Place the squash and onions in a roasting tin, mix with the oil, season then roast for about 30 minutes until tender. (When you pierce the squash with a knife it should go through easily, but you don't want the squash to be mushy.) Add the mushrooms for the last 10 minutes. 2. Put the spinach in a colander in the sink, and pour over a kettle of boiling water until the spinach has wilted. Allow to drain, then press out as much of the water as you can. 3. For the tomato sauce, mix the tomato passata with the pesto. 4. Immerse the lasagne sheets in boiling water for 5 minutes until softened. 5. For the cheese sauce, melt the butter in a small pan then beat in the flour. Gradually whisk in the hot milk, stirring all the time, until the sauce thickens. Add the mustard and about three quarters of the cheese and continue to stir gently until the cheese has melted. Season well. 6. To assemble the lasagne, put a third of the roasted vegetables into the bottom of your ovenproof dish followed by a layer of spinach then a third of the tomato sauce and a third of the cheese sauce. Lay lasagne sheets on top of this. Top with half of the remaining vegetables, tomato sauce and cheese sauce. Add the last lasagne sheets and top with the remaining vegetables, tomato sauce and cheese sauce. Sprinkle the reserved cheese over the top. 7. Bake for 30-40 minutes or until the lasagne is golden and bubbling on top.

  • Heat 2 1/2 cups milk in a large saucepan over medium heat until steaming. Meanwhile, whisk flour and the remaining 1/2 cup milk in a measuring cup until smooth; whisk into the hot milk. 4 cups peeled and diced butternut squash
1 small yellow onion, diced (1 cup)
3 tbsp olive oil
1 ½ tsp fine kosher salt, divided
1 tsp Italian seasoning blend
½ tsp dried sage
¼ tsp black pepper
1 1/2 tsp minced garlic
¾ cup plain, unsweetened nondairy milk
1 ½ tbsp white wine vinegar (optional)
2 tbsp olive oil
1 cup diced yellow onion
1 ½ tsp finely minced garlic
5 cups thinly sliced mushrooms (we used cremini and shiitake)
4 cups lacinato kale, finely chopped
2-4 tbsp dry white wine
1 tsp salt
1/2 tsp pepper
12 oz vegan Ricotta
¼ cup nondairy milk
½ tsp salt
½ tsp Italian seasoning
¼ tsp garlic powder
¼ tsp ground black pepper
½ cup shredded vegan mozzarella
⅓ cup shredded vegan parmesan
1 box of lasagna noodles, cooked according to package directions
1 bag shredded vegan mozzarella

Steps:

  • Preheat oven to 375˚F.
  • Peel squash and dice into 1-inch cubes. Toss with olive oil and diced onion. In a small bowl, stir together the Italian seasoning, 1 tsp salt, sage, and pepper. Toss well with squash mixture. Transfer to parchment paper-lined baking sheet and roast for 25 minutes. After 25 minutes, stir in garlic and roast for additional 10 minutes, until squash is tender.
  • Meanwhile, make the mushroom filling. Add olive oil to a large skillet over medium heat. Add onions and sauté for 5 minutes, then stir in garlic and cook for additional 2-3 minutes. Increase heat to medium high, add mushrooms and wine, cooking until wine reduces and mushrooms soften. Add in kale, salt and pepper and cook until the kale is wilted. Set aside.
  • Stir together ricotta, milk, salt, Italian seasoning, garlic powder, pepper, parmesan, and mozzarella.
  • Cook lasagna noodles according to package directions.
  • Add squash to a high speed blender with milk, white wine vinegar, and ¼-½ tsp more of salt. Blend until smooth and creamy.
  • Coat the bottom of a 9 x 13 baking dish with sauce (just enough to coat the bottom). Layer the lasagna noodles on top of the sauce. Evenly spread half of the ricotta mixture on top of the noodles, top with some sauce, and then half of the mushroom/kale mixture. Repeat (noodles, ricotta, sauce, mushrooms). Top with more noodles, sauce, and generous layer of vegan mozzarella cheese.
  • Cover lasagna tightly with aluminum foil. Bake covered for 40 minutes. Uncover and bake for an additional 5-10 minutes. Remove from the oven and let cool for 20 minutes. Slice and enjoy!

Easy Butternut Squash Curry with Spinach - a simple delicious vegan curry with chunks of butternut squash and a creamy coconut curry sauce. It's a perfect recipe for the whole family.

500g (17.5oz) of peeled, cubed butternut squash
1 medium onion, finely diced
2 cloves of garlic, minced
1 teaspoon of freshly grated ginger root
1.5 tablespoons of ground cumin
1 tablespoon of ground coriander
½ teaspoon of turmeric
¾ teaspoon of Indian chilli powder (I use deggi mirch)
420ml (14.2 fl oz) of vegetable stock (use 300ml for instant pot method)
120ml (0.5 cup) of coconut milk
couple of handfuls of fresh spinach
cooking oil spray
salt and black pepper

Steps:

  • Spray a large large saucepan over a medium high heat with cooking oil spray.
  • Add the onion and fry until softened.
  • Add the onion, garlic, ginger, cumin, coriander, turmeric and chilli powder with about 60ml (4 tablespoons) of the stock to prevent any sticking and cook for approx 30 seconds until paste like.
  • Add in the cubed butternut squash and remaining stock and mix to combine
  • Bring to a boil, reduce heat, cover and simmer until the squash is tender (approx 25-30 minutes). Roughly squash a few pieces of the squash as it helps thicken the sauce.
  • Stir in the coconut milk until creamy.
  • Add the spinach and stir until wilted.
  • Taste and season with salt and black pepper as needed.
  • Serve and enjoy!!
  • Set instant pot to saute mode, once it displays hot, spray the inner pot with cooking oil spray and add the onion frying until softened.
  • Add the garlic, ginger and spices with a 1/4 cup (4 tablespoons) of the stock and cook for approx 30 seconds until paste like.
  • Add in the cubed butternut squash and remaining stock and stir until combined, ensuring you scrape any bits stuck to the bottom of the pan.
  • Add the lid, close valve (if instant pot is not self sealing) and set to cook for 6 minutes high pressure.
  • Once it has finished cooking time, open valve to quick release the pressure.
  • Remove lid, set instant pot to saute mode. Roughly squash a few pieces of the squash to thicken sauce and stir in the coconut milk until creamy.
  • Add the spinach and stir until wilted.
  • Taste and season with salt and black pepper.
  • Serve and enjoy!!

LASAGNA:
9 no-cook lasagna noodles
4 ounces fresh baby spinach (about 5 cups)

Steps:

  • Preheat oven to 350°. In a large bowl, combine the first 5 ingredients. In another bowl, combine ingredients for mushrooms. Transfer vegetables to 2 separate foil-lined 15x10x1-in. baking pans. Roast 14-16 minutes or until tender, stirring occasionally., Meanwhile, for sauce, drain tomatoes, reserving juices; coarsely chop tomatoes. In a large saucepan, heat oil over medium heat. Add garlic and pepper flakes; cook 1 minute longer. Stir in chopped tomatoes, reserved tomato juices, basil, salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, 35-45 minutes or until thickened, stirring occasionally., Spread 1 cup sauce into a greased 13x9-in. baking dish. Layer with 3 noodles, 1 cup sauce, spinach and mushrooms. Continue layering with 3 noodles, 1 cup sauce, ricotta cheese and roasted squash. Top with remaining noodles and sauce. Sprinkle with mozzarella cheese., Bake, covered, 30 minutes. Bake, uncovered, 15-20 minutes longer or until bubbly. Let stand 15 minutes before serving.

1 tbsp cider or white wine vinegar
2 tbsp olive oil , plus extra for the dish
1 butternut squash (about 900g), peeled, deseeded and cut into 2-3cm cubes
pinch of chilli flakes
6 sausages (about 400g)
50g unsalted butter
small bunch of sage (about 10 leaves)
50g plain flour
600ml whole milk , plus extra for topping up, if needed
½ nutmeg , grated
40g grated parmesan , plus extra to serve
1 tbsp Dijon mustard
400g fusilli
70g mushrooms , sliced
1 garlic clove , crushed
100g kale , chard or spinach, chopped
50g pumpkin seeds

Steps:

  • Heat the oven to 200C/180 fan/gas 6. Whisk together the vinegar and half the olive oil. Put the squash in a roasting tin and toss with the dressing, the chilli and seasoning. Squeeze the sausagemeat out of the skins, roll into small meatballs (you should have about 35). Arrange around the squash and roast for 35-40 mins, turning halfway, until the squash is tender and the meatballs are caramelised.
  • Meanwhile, melt the butter in a saucepan over a medium heat, until bubbling. Add the sage and allow to sizzle for a few minutes, or until crisp. Remove using a slotted spoon and set aside on a plate lined with kitchen paper. By this point, the butter should have browned. Stir in the flour and cook for a few seconds, then gradually pour in the milk, whisking continuously until you have a smooth sauce, about 7-10 mins. Add the nutmeg and some seasoning, stir in the parmesan until melted, then stir in the mustard.
  • Oil a medium-sized baking dish. Cook the pasta following pack instructions until al dente, then drain and run under cold running water. Heat the remaining oil in a pan over a medium heat and fry the mushrooms with a pinch of salt for a few minutes, until softened and caramelised. Add the garlic, then the greens, stirring until the greens wilt, then add to the white sauce along with the squash, pasta and half the fried sage, adding up to 50ml milk or water if it's too thick.
  • Pour into the baking dish, then add the meatballs. Scatter over the remaining sage, the reserved squash seeds, and grate over the extra parmesan. Roast for 25-30 mins, until golden and bubbling. Allow to settle for 10 mins before serving.

3 tablespoons all-purpose flour

1/4 cup cream cheese
1/4 teaspoon ground nutmeg

12 cooked lasagna noodles

Steps:

  • Vegetable filling: heat the oil in a big nonstick skillet over medium heat.
  • Add in leeks, sage, and garlic; stir/saute 5 minutes.
  • Add in squash, wine, and water; cover and cook for 20 minutes or until the squash is tender, stirring occasionally.
  • Stir in ¼ teaspoon pepper and the spinach.
  • Filling: in a big saucepan over med-high heat, melt the butter; add in the flour, and whisk the mixture until combined.
  • Cook for 3 minutes to brown the flour, continuing to whisk.
  • Gradually add the milk to the flour mixture, whisking continuously to prevent lumps.
  • Decrease heat to medium, and cook until thick, about 10 minutes, stirring constantly.
  • Remove pan from heat; add in cream cheese, nutmeg, and pepper, stirring with a whisk.
  • Combine the mozzarella and provolone cheese; set aside.
  • To assemble: Preheat oven to 400°; oil the sides and bottom of a 13 x 9 inch baking dish.
  • Spread ½ cup sauce on the bottom; arrange noodles over the sauce, and top with 2 cups of vegetable filling, ½ cup of the cheese mixture, and ½ cup of sauce.
  • Repeat layers ending with noodles.

10 sun-dried tomatoes, not packed in oil
3/4 cup dried porcini mushroom
1 1/3 cups low-fat milk
3 tablespoons all-purpose white flour
1 teaspoon all-purpose white flour
2 ounces low-fat cream cheese
1 cup prepared spaghetti sauce
2 teaspoons balsamic vinegar
salt
freshly ground black pepper
2 teaspoons olive oil
1 onion, chopped
1 small carrot, chopped
2 cloves garlic, minced
12 ounces fresh mushrooms, sliced,wild and/or cultivated
1 1/2 teaspoons chopped fresh rosemary or 1/2 teaspoon dried rosemary
1/2 cup freshly grated parmesan cheese
1 1/2 lbs butternut squash, peeled and thinly sliced,4 cups

Steps:

  • In a large pot of boiling salted water, cook noodles until barely tender (8 minutes for dried, 1 minute for fresh).
  • Drain and rinse under cold water.
  • Spread the noodles on clean kitchen towels, cover with plastic wrap and set aside.
  • In a small bowl, combine sun-dried tomatoes and dried porcini mushrooms.
  • Add 1 cup boiling water, cover and let stand for 10 minutes.
  • Lift out the tomatoes and mushrooms and chop.
  • Strain the soaking liquid through a fine sieve and set aside.
  • In a saucepan, heat 1 cup of the milk over medium heat until steaming.
  • Meanwhile, put 3 tablespoons flour in a small bowl and gradually whisk in the remaining 1/3 cup milk until smooth; whisk into the hot milk and stir constantly over the heat until the sauce comes to a simmer and thickens.
  • Continue cooking and stirring for 1 minute.
  • Remove from the heat.
  • Whisk in cream cheese, then 2/3 cup of the spaghetti sauce and vinegar.
  • Season the sauce with salt and pepper; set aside.
  • In a large nonstick skillet, heat oil over medium-high heat.
  • Add onions, carrots and garlic and sauté until soft, about 2 minutes.
  • Add fresh mushrooms, rosemary and the reserved tomatoes and porcini; cook until the fresh mushrooms are just wilted, about 2 minutes longer.
  • Stir the remaining 1 teaspoon flour into the vegetables.
  • Add the reserved soaking liquid and the remaining 1/3 cup spaghetti sauce and cook until the mixture thickens, about 1 minute.
  • Remove from the heat and season with salt and pepper.
  • Preheat oven to 400°F.
  • Lightly oil a 9-by-13-inch baking dish or coat it with nonstick cooking spray.
  • Smear the bottom of the prepared dish with 1/2 cup of the sauce.
  • Line the bottom with a single layer of noodles.
  • Spread half of the mushroom mixture over the noodles and sprinkle with 2 tablespoons of the parmesan.
  • Add another layer of noodles, arrange butternut squash on top and sprinkle with salt and pepper.
  • Spread another 1/2 cup sauce over all.
  • Add another layer of noodles, followed by the remaining mushroom mixture; sprinkle with 2 more tablespoons of the parmesan.
  • Finish with the remaining noodles and sauce.
  • Sprinkle with the remaining parmesan.
  • Lightly oil a large piece of aluminum foil or coat it with nonstick cooking spray, and use it to tightly cover the dish.
  • Bake the lasagna for 30 minutes.
  • Uncover and bake for 10 to 15 minutes more, or until lightly browned and bubbling.

For Butternut Parmesan Sauce:
1 lb peeled and diced butternut squash
1 tsp olive oil
¼ cup minced shallots
2 cloves minced garlic
2 tbsp fresh grated parmesan cheese
to taste Kosher salt and freshly ground black pepper
For Lasagna:
9 cooked, use gluten free noodles for gluten free recipe lasagna noodles
10 oz package frozen chopped, heated and squeezed well spinach
15 oz fat free ricotta cheese
½ cup fresh grated parmesan cheese
1 large egg
salt and fresh pepper
9 tbsp about 3 oz part skim shredded Italian blend cheese
1 tbsp minced parsley

Steps:

  • Bring a large pot of salted water to a boil. Add butternut squash and cook until soft.
  • Remove squash with a slotted spoon, reserve about 1 cup of the water, and set aside. Blend until smooth with an immersion blender, adding ¼ cup of the reserved liquid to thin out.
  • Meanwhile, in a large deep non-stick skillet, add the oil, then sauté the shallots and garlic over medium-low heat for about 4 to 5 minutes until soft and golden.
  • Add pureed butternut squash, season with salt and fresh cracked pepper, and add a little more of the reserved water to thin out to preference. Stir in 2½ tablespoons of the Parmesan cheese and set aside.
  • Preheat oven to 350 degrees F.
  • Ladle about ½ cup butternut sauce on the bottom of a 9x12-inch baking dish.
  • Combine spinach, ricotta, Parmesan, egg, salt, and pepper in a medium bowl.
  • Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry.
  • Take ⅓ cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.
  • Ladle about 1 cup of sauce over the noodles in the baking dish and top each one with 1 tablespoon Italian cheese blend.
  • Put foil over baking dish and bake for 40 minutes, or until cheese melts and everything is hot and bubbly. Top with parsley and serve.
  • To serve, ladle a little extra sauce on the plate and top with lasagna roll.

1 medium butternut squash, peeled, seeds removed and cut into 2cm cubes (1.2kg prepared weight)
3 garlic cloves, unpeeled
handful of sage leaves
1 tbsp olive oil, plus a litte extra
600g fresh spinach
12-15 lasagne sheets
125g ball mozzarella, torn or cut into small pieces
40g pine nuts
70g butter
70g flour
800ml milk
250g mascarpone
50g parmesan (or vegetarian alternative), grated
grating of nutmeg

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the squash and garlic into a large roasting tin or dish (you can use the same one to assemble the lasagne to save on washing-up - ours was 35 x 40cm and 5cm deep). Tear over 4-5 sage leaves, drizzle with the oil and season well, then toss to coat. Roast for 40-50 mins, moving the squash around once or twice, until soft and caramelised. Squeeze the garlic from the skins and mash with the squash, leaving a few chunky bits for texture.
  • Meanwhile, make the white sauce. Melt the butter in a large saucepan, and stir in the flour to make a sandy paste. Splash a little milk into the pan, stirring continuously to prevent lumps. Keep adding more milk, a little at a time, until the paste thins to a smooth, creamy sauce and the milk has all been used. Simmer for 1 min more. Stir in the mascarpone and half the parmesan. Season well and grate in a generous amount of nutmeg.
  • Tip the spinach into a colander and pour over a kettleful of boiling water to wilt (do this in batches). Once cool enough to handle, squeeze the spinach over the colander to remove the water, then season and roughly chop.
  • Remove half of the crushed garlicky squash from the roasting tin and set aside on a plate. Spread the remaining squash out over the base of the tin or dish you intend to serve the lasagne in. Ladle over about a quarter of the sauce, then top with a single layer of lasagne sheets, snapping them to fill any gaps. Make an even layer of spinach on top of the pasta, and top with another quarter of the sauce, more pasta, squash, sauce, pasta and finally the remaining white sauce.
  • Scatter over the remaining parmesan, the mozzarella and pine nuts. If the oven is off, heat to 200C/180C fan/gas 6 and cook the lasagne for 30 mins. Rub a little extra oil over 5 or 6 sage leaves, place them on top of the lasagne and return to the oven for another 15-20 mins until golden and bubbling. Leave to cool for 5 mins before serving.
