SUMMERTIME FRIED CHICKEN DINNER

Here is the classic picnic food, made even better for dinner! We marinate chicken in buttermilk and add two secret ingredients--pickle juice and Worcestershire sauce--for maximum flavor and tenderness, before frying it to crispy perfection. Served with a creamy coleslaw plus lots of pickles and potato rolls, this delightful family-style meal conjures up the best of summer.

1 cup buttermilk
1 cup dill pickle juice, plus dill pickles, for serving
1/3 cup Worcestershire sauce
3 teaspoons paprika
1/2 teaspoon cayenne
Kosher salt and freshly ground black pepper
One 3- to 4-pound chicken, cut into 10 pieces
2 cups all-purpose flour
1/2 cup cornstarch
Vegetable oil, for frying
2/3 cup mayonnaise
1/4 cup sour cream
2 tablespoons apple cider vinegar
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1/2 teaspoon celery salt
One 14-ounce bag coleslaw mix
Kosher salt and freshly ground black pepper
Potato rolls, for serving

Steps:

  • For the chicken: Mix together the buttermilk, pickle juice, Worcestershire sauce, 2 teaspoons of the paprika, 1/4 teaspoon of the cayenne, 1 tablespoon salt and several grinds of pepper in a large bowl. Add the chicken, making sure the pieces are submerged. Cover and refrigerate at least 2 hours and up to 4 hours.
  • Mix together the flour, cornstarch, remaining 1 teaspoon paprika, remaining 1/4 teaspoon cayenne, 1 tablespoon salt and 1 1/2 teaspoons pepper in a large bowl until well combined; set aside.
  • Fill a deep heavy pot with 2 inches of vegetable oil and heat over medium heat until a deep-frying thermometer registers 350 degrees F.
  • Remove a chicken piece from the buttermilk mixture, letting the excess drip off, and roll it in the seasoned flour until completely coated. Push it to the side in the bowl and repeat with the remaining chicken pieces.
  • Working in 2 batches, carefully lower the chicken into the oil. The temperature will drop to 300 to 325 degrees F; adjust the heat to maintain this temperature so the crust doesn't burn before the meat is cooked. Fry, undisturbed, 2 to 3 minutes to set the crust, then carefully lift with tongs to check the browning. It should be light golden; if it is browning too quickly, lower the heat slightly. Continue to fry, turning as needed, until golden brown and cooked through, 12 to 14 more minutes for smaller pieces and 14 to 16 more minutes for larger ones. (A thermometer should register 160 degrees F in the breasts and 165 degrees F in the thighs and drumsticks.)
  • Remove the chicken to a rack to drain and let rest a few minutes. Season with salt. Repeat with the remaining chicken.
  • For the coleslaw: Whisk together the mayonnaise, sour cream, vinegar, Worcestershire sauce, mustard and celery salt in a medium bowl. Add the coleslaw mix and toss to coat. Season with 1/4 teaspoon salt and several grinds of pepper. Cover and refrigerate for 30 minutes. Taste and add additional salt and pepper as needed before serving.
  • Serve the chicken hot or at room temperature with the coleslaw, potato rolls and pickles on the side.

BUTTERMILK FRIED CHICKEN

2 cups buttermilk, shaken
1 shallot, peeled, halved lengthwise, and thinly sliced crosswise
2 garlic cloves, smashed
1 jalapeño pepper (with seeds), halved lengthwise
Kosher salt and freshly ground black pepper
3 boneless chicken breasts
3 1/2 cups all-purpose flour
4 teaspoons baking powder
2 1/2 teaspoons smoked Spanish paprika
1 teaspoon cayenne pepper
1 teaspoon celery salt
2 (48-ounce) bottles canola oil
Bunch of parsley, for garnish

Steps:

  • For the marinade, in a medium bowl, whisk together the buttermilk, shallot, garlic, jalapeño, 2 teaspoons salt, and 1 teaspoon black pepper.
  • With a rolling pin or a meat mallet, pound the chicken breasts between 2 sheets of parchment paper until they are evenly 1/2 inch thick. Slice each chicken breast in half crosswise so you have 2 pieces approximately the same size.
  • Add the chicken to the marinade, cover with plastic wrap, and refrigerate for at least 8 hours but not more than 24 hours.
  • Meanwhile, in a medium bowl, whisk together the flour, baking powder, paprika, cayenne pepper, celery salt, 1 tablespoon salt, and 1 1/2 teaspoons black pepper and set aside.
  • When ready to cook the chicken, preheat the oven to 250 degrees. Place a sheet pan with a baking rack on it in the oven.
  • Pour the oil into a medium (9-inch round x 4 1/2-inch high) Dutch oven, such as Le Creuset, fitted with a candy thermometer, until the oil is 2 inches deep. Heat the oil over high heat until the temperature reaches 350 degrees.
  • Meanwhile, lift the chicken from the marinade, dredge it well in the flour mixture, submerge it again in the marinade, then dredge again in the flour mixture, dusting off the excess. Transfer the chicken to a plate or sheet pan until ready to fry.
  • When the oil is 350 degrees, lower three pieces only(!) carefully into the oil with a slotted spoon and adjust the heat to keep the oil at 350 degrees. Don't crowd the chicken! Cook for 5 minutes exactly, turning once to brown evenly. With the slotted spoon, transfer the chicken to the sheet pan in the oven to keep warm. Fry the remaining three pieces, sprinkle all the chicken with salt, and serve hot.

  • Place chicken in shallow dish. Sprinkle with hot sauce and 1 Tbsp. of the dressing mix. Refrigerate 2 hours.
  • Combine flour and remaining dressing mix in medium bowl. Add chicken, 1 piece at a time; turn to evenly coat both sides of each chicken piece with flour mixture.
  • Heat oil in large deep skillet on medium-high heat. Add chicken; cook 5 min. on each side or until evenly browned on both sides. Cover; cook on medium heat 30 min. or until chicken is done (165°F), turning occasionally. Drain on paper towels.

MARINADE
1/2 cup(s) franks hot sauce
1 cup(s) apple cider vinegar
2 tablespoon(s) worcestershire sauce
3 tablespoon(s) ketchup
1 teaspoon(s) anchovy paste
1 - giant bundle of thyme
1 teaspoon(s) peppercorns
1 - lemon cut in fourths
- water to cover
FLOUR MIX
- flour
1/8 teaspoon(s) baking powder
- cheyenne pepper (a pinch)
- salt
DEEP FRYER OF OIL
- peanut oil works best
CHICKEN OF CHOICE
- used bone in thighs

Steps:

  • Place all marinade (except water and lemon) in bowl and wisk together. In another bowl place chicken. Pour marinade over chicken cut and squeeze lemon and add. Add water to cover, toss chicken. Cover and refrigerate for 24hrs. Depending on how much chicken, you may have to adjust amounts of marinate. Water should be only about quarter of recipe.
  • Remove chicken and drain from marinate, removing bundle, and lemons, let air dry for few mins. Mix together flour ingredients. Dip each piece of chicken in flour mix, coating both sides and set on baking rack for 5-10 min. while fryer comes to 375-F
  • Fry few pieces of chicken at a time in fryer, making sure you dont over crowd and temp comes down. Let rest on paper bag. ENJOY
