WEE BEAR'S SPECIAL PORRIDGE
From the Fairy Tale Cookbook, this is a lovely breakfast! Sometimes I add 2 tbls. raisins to the oats as I cook them. Popular in New England, Mid Atlantic, Southern, Mid West, West!

Steps:
- Cook oats with salt, according to package directions using milk. Peel banana, cut it into thin slices with a dull knife, and place slices on top of the porridge. Add walnuts. Stir in nuts and banana slices into porridge.
- Spoon porridge into serving dishes. Sprinkle coconut or brown sugar on top of porridge. Serve hot with milk.
- Enjoy!

MAMA BEAR'S PORRIDGE
This is almost like rice pudding, it's a stick-to-your-ribs breakfast! Don't worry about adding raw eggs, they will cook completely in the porridge! This can also be made in the microwave, but you will need to remove a couple of times to stir.

Steps:
- In a large heavy-bottomed saucepan bring 3 cups water to a boil.
- In another bowl mix together powdered milk, oats, cinnamon and sugar (if using, can use white or brown sugar) quickly stir into the boiling water; return to a boil, then reduce heat and simmer for about 6-10 minutes or until the mixture is desired thickness.
- Remove from heat and mix in the raisins and vanilla.
- Beat in eggs one at a time, mixing well after each addition (the hot porridge will cook the eggs completely).
- Divide the porridge between 3 or 4 bowls, then top with a teaspoon of butter (or more to taste) and then about 1/4 cup of cream or milk.
- Drizzle with honey as desired.

This is what my Mummy called it when we were younger, we refused to eat it without the brown sugar or the name, we thought it was special. I had it before my exams as well--it helped me concentrate and kept me going with lots of energy all the way to lunch

Steps:
- Combine water and oats in medium saucepan over a medium heat. Cook, stirring about 5 minutes or until porridge is thick and creamy.
- Place in bowl.
- Add a bit of milk so it goes around the edges and covers slightly.
- Sprinkle with brown sugar (the more the better).
- Place the brown sugar on table and let kids add if you trust them.
- If you want a creamier porridge make with milk instead of water.
