Drunken Shameless Spicy Shrimp Dinosaur Bbq Food

"DRUNKEN SHRIMP STYLE" QUICK MARINADE

Ingredients

1 cup vodka
1 cup citrus juice made from freshly squeezed orange, lime, and lemon juice
1/4 cup peeled ginger, chopped
1/2 clove garlic, finely minced
Sugar, to taste
1 cup miso paste
1/2 cup light cooking oil, preferably sesame, canola, or vegetable
1 pound small shrimp, rinsed, shells intact
1/2 pound bay scallops

Steps:

Soak skewers in water for 45 minutes. In a mixing bowl, combine vodka, citrus, ginger, garlic, sugar, and miso paste and whisk until mixed. Slowly whisk in oil until smooth. Pour marinade over unpeeled shrimp and scallops. Cover and let marinate in refrigerator for 45 to 60 minutes. Skewer shrimp and scallops (4 to a skewer is optimal) and place on grill over direct heat. Allow tails and legs of shrimp to slightly blacken before turning. Scallops should brown slightly before turning.

John Stage almost always leaves something out in the recipes he publishes so they are just a little off. In this case, I think he just wrote "creole seasoning" when in fact, this stuff tastes most authentic with a spice they sell around here in the restaurant and in stores called "Cajun Foreplay." Use it generously. Either way these are delicious, especially served with Dinosaur BBQ Cocktail Sauce (recipe # 295318). Not for wimps!

Ingredients

2 (16 ounce) bottles beer (or 12 oz cans)
1/2 cup cider vinegar
2 cups water
2 tablespoons Old Bay Seasoning
2 lbs shrimp, in shell large
2 tablespoons garlic, pressed (or garlic powder, to taste)
2 tablespoons creole seasoning (use Cajun Foreplay if possible)
dinosaur bbq seafood cocktail sauce (for serving)

Steps:

Pour beer, vinegar, and water, and Old Bay in a pot over medium to high heat and cover.
When water reaches a rapid boil, add shrimp, cover again, and cook 2 minutes or until shrimp turn pink and just opaque.
Drain in colander and cover with a layer of ice to chill and stop cooking.
Cover with garlic and seasoning. Chill thoroughly in refrigerator until serving.
Serve with Dinosaur BBQ Cocktail Sauce.

1 cup wango tango barbecue sauce (from Dinosaur BBQ, or use your favorite hot and spicy BBQ sauce)
1/2 cup prepared horseradish
1 tablespoon Worcestershire sauce
1/8 lime, juice of
1/8 lemon, juice of
2 teaspoons hot sauce, I like habenero

Steps:

Mix all ingredients together and chill.
