4 tablespoons salted butter, melted
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1/2 teaspoon flaky sea salt
Freshly ground black pepper
4 tablespoons grated Parmesan cheese
2 pounds russet potatoes, cut in 1/4-inch slices
Nonstick cooking spray, for the baking sheets
1/4 cup chopped fresh parsley

Steps:

  • Preheat the oven to 450 degrees F.
  • To a large bowl, add the melted butter, olive oil, garlic powder, onion powder, smoked paprika, salt, some black pepper and 3 tablespoons of the Parmesan, then mix together. Add the potato slices and toss to coat.
  • Coat 2 large baking sheets with cooking spray. Spread the potato slices in one layer on the prepared baking sheets. Sprinkle the potatoes with the remaining 1 tablespoon Parmesan and bake until the potatoes are tender, crisp and golden, 15 to 20 minutes. Transfer them to a serving dish and sprinkle with the parsley.

Tender roasted potatoes get an extra boost of flavor and crunch, thanks to a crispy layer of golden Parmesan. We added a simple stir-together paprika aioli for dipping, but these flavorful little nuggets are equally delicious on their own. Serve them as a fun appetizer or as a side dish.

2 1/2 pounds small Yukon gold potatoes, halved crosswise
4 sprigs fresh thyme
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
Nonstick cooking spray
3/4 cup finely grated Parmesan
1/2 cup mayonnaise
1 tablespoon freshly squeezed lemon juice
1 teaspoon Dijon mustard
1 teaspoon smoked paprika
1 small clove garlic, finely grated
Kosher salt and freshly ground black pepper

Steps:

  • Line a rimmed baking sheet with aluminum foil and place on the center rack of the oven. Preheat the oven to 425 degrees F (see Cook's Note).
  • For the Parmesan potatoes: Toss the potatoes, thyme sprigs, olive oil, 1 teaspoon salt and several grinds of black pepper in a large bowl until combined. Carefully remove the hot baking sheet from the oven and spray with nonstick cooking spray. Lay the potatoes cut-side-down in an even layer. Bake until tender and golden brown, about 35 minutes.
  • For the smoked paprika aioli: Meanwhile, whisk together the mayonnaise, lemon juice, Dijon, paprika, garlic, a pinch of salt and a couple grinds of black pepper in a small bowl until smooth. Cover with plastic wrap and refrigerate until ready to serve.
  • Remove the baking sheet from the oven and push the potatoes to one side of the pan (try to give yourself as much empty surface area as possible). Lightly spray the foil with more cooking spray, then sprinkle the Parmesan in an even layer over the empty space on the baking sheet, making sure to go all the way to the edges to create a roughly 14-by-12-inch rectangle. Place the potatoes on top of the Parmesan layer, cut-side down, so that all the potatoes are sitting on the cheese.
  • Return the baking sheet to the oven and bake until all the Parmesan is golden brown and crisp, 8 to 10 minutes more. Cool slightly, about 5 minutes, then use a spatula to lift the crispy, cheesy potatoes off the pan (some potatoes will come off individually while others will come off in pairs). Serve with the smoked paprika aioli on the side.

2 lb. Yukon gold potato es (about 8), cut into 1/8-inch-thick slices
3 Tbsp. butter, melted, divided
1/2 cup KRAFT Grated Parmesan Cheese, divided

Steps:

  • Heat oven to 425°F.
  • Rinse potatoes; pat dry with paper towels.
  • Brush 1 Tbsp. butter onto bottom and up side of 9-inch pie plate. Toss potatoes with remaining butter and 1/4 cup cheese; layer on bottom and up side of pie plate. Sprinkle with remaining cheese.
  • Bake 1 hour or until potatoes are tender. Loosen potatoes from side and bottom of pie plate; invert immediately onto serving plate.

1.8kg floury potatoes , cut in half, or quarters if large
5 tbsp olive oil
2 tsp plain flour
100g parmesan (or vegetarian alternative), finely grated
handful parsley , finely chopped
4 rosemary sprigs, leaves finely chopped
pinch of grated nutmeg

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Place the potatoes into a pan of salted water, bring to the boil and simmer for 2 mins exactly. Drain well and toss in a little of the oil to coat.
  • Stir the flour, parmesan, herbs and nutmeg together in a dish with a small pinch of salt and toss the potatoes in the mix until evenly coated. Heat a good layer of oil in a shallow, non-stick roasting tray on a hob or in the oven, then carefully add the potatoes to the tray. Turn the potatoes to coat them in the oil and roast for 40 mins, turning once. If they feel like they are sticking to the pan, don't move them, just leave them for the full time. Roast until golden brown and crisp, and serve straight away.

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

instant mashed potatoes
1 teaspoon garlic powder
2 eggs, beaten
1/2 cup parmesan cheese or 1/2 cup romano cheese
1 1/4 cups mozzarella cheese (divided)
paprika

Steps:

  • Make mashed potatoes according to package directions for 7-8 servings.
  • Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
  • Pile mixture into a 9-inch deep dish pie plate.
  • Sprinkle top with 1/4 cup of mozzarella and a sprinkle of paprika for color.
  • Bake at 350°F until golden on top and puffy about 45 minutes.

7 medium potatoes (sliced very thin, about 1/8-inch thick)
4 green onions, finely chopped (or us a yellow onion, thinly sliced)
6 tablespoons melted butter
3/4 cup grated parmesan cheese, divided (or to taste)
seasoning salt
black pepper

Steps:

  • Set oven to 400 degrees.
  • Butter a 9 or 10-inch round pie plate.
  • If potato slices are wet, dry with a paper towel.
  • In a large bowl mix together the potato slices with 6 tablespoons melted butter, 1/2 cup grated Parmesan cheese (can use more than 1/2 cup Parmesan cheese if desired) seasoned salt, or white salt and black pepper to taste; toss well using clean hands to combine.
  • Arrange the potato slices in several layers sprinkling the green onion over the layers.
  • Drizzle more butter over the top layer, then sprinkle with about 1/4 cup (or to taste) grated Parmesan cheese.
  • Bake uncovered for about 1 hour, or until the potatoes are tender.
  • Loosen potatoes from the sides and bottom of the pie plate and invert immediately onto a serving plate.
  • Cut into wedges and serve.

4 pounds russet potatoes, peeled, cut into 1-inch pieces
1 cup whole milk
1/2 cup (1 stick) butter, melted
1 1/2 cups grated mozzarella
1 cup freshly grated Parmesan
Salt and freshly ground black pepper
2 tablespoons plain dry bread crumbs

Steps:

  • Preheat the oven to 400 degrees F. Coat a 13 by 9 by 2-inch baking dish with 1 tablespoon of butter and set aside.
  • Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15 minutes. Drain; return the potatoes to the same pot and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 3/4 cup of the Parmesan. Season, to taste, with salt and pepper. Transfer the potatoes to the prepared baking dish. I thought I better post this so that I would know where it is every time I go to make it. I am tired of searching through umpteem books each time. It is my husband's favorite dish and if I have to be honest I really enjoy it as well. It's a supper dish found in both Monmouthshire and the Welsh counties, traditionally served with pickled beets or pickled red cabbage. We like it with crusty brown bread and pickled beets. It's delicious!

2 lbs potatoes, peeled and cut into quarters
1/4 pint milk
1 ounce butter
4 ounces grated strong cheddar cheese (or similar cheese)
salt and white pepper
2 -3 ounces white breadcrumbs, lightly crisped
melted butter, to brush over the top

Steps:

  • Boil the potatoes in salted water until cooked.
  • Preheat oven to 425*F.
  • Drain the potatoes well, add the milk and butter and mash until smooth, then stir in the cheese and seasoning.
  • Butter a 1 1/2 to 2 pint pie dish and sprinkle with the breadcrumbs, pressing them to the base and sides with the back of a spoon.
  • Spoon the potato and cheese mixture into the dish and rough up the top with a fork.
  • Brush with the melted butter.
  • Bake for 20 to 30 minutes or until golden brown.
  • Serve with pickled beets or red cabbage and thick slices of crusty brown bread (buttered of course!).
