Provided by Chungah Rhee

Categories     entree

Yield 8 servings

Number Of Ingredients 20

1 1/2 tablespoons canola oil
2 pounds 85/15 ground beef
4 cloves garlic, minced
1 medium sweet onion, diced
1 red bell pepper, diced
1 poblano chili, minced
3 tablespoons tomato paste
3 tablespoons chili powder
2 teaspoons smoked paprika
2 teaspoons dried oregano
2 teaspoons cocoa powder
1 1/2 teaspoons ground cumin
1 (12-ounce) can lager or pilsner beer
1 1/2 cups beef stock
2 (10.75-ounce) cans tomato puree
2 (15-ounce) cans black beans, drained and rinsed
Kosher salt and freshly ground black pepper, to taste
1/4 cup chopped fresh cilantro leaves
1/4 cup sour cream
1/4 cup shredded cheddar cheese

Steps:

  • Set a 6-qt Instant Pot® to the high saute setting. Heat canola oil; add beef and cook until beef has browned, about 3-5 minutes, making sure to crumble the beef as it cooks. Drain excess fat and set aside. Add garlic, onion, bell pepper and chili to the Instant Pot®. Cook, stirring occasionally, until tender, about 4-6 minutes. Stir in tomato paste, chili powder, paprika, oregano, cocoa powder and cumin. Stir in beer, scraping any browned bits from the bottom of the pot. Stir in beef stock, tomato puree, black beans and ground beef; season with salt and pepper, to taste. Select manual setting; adjust pressure to high, and set time for 18 minutes. When finished cooking, quick-release pressure according to manufacturer's directions. Stir in cilantro; season with salt and pepper, to taste. Serve immediately, garnished with sour cream and cheese, if desired.

PRESSURE COOKER BEEF CHILI

Pressure Cooker Beef Chili image

When you ask someone why they don't use a pressure cooker, one of the most common replies is something to the effect of: I'm really not into being killed by an exploding stew. The marvels of pressurized heat are actually very simple!

Time 1h5m

Yield 6

Number Of Ingredients 18

1 tablespoon vegetable oil
2 ½ pounds beef chuck, cut into 1-inch cubes
salt and ground black pepper to taste
1 tablespoon vegetable oil
1 onion, diced
3 cloves garlic, chopped
2 tablespoons ancho chile powder
2 teaspoons Spanish paprika
1 teaspoon ground cumin
½ teaspoon ground black pepper
½ teaspoon chipotle chile powder
¼ teaspoon cayenne pepper
½ teaspoon dried oregano
1 (10 ounce) can diced tomatoes with green chile peppers
1 ¼ cups water
⅛ cup ground corn chips
⅛ cup chopped fresh cilantro
⅛ cup chopped green onions

Steps:

  • Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Season beef generously with salt and black pepper; place meat in the skillet and cook until brown on all sides, 5 to 10 minutes. Transfer to plate and set aside.
  • Heat 1 tablespoon vegetable oil over medium-low heat in the pot of a pressure cooker. Stir onion and garlic into pot; cook until almost translucent, 4 to 6 minutes. Stir in ancho chile powder, paprika, cumin, black pepper, chipotle chile powder, cayenne pepper, and oregano; cook until fragrant, 2 minutes. Add diced tomatoes, beef, and water; stir to combine.
  • Lock the lid of your pressure cooker. Increase heat to high and bring to full pressure. Reduce heat to low to maintain pressure; cook for 15 minutes. Remove from heat and let rest 10 minutes. Ensure that pressure is fully released and remove the lid.
  • Return uncovered pressure cooker to burner over high heat. Stir in corn chips and bring to a boil; cook for 5 minutes. Garnish with cilantro and green onion.

INSTANT POT® CHILI

Instant Pot® Chili image

The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

Provided by Carolyn LaLumiere Miller

Categories     Soups, Stews and Chili Recipes     Chili Recipes     Beef Chili Recipes

Time 1h

Yield 8

Number Of Ingredients 12

1 tablespoon vegetable oil
1 pound lean ground beef
1 large onion, diced
4 cloves garlic, crushed
½ teaspoon salt
¼ cup chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 ½ cups water
4 (15 ounce) cans kidney beans, drained
1 (28 ounce) can crushed tomatoes
2 tablespoons tomato paste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
  • Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
  • Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

COWBOY STEAK CHILI IN A CROCK POT

Cowboy Steak Chili in a Crock Pot image

While searching for an authentic Texas Style Chili, I discovered this recipe from http://recipes.suite101.com/article.cfm/cowboy_steak_chili. There are so many chili recipes with many variations for all types of taste buds, but this one really knocked my socks off. While the chili recipe above will stand up even if all you add is chili powder, this mix will give it more complex depth of flavor. The idea comes from Cowboy Steak, where the essential "Cowboy" element is ground coffee. Was this the result of a creative campfire cook. Or some happy chuck wagon mistake? You can also use this seasoning to make Cowboy Steak. If you do, it is traditional to add onion powder and garlic powder to the mix. You may want to mix up enough to use later as a dry rub for ribs or chops or even chicken. If you do, bloom the mixture just before using. The only change I made was to cook the chili for 8 hours on low in the crock pot before serving. I truly believe that one of the secrets to good chili is a looooooonnnnngggg cooking time. YEEHAA

Time 8h30m

Yield 12 cups, 10-12 serving(s)

Number Of Ingredients 22

1 lb sirloin steak, cubed bite-size
4 slices bacon (or 3 Tbsp vegetable oil)
1 lb chorizo sausage (or ground pork)
2 medium onions, chopped
1 bell pepper, seeded and chopped
2 celery ribs, chopped
4 garlic cloves, smashed
1 (4 ounce) can diced green chilies
2 (16 ounce) cans kidney beans, drained and rinsed
1 (16 ounce) can corn (optional)
1 (16 ounce) bottle dark beer or 1 (16 ounce) bottle ale
1 (28 ounce) can chopped tomatoes
3 tablespoons chili powder
1 tablespoon coffee beans, dark freshly finely ground
1 tablespoon paprika
1 tablespoon ground cumin
1 tablespoon brown sugar
1/2 teaspoon salt
1/2 teaspoon dry mustard
1/2 teaspoon ground coriander
1/2 teaspoon fresh ground black pepper
1/4 teaspoon cayenne (or to taste)

Steps:

  • Turn the crock pot on to low.
  • Prepare the Cowboy Steak Seasoning following the separate recipe posting.
  • Roll cubed steak around in the seasoning mix until they are thoroughly coated.
  • In a large, heavy fry pan over medium high heat, brown off the bacon (if using) until crisp.
  • Remove and drain on paper towels or clean newspaper, reserving the drippings.
  • Brown the coated cubes of steak in the bacon drippings (or oil), working in batches if necessary.
  • Transfer browned steak to the crock pot.
  • Add the chorizo or pork and cook it down, stirring, for about 5 minutes.
  • Transfer the chorizo or pork to the crock pot.
  • Add all the "aromatics" to the fry pan and sweat them down, stirring frequently, about 5 minutes.
  • Transfer them to the crock pot.
  • Stir in all the "other good stuff" and the reserved bacon to the crock pot.
  • If there's not enough liquid to cover, add some beef stock or more beer. Put the lid on. Cook for @ 7 hours and then give it a taste and adjust the seasoning if needed and let it simmer at least another hour. The longer the better!

INSTANT POT BEEF CHILI RECIPE BY TASTY

Instant Pot Beef Chili Recipe by Tasty image

Classic chili comes together in under an hour in the Instant Pot. Use the sauté function to brown the aromatics and meat, then pressure cook to meld and build that long-simmered flavor. No chili is complete without the toppings--we love sour cream, shredded cheese, and cilantro!

Provided by Tasty

Categories     Dinner

Time 50m

Yield 4 servings

Number Of Ingredients 17

1 tablespoon olive oil
1 medium yellow onion, diced
3 cloves garlic, minced
1 jalapeño, seeded and minced
1 lb ground beef
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon chili powder
¼ cup tomato paste
1 can whole peeled tomato
1 can kidney bean, drained and rinsed
1 ½ cups chicken stock
shredded cheddar cheese, for serving
fresh cilantro, roughly chopped, for serving
sour cream, for serving

Steps:

  • Set the Instant Pot to sauté and add the olive oil. Once the oil begins to shimmer, add the onion and cook, stirring often, until starting to soften, about 5 minutes. Add the garlic and jalapeño and cook, stirring frequently, until aromatic, 1 minute.
  • Add the ground beef and cook, breaking up with a wooden spoon, until browned and cooked through, about 7 minutes. Add the salt, pepper, cumin, paprika, chili powder, and tomato paste and cook, stirring constantly, until combined, 1 minute.
  • Add the tomatoes and use a potato masher to break up, then add the kidney beans and chicken stock. Place the lid on the Instant Pot and set to pressure cook on high for 20 minutes. Once the timer goes off, set the Instant Pot to quick release.
  • Serve the chili with shredded cheddar cheese, cilantro, and sour cream.
  • Enjoy!

  • Heat the vegetable oil in the Instant Pot over Sauté mode set to high until the oil shimmers (medium-high heat in a stovetop pressure cooker). While the oil heats, sprinkle the beef cubes with 1½ teaspoons salt and 3/4 teaspoon fresh ground black pepper. Add a third of the beef in a loose single layer and sear until well browned on one side, about 3 minutes. (Don’t crowd the pot or the beef will steam, not brown). Transfer the browned beef to a bowl, add half of the remaining beef to the pot, and sear until browned on one side, about 3 more minutes. Transfer the browned beef to the bowl. Add the rest of the beef to the pot and sear until browned on one side, about 3 more minutes. Transfer the browned beef to the bowl.
  • Saute the aromatics, toast the spices, deglaze the pan with broth: Add the onion, garlic, and jalapeño to the pot, and sprinkle with 1/2 teaspoon salt. Sauté until the onions soften, about 5 minutes, scraping the bottom of the pot occasionally to loosen any browned bits of beef. Make a hole in the middle of the onions and add the chili powder, cumin, oregano, and brown sugar. Cook for one minute, or until you smell the chili powder toasting, then stir the spices into the onions. Add the beef broth to the pot, bring to a simmer, and simmer for 1 minute. Scrape the bottom of the pot again to release any browned onions or spices.
  • Stir everything into the pot: Add the beef and any juices in the bowl to the Instant Pot, then stir to coat the beef with the spices. Stir in the black beans and chopped green chilies. Spread the diced tomatoes over the top of the stew, but don’t stir.
  • Pressure cook the chili for 12 minutes with a natural pressure release: Lock the lid on the pressure cooker. Cook at high pressure for 12 minutes in an electric pressure cooker (“Manual” or “Pressure Cook” mode in an Instant Pot), or for 10 minutes in a stovetop PC. Let the pressure come down naturally, about 30 more minutes. (If you’re in a hurry, you can quick release any remaining pressure after 20 minutes.) Remove the lid, tilting it away from you to avoid the hot steam.
