PARMESAN-GARLIC CHICKEN WINGS

2 lemons, plus wedges for serving
1 head garlic, cloves smashed and peeled
1/2 cup olive oil, plus more for the grill
1/2 cup packed fresh basil, plus 2 large sprigs
5 large sprigs oregano, halved
8 to 10 sprigs thyme, halved
Kosher salt and freshly ground pepper
5 pounds chicken wings
4 tablespoons unsalted butter, at room temperature
1/4 cup grated parmesan cheese

Steps:

  • Grate the zest of 1 lemon and set aside; juice both lemons. Combine the garlic and olive oil in a large microwave-safe bowl and microwave until the garlic starts sizzling, 1 to 2 minutes; let cool. Add the lemon juice, herb sprigs, 1 teaspoon each salt and pepper, and the chicken wings. Using your hands, rub the wings with the oil mixture; firmly press the wings down, making sure they are covered with some of the herbs and garlic. Cover and refrigerate at least 4 hours or overnight, stirring once or twice.
  • Meanwhile, pulse the butter, basil leaves, lemon zest and 1/2 teaspoon each salt and pepper in a mini food processor until combined. Cover and refrigerate until ready to use.
  • Preheat a grill to medium high and prepare for indirect grilling: On a charcoal grill, bank the coals to one side; on a gas grill, turn off half the burners. Remove the basil butter from the refrigerator. Remove the wings from the marinade. Brush the grill grates with olive oil and place the wings on the cooler side of the grill (indirect heat). Cover the grill and cook, turning the wings once, until almost completely cooked through and the skin is beginning to crisp, about 30 minutes. Move to direct heat and grill, turning often, until the skin is crisp and lightly charred, 10 to 15 more minutes.
  • Transfer the wings to a large bowl. Add the basil butter and toss to coat. Add the parmesan and season with salt and pepper; toss again. Serve with lemon wedges.

6 cups neutral oil, plus more if needed, for frying
10 pounds chicken wings, split into flats and drummettes
2 teaspoons kosher salt
1 teaspoon freshly cracked black pepper
Crudite, for serving
Ranch dressing, for serving
1 cup (2 sticks) unsalted butter, melted
1/2 cup honey
2 tablespoons lemon juice plus lemon wedges, for serving, optional
2 tablespoons lemon pepper seasoning
2 tablespoons chopped fresh parsley, plus more for serving, optional
1/2 cup hot pepper hot sauce, such as Frank's
4 tablespoons unsalted butter
1 teaspoon Worcestershire sauce
1 teaspoon cracked black pepper
1 teaspoon fine kosher salt
1/2 teaspoon garlic powder
4 tablespoons butter, melted
1/2 cup grated Parmesan cheese
2 teaspoons garlic powder
Half of a 1-ounce envelope dried ranch seasoning

Steps:

  • For the wings: Heat the oil in a large (5- to 6-quart) deep heavy pot until a deep-fry thermometer registers 380 degrees F.
  • Sprinkle the wings with the salt and pepper. Just before the oil reaches 380 degrees, pat dry 6 or 7 wings, carefully lower them into the oil and fry, stirring occasionally, until cooked through, golden and crisp, 8 to 10 minutes depending on the size of the wings. With a slotted spoon, transfer the wings to paper towels to drain. Continuing to work in batches of 6 or 7, pat dry and fry the remaining wings in the same manner, returning the oil to 380 degrees F and replenishing some of the oil if needed between batches.
  • For the honey-lemon pepper sauce: Combine the butter, honey, lemon juice, lemon pepper seasoning and parsley in a large bowl. Add a third of the wings and toss to coat. Garnish with lemon wedges and chopped parsley if desired.
  • For the Buffalo sauce: Combine the hot sauce, butter, Worcestershire sauce, pepper, salt and garlic powder in another large bowl. Add a third of the wings and toss to coat.
  • For the garlic-Parmesan-ranch topping: Put the butter in a large bowl. Combine the Parmesan, garlic powder and ranch seasoning in a separate large bowl. Toss the remaining wings in the butter first, then in the Parmesan mix.
  • Serve with crudite and ranch dressing on the side.

20-28 Fresh whole chicken wings
1 Lemon
1/3 cup dry white wine
1/3 cup olive oil
3 tbsp brown sugar
1 sprig fresh rosemary
1 sprig fresh thyme
4 cloves garlic minced
1 cup butter
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp fresh ground black pepper
Finely shredded Parmesan cheese
Ranch dressing

Steps:

  • Night before: Marinade: Remove tips from chicken wings and reserve for future use for stock. Combine juice from one lemon w/ wine, oil oil, brown sugar. Strip leaves from rosemary and thyme and add along with minced garlic to marinade. Put wings and marinade in a plastic bag and refrigerate overnight. Sauce: Melt butter and add garlic powder, onion power, and pepper. Refrigerate sauce mixture. At the game: In a small saucepan heat sauce on the grill. Then arrange marinated wings and grill, turning frequently, until almost done (20-25 minutes). Dip each wing in melted sauce, return to grill, and sprinkle liberally with Parmesan cheese. Once the cheese is melted (15-30 seconds) turn and sprinkle second size with cheese and serve once melted. Serve with ranch dressing for dipping and plenty of napkins.

1 pound chicken wings, cut into segments, tips removed and discarded
1 tablespoon salt
1 tablespoon freshly cracked black pepper
2 tablespoons soy sauce
1/4 cup honey
2 teaspoons lime zest
3 tablespoons lime juice, from 1 lime
1/4 cup orange juice, from 1/2 orange
1 tablespoon freshly grated ginger
1 teaspoon chili garlic paste
1/2 teaspoon sesame oil
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon granulated garlic
1 tablespoon oyster sauce

Steps:

  • For the wings at home:
  • Preheat the oven to 350 degrees F.
  • Season the wings with salt and pepper. Arrange the chicken wings on a baking sheet in a single layer. Put in the preheated oven and cook for 45 minutes.
  • Remove the wings from the oven to a bowl and allow to cool. Cover and refrigerate until ready to finish at the event on the barbecue.
  • For the Asian sauce at home:
  • Combine all of the ingredients in a resealable gallon-size plastic bag and combine well.
  • For the wings tailgaiting:
  • Preheat a grill to 350 degrees F, prepared for indirect heat. Add all the wings and cook for 10 to 15 minutes to reheat and get some grill marks, turning after 7 minutes. Remove the wings from the grill to a serving bowl. Add the sauce and toss to combine.

The trick to keeping these oven-baked chicken wings crispy, is parboiling the wings in a flavorful liquid, which helps season the chicken and produce a surface texture in the oven that your guests will swear came straight out of a deep fryer.

3 quarts cold water
⅓ cup balsamic vinegar
¼ cup salt
1 bay leaf
1 teaspoon dried thyme
1 teaspoon dried oregano
1 teaspoon dried rosemary
8 cloves garlic, minced
1 pinch salt
3 tablespoons olive oil, or as needed
1 tablespoon freshly ground black pepper
2 teaspoons red pepper flakes, or to taste
4 pounds chicken wings, separated at joints, tips discarded
2 tablespoons fine bread crumbs
1 cup finely grated Parmigiano-Reggiano cheese, divided

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and coat foil with cooking spray.
  • Combine water, vinegar, 1/4 cup salt, bay leaf, thyme, oregano, and rosemary in a large stockpot and bring to a boil. Add chicken wings, return to a boil, and cook for 15 minutes. Remove chicken wings with a slotted spoon to a cooling rack and allow to dry for 15 minutes.
  • Mash garlic and a pinch of salt together in a mortar and pestle until smooth.
  • Combine mashed garlic, olive oil, black pepper, and red pepper flakes in a large bowl. Add chicken wings and bread crumbs; toss to coat. Sprinkle with 1/2 cup Parmigiano-Reggiano cheese. Transfer to the prepared baking sheet and sprinkle with remaining 1/2 cup Parmigiano-Reggiano cheese.
  • Bake in the preheated oven until browned, 20 to 25 minutes.

Another military wife I know shared this delicious recipe with me. Sherry originally found this recipe in an issue of Taste of Home. This is my adaptation of her version. I always have a bag of frozen wings in the freezer for last minute guests and this recipe is great for using them, since no thawing is required.

1 cup grated parmesan cheese
1 teaspoon salt, to taste
1 teaspoon dried parsley flakes
1 teaspoon paprika
1/4 teaspoon garlic powder
1/4 teaspoon black pepper
20 frozen chicken wings, & drummettes, unthawed
1/2 cup butter, melted (1 stick)

Steps:

  • Combine first 6 ingredients (cheese through pepper).
  • Set the melted butter in a bowl and dip the chicken wing pieces first into the butter, then into the cheese mixture to coat.
  • Set on a foil lined baking sheet with edges.
  • Bake in a preheated oven at 350 F for about 45 minutes or until fully cooked.
  • NOTE: To use raw chicken wings- you will need about 2 pounds of whole fresh wings, cut into 3 pieces each and discarding the wing tips.
