INSTANT POT® HAWAII-STYLE SHOYU CHICKEN DRUMSTICKS

Bring the islands home to your family with this very Hawaiian dish. The flavor is authentic and super easy with the Instant Pot®. Serve with rice because the sauce is fantastic over it!

1 cup soy sauce
½ cup water
½ cup brown sugar
¼ cup honey
2 tablespoons mirin (Japanese sweet wine)
1 teaspoon ground ginger
2 cloves garlic, minced
1 pinch red pepper flakes
1 ½ pounds chicken drumsticks
2 tablespoons cold water
1 tablespoon potato starch

Steps:

  • Combine soy sauce, 1/2 cup water, brown sugar, honey, mirin, ginger, garlic, and red pepper flakes in a large bowl to make the sauce.
  • Place drumsticks into a multi-functional pressure cooker (such as Instant Pot®) and pour sauce on top. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 20 minutes. Remove drumsticks and set aside.
  • Switch to Saute function and bring sauce to a boil. Mix 2 tablespoons cold water and potato starch in a small bowl to make a thick slurry. Quickly stir mixture into the sauce and continue stirring until sauce has thickened to your preferred consistency. Serve drumsticks with sauce.

Shoyu is a term most people are not not familiar with, but it effectively means 'soy sauce.' After inquiring at a specialty grocer, I learned there are five different types of shoyu. For this recipe I used a low-sodium soy sauce. For this recipe I bought a pineapple and cut enough slices and then blended the pineapple chunks until I got enough liquid for 1/2 cup of juice.

½ pineapple, peeled and sliced, or as needed
1 cup low-sodium soy sauce
2 tablespoons brown sugar
1 piece fresh ginger root, minced
2 cloves garlic, minced
2 pounds skinless, boneless chicken breasts, cut into pieces

Steps:

  • In a high-powered blender (such as Vitamix®), blend pineapple slices to create 1/2 cup pureed pineapple.
  • Combine 1/2 cup pureed pineapple, soy sauce, brown sugar, ginger, and garlic in a multi-functional pressure cooker (such as Instant Pot®). Place chicken breast on top. Turn on Saute function and cook for about 8 minutes, stirring occasionally. Cancel saute function. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.

Shoyu Chicken is a popular Hawaiian dish. It is often served with rice. The word shoyu is Japanese for soy sauce. Let the chicken soak in the marinade for at least an hour, the longer the better.

1 cup soy sauce
1 cup brown sugar
1 cup water
4 cloves garlic, minced
1 onion, chopped
1 tablespoon grated fresh ginger root
1 tablespoon ground black pepper
1 tablespoon dried oregano
1 teaspoon crushed red pepper flakes
1 teaspoon ground cayenne pepper
1 teaspoon ground paprika
5 pounds skinless chicken thighs

Steps:

  • Whisk together the soy sauce, brown sugar, water, garlic, onion, ginger, black pepper, oregano, red pepper flakes, cayenne pepper, and paprika in a large glass or ceramic bowl. Add the chicken thighs, and toss to evenly coat. Cover the bowl with plastic wrap, and marinate the chicken in the refrigerator for at least 1 hour.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the chicken thighs from the marinade. Discard the remaining marinade. Grill the chicken thighs on the preheated grill until cooked through, about 15 minutes per side.

  • To make the sauce, combine the soy sauce, sugar, apple cider vinegar, garlic puree, Worcestershire sauce, and ginger. Set aside.
  • Set your pressure cooker to brown and allow to heat up. Add the sesame oil and when it is hot, add the chicken. Allow to brown for about a minute or so on each side just until it starts to turn golden brown.
  • Add the sauce to the browned chicken and stir to coat. Set the pressure cooker to high pressure and set the time to 8 minutes. It will take about 5 minutes to get to pressure. Once done cooking, so a quick release of the pressure. Remove the chicken, set aside, and tent with foil to keep warm.
  • In a small dish, combine corn starch with 1 tablespoon of water to make a slurry. With the lid off, set the pressure cooker to saute and add the cornstarch slurry. Whisk constantly and cook until it thickens, about 5 minutes.
