Instant Pot Pepper Jack Chicken is a delicious adaptation of our VERY popular Crock Pot Pepper Jack Chicken recipe. This low carb recipe is the perfect flavor-packed one-pot meal!

3.5 lbs boneless skinless chicken thighs or breasts
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoon cumin
salt and pepper (to taste)
10 oz frozen whole green beans
1 bell pepper (seeded and sliced)
8 oz fresh mushrooms (sliced)
1/4 Cup Butter
10 Slices Pepper Jack Cheese
1 cup Chicken Broth

Steps:

  • Place chicken in the bottom of a 6 quart electric pressure cooker.
  • Season chicken with garlic, cumin and salt and pepper.
  • Add green beans, peppers, mushrooms, butter and broth.
  • Seal the lid, close the vent and set the electric pressure cooker to cook under high pressure for 10 minutes.
  • Quick release if desired.
  • Remove chicken and shred with two forks or in a mixer. Then return to pot and stir well.
  • Layer cheese over top and wait a few minutes for the cheese to melt.
  • Once cheese melts (1-2 minutes) serve in bowls.

6 chicken thighs
2 green bell peppers, chopped
1 large yellow onion, chopped
½ cup soy sauce
¼ cup brown sugar
2 tablespoons honey
3 cloves garlic, peeled
ground black pepper to taste

Steps:

  • Place chicken in the Instant Pot® and cook for 10 minutes on the 'Manual' setting. Release pressure naturally according to manufacturer's instructions.
  • Set the pot to 'Saute' and add green bell peppers, yellow onion, soy sauce, brown sugar, honey, garlic, and black pepper. Cook until most liquid is evaporated, vegetables are soft, and chicken is no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

With only 4 ingredients this chicken is super fast and easy! It has amazing flavor because of the Dr. Pepper and Sweet Baby Rays BBQ Sauce.

2 cups Dr. Pepper, divided
2 ½ pounds boneless, skinless chicken thighs, trimmed of excess fat
2 cups Sweet Baby Rays BBQ Sauce
⅛ tsp garlic salt

Steps:

  • Pour 1 cup of Dr. Pepper into bottom of Instant Pot.
  • Add chicken into bottom of Instant Pot.
  • In a bowl whisk together 1 cup of Dr. Pepper and 2 cups of BBQ sauce. Pour half of the mixture over the chicken and save the other half for later.
  • Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 12 minutes for fresh chicken or 15 minutes for frozen chicken. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid.
  • Use tongs to remove the chicken pieces and place on a cutting board. Shred the chicken.
  • Place the chicken in a clean bowl. Sprinkle in the garlic salt. Drizzle in the remaining BBQ sauce mixture. Toss well. If it is a little dry add in some of the liquid from the Instant Pot.
  • Serve and enjoy!

1 onion, sliced
2 (14 ounce) cans coconut milk
2 lbs cubed chicken breasts

1 green bell pepper, julienned
1 zucchini, julienned
2 cups fresh green beans, trimmed

Steps:

  • In your instant pot, saute curry paste with spices for 30 seconds, until fragrant.
  • Add onion and saute a couple of minutes.
  • And coconut milk, chicken, broth, fish sauce, and lime juice. Seal cooker, bring to pressure, and cook 4 minutes.
  • Do a quick release. Add bell pepper, zucchini, green beans, and bamboo shoots. Saute for about 5 minutes or until veggies reach your desired level of tenderness.
  • Add lime leaves and basil and serve with rice.

  • To begin, select “SAUTÉ” on the instant pot and wait until the pot reads “HOT”. Pat the chicken drumsticks dry and season them with the paprika, turmeric and a few pinches of salt and pepper. Add the ghee to the hot instant pot and sear the chicken for 3-5 minutes on each side to brown the chicken. While the chicken sears, add the onion, peppers (bell and habanero) and garlic to a food processor and pulse until the vegetables are finely minced almost puréed. Remove the chicken from the pot and set them aside.
  • Now, add the puréed vegetables along with the tomato paste, coconut aminos, almond butter, and garlic seasoning to the instant pot and sauté (stirring frequently) until the puréed vegetables are just about cooked through and the liquid is almost all dried up, about 5-7 minutes. Season the mixture with a couple pinches of salt to taste. Then stir in the bone broth and 2 tablespoons of olive oil to deglaze the pan.
  • Return the chicken to the instant pot, cover and select “MANUAL”. Adjust the time to 5 minutes. When the alarm on the instant pot goes off, open the steam valve and release the steam from the pot. Stir the sauce, cover the pot, select “MEAT/STEW” and adjust the time to 7 minutes. When the alarm goes off, open the steam valve and allow all the steam to escape. Now, if the sauce is still a bit watery, select “SAUTÉ” on the instant pot and let the it simmer for a few minutes to thicken the sauce.
