Instant Pot Lemon Chicken With Garlic and Olives image

Chicken thighs sauté in the Instant Pot until the skin becomes crispy before slow-cooking with olives, lemon slices, anchovies, capers, and herbs.

1 tablespoon extra virgin olive oil, plus more as needed
2 pounds bone-in, skin-on chicken thighs, patted dry (4 to 6, depending on the size)
3/4 teaspoon kosher salt, plus more if needed
1/4 teaspoon freshly ground black pepper ½ cup chicken stock, preferably homemade
1/3 cup mixed pitted olives 4 thin slices lemon
4 garlic cloves, thinly sliced
2 anchovy fillets, chopped (optional) 1 tablespoon drained capers 1 teaspoon fresh rosemary needles, chopped
1 teaspoon fresh thyme leaves, chopped, plus more for garnish
1/2 teaspoon fennel seeds, lightly crushed with a mortar and pestle or with the flat side of a knife

Steps:

  • Using the sauté function of your pressure cooker (set on high if possible), heat the oil in the pressure cooker pot. Season the chicken with the salt and pepper and arrange in a single layer, skinside down, on the bottom of the pot. (Work in batches if they don't fit in a single layer, adding more oil for each batch.) Cook, without moving, until well browned, about 8 minutes. (You only have to brown it on one side).
  • Flip the chicken, pour in the stock, and scatter with the olives, lemon slices, garlic, anchovies (if using), capers, rosemary, thyme, and fennel seeds.
  • Lock the lid into place and cook on high pressure for 15 minutes. Let the pressure naturally release.
  • Discard the lemon slices and transfer the chicken to serving plates; keep loosely tented with foil. Using the sauté function, bring the sauce to a simmer and cook until thickened slightly, 3 to 5 minutes. Taste and adjust the salt and pepper if necessary. Spoon the sauce over the chicken and serve garnished with thyme.
  • Cook it slow: After step 2, slow cook on high for 3 to 4 hours or low for 4 to 5 hours.

8 bone-in, skin-on chicken thighs (about 3 pounds)
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
3 cloves garlic, thinly sliced
1 cup pitted kalamata olives
2 tablespoons capers
2 tablespoons white wine vinegar
1 1/2 teaspoons dried oregano
1 cup whole-milk Greek yogurt
1/4 cup fresh flat-leaf parsley, roughly chopped
2 tablespoons fresh mint leaves, roughly chopped
1 teaspoon lemon zest plus 1 tablespoon lemon juice

Steps:

  • Set a 6-quart Instant Pot® to high saute (see Cook's Note) and allow it to heat up for 5 minutes. Meanwhile, liberally sprinkle the chicken on both sides with salt and pepper. Add the oil to the pot. Add half of the chicken skin-side down and cook until the skin is deeply browned, 6 to 8 minutes. Flip the chicken and cook until the second side is deeply browned, 4 to 6 minutes. Transfer to a plate. Repeat with the remaining chicken.
  • Add the garlic to the pot and cook, stirring constantly, until lightly browned in spots, about 1 minute. Add the olives, capers, vinegar, oregano and 1/2 cup water and stir to combine, using a wooden spoon or spatula to scrape up any browned bits at the bottom of the pot. Turn off the heat and add the rack on top of the olive mixture with the handles facing up. Nestle the chicken on the rack skin-side up.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 10 minutes.
  • Meanwhile, make the yogurt sauce. Add the yogurt, parsley, mint, lemon zest and juice and a large pinch of salt and pepper to a medium bowl and whisk to combine. Season with additional salt and pepper if needed. Set aside.
  • After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete. Being careful of any remaining steam, unlock and remove the lid. Remove the chicken to a platter and use a slotted spoon to scoop the olive mixture on top and around the chicken. Cover loosely with aluminum foil to keep warm.
  • Remove the rack and set the pot to normal saute. Simmer the sauce until slightly thickened and reduced by half, 6 to 8 minutes.
  • Spoon the sauce on top of the chicken and serve with the yogurt sauce on the side.

2 ½ pounds chicken breasts
1 pinch sea salt, or to taste
1 pinch ground black pepper, or to taste
garlic powder, or to taste
1 pinch paprika, or to taste
3 tablespoons olive oil
½ cup chicken broth
1 tablespoon Italian seasoning
1 fresh lemon
3 tablespoons butter
½ onion, chopped
2 teaspoons minced garlic
⅛ cup heavy whipping cream
2 tablespoons water
1 ½ tablespoons cornstarch

Steps:

  • Season both sides of chicken breasts with salt, black pepper, garlic powder, and paprika. Cut the chicken into smaller pieces.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil. Brown chicken in the hot oil for about 3 minutes per side; you may need to do this in batches.
  • While chicken is cooking, combine broth, Italian seasoning, and zest of 1/2 the lemon in a measuring cup and set aside.
  • Transfer cooked chicken from the pot to a plate. Add butter, onion, and garlic and simmer for 1 minute. Deglaze the pot by squeezing in lemon juice and scraping the bottom of the pot using a wooden spoon. Turn off the pot. Add the broth mixture and return chicken breasts to the pot.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 7 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 2 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid.
  • Combine water and cornstarch in a small bowl and stir to dissolve.
  • Transfer chicken from the pot to a plate. Switch to Saute function. Stir cream into the juices in the pot. Slowly stir in enough of the cornstarch mixture to thicken the sauce. Return chicken to the pot and stir to coat with sauce.

8 chicken breast halves
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil
2 lemons
2 medium onions, Chopped
4 garlic cloves, Chopped
1 cup olive, pitted and halved (recipe says green, I would use black)
2 cups chicken broth
2 cups water
1 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes

Steps:

  • Season chicken with salt and pepper.
  • Heat 2 tbsp oil in large skillet, and quickly sear the chicken on both sides. Chicken should be golden brown. Remove the chicken from the skillet. Set aside.
  • Slice lemons thinly, and then cut slices in half.
  • If necessary, add the remaining oil to the pan. Fry the onion and garlic until soft, but not brown.
  • Add the lemons, olives, broth, and water. Simmer for 10 minutes.
  • Place the chicken in the skillet on top of the veggies and sprinkle with thyme and red pepper.
  • Cover and simmer until chicken is cooked, about 15 minutes.
