SUPER EASY, CREAMY, KETO VANILLA ICE CREAM
Rich and creamy, this very low carb vanilla ice cream recipe is delicious and keto-friendly.

- Before you start mixing the ingredients, put the ice cream churn canister and paddle in the freezer. Your ice cream will churn much faster if the equipment is cold when you start.
- Combine heavy cream, sweetener, egg yolks, vanilla and MCT oil (or liquor, if using - see Recipe Notes) in a blender and mix well. I used a stick blender but a traditional blender works just fine, too.
- Pour the mix into the cold canister.
- Churn the ice cream according to the manufacturer's instructions. If you're using the same model as me, here's what I did! Place the canister in the churning bucket and attach the lid to the paddle and canister. Make sure everything is lined up correctly, then place the motor on top, turning the latches on the sides to lock it in place. Fill the bucket halfway with ice - I just used ice cubes from my freezer's ice maker. Top with a layer of ice cream salt. Fill to the top of the canister with ice and another layer of salt. Plug the ice cream churn in and let it go to work!
- After 15 minutes, unplug the churn and check the ice cream. If it's not the right texture yet, put the lid back on and churn again until desired consistency is reached.
- Ice cream will be the perfect soft serve texture straight out of the churn.

- Make the sweetened condensed milk according to the directions and let cool to room temperature. Whisk in the heavy cream, powdered sweetener, vodka, vanilla extract, and salt.
- Taste the mixture and adjust sweetener to taste. You can use additional Bocha Sweet or allulose here but because it's granular, you will need to whisk for a while to dissolve it properly.
- Chill the mixture at least one hour and up to overnight, then pour into the canister of an ice cream maker and churn according to manufacturer's directions. If you have the kind of ice cream maker that requires the canister to be frozen first, don't forget to do that!
- Transfer to an airtight container and freeze until firm, at least 4 hours.

PERFECT LOW CARB SUGAR FREE (TRUVIA) VANILLA ICE CREAM
I love ice cream, especially home made, and I wanted one i could still eat on low carb. So I made this one. I was afraid it wouldnt turn out but it was Perfect!!! So good. Its very sweet. I used 5 tblsp and thought it was soo good but if you dont like your ice cream real sweet then you may but down on the truvia just a tad.

- Beat eggs with a mixer or by hand until frothy.
- Add truvia a little at a time until mixture becomes thicker.
- Add all remaining ingredients and mix well (not TOO much, the cream will start to form a frothy top layer).
- Process per your ice cream makers instructions, as you would with any home made ice cream. Delish!
