INSTANT POT EGG CASSEROLE BITES



Instant Pot Egg Casserole Bites image

These bite-size Instant Pot® egg casserole bites have everything that's in your favorite breakfast casserole, tater tots included. Serve with hot sauce and ketchup for dipping.

14 frozen tater tots, thawed (about 1 cup)
1 scallion, thinly sliced
1/3 cup shredded sharp Cheddar
4 large eggs
1/4 cup heavy cream
Pinch cayenne pepper
Kosher salt
Hot sauce and/or ketchup, for serving

Steps:

  • Place 2 tater tots in each cup of the egg bites mold, along with the sliced scallion and cheese. Gently whisk the eggs together with the cream, cayenne and 1/2 teaspoon salt in a medium bowl or medium liquid measuring cup until well combined (but avoid creating any foam). Pour the custard over the filling in each of the cups. Cover the mold tightly with aluminum foil, then place on the rack.
  • Add 1 1/2 cups of water to the Instant Pot®, then carefully lower the rack using the handles into the pot. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure-cook on low for 7 minutes (see Cook's Note).
  • After the pressure-cook cycle is complete, let the pressure release naturally for 10 minutes, then follow the manufacturer's guide for quick release of the remaining pressure. Being careful of any remaining steam, unlock and remove the lid. Carefully remove the tray and let stand 5 minutes before popping the mini egg bites out of the pan. Run a small offset spatula around the edge of mold if there's any sticking. Serve warm with hot sauce or ketchup.

6 eggs
1 cup chopped ham
2 cups frozen hash browns
1 cup cheddar cheese, shredded and divided
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon black pepper
1 teaspoon salt
1 cup water

Steps:

  • First, spray your cooking dish with non-stick spray
  • In a large bowl, whisk eggs, onion powder, garlic powder, black pepper, and salt.
  • Mix ham, hash browns, and 1/2 cheese into egg mixture until well combined.
  • Next you'll pour the mixture into the prepared bowl.
  • Top with remaining cheese.
  • Pour water into the bottom of Instant Pot insert and place trivet into the pot.
  • Place your casserole dish into Instant Pot and set on top of the trivet.
  • Place the lid on the Instant Pot and set to seal.
  • Set to manual for 15 minutes.
  • Allow to NPR (natural pressure release) for 5 minutes.
  • Remove from Instant Pot carefully (use silicone mitts if needed) and serve.
  • If you'd like to brown the casserole a little, place it in your oven under broil for about 3 minutes to get a brown topping!

1 (2 pound) frozen whole ham
1 (16 ounce) can crushed pineapple
¼ cup dark brown sugar
2 tablespoons maple syrup
1 tablespoon cornstarch
2 tablespoons water, or as needed

Steps:

  • Place ham on a trivet and set it inside a multi-functional pressure cooker (such as Instant Pot®). Pour crushed pineapple over ham. Sprinkle brown sugar and drizzle maple syrup on top. Secure the lid with vent closed.
  • Select high pressure according to manufacturer's instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove ham and trivet. Cut ham into slices and place on a plate.
  • Select Saute setting on the pressure cooker. Mix cornstarch with water until smooth. Stir mixture into the pot, bring to a boil, and stir until thickened. Pour sauce over the ham.

1 cup milk
1 cup ham, chopped
1 cup cheese, shredded
1 cup chopped tomato
1/2 teaspoon salt

Steps:

  • Mix everything together and put in a 9x13 pan.
  • Bake at 350 degrees for 35 to 45 minutes or until knife inserted in center comes out clean.

Steps:

  • Preheat oven to 375 degrees F.

  • Add minced garlic and sauté for 1 more minute; remove from heat.
  • In a large mixing bowl, whisk together eggs, half and half, salt and pepper until well combined.
  • Fold in 3/4 cup Swiss cheese, 3/4 cup cheddar cheese, ham and cooked onion.
  • Pour mixture into thawed pie crust and place on a baking sheet.
  • Top quiche with remaining cheese.
  • Bake for 40-45 minutes, or until set.
  • Garnish with fresh parsley, if desired.
