Curry-Creamed Spinach and Tofu (or Pork) With Potato Crust image

Coconut milk and yogurt lighten creamed spinach and make it more flavorful, and the addition of tofu or pork turns it into a main course. A crust of thinly sliced potatoes adds a welcome if nontraditional crust.

3 pounds spinach, trimmed
2 tablespoon butter
2 teaspoons garam masala or curry powder
¼ teaspoon nutmeg
2 cups coconut milk
½ cup yogurt
1 brick firm or extra-firm tofu, cut into ½-inch cubes, or 12 ounces thinly sliced pork shoulder
1 large russet potato, thinly sliced (with a mandoline if you have one)
2 tablespoons olive oil
Black pepper

Steps:

  • Heat the oven to 425. Bring a large pot of water to boil, and salt it. When the water is boiling, add the spinach, and cook for about a minute. Plunge the spinach into a large bowl of ice water, squeeze the moisture from the leaves and roughly chop them.
  • Put the butter and garam masala (or curry powder) and nutmeg in a large saucepan over medium heat. When the spices are fragrant, add the coconut milk, yogurt, spinach, tofu (or pork) and 1 teaspoon salt. Bring to a boil, and cook, stirring occasionally, until the spinach has absorbed much of the liquid; taste, and adjust the seasoning, and transfer to an ovenproof dish.
  • Toss the potato slices with the oil, and sprinkle with salt and pepper. Lay them over the top of the spinach and tofu (or pork) without overlapping too much. Bake until the potatoes are golden and crisp, 25 to 35 minutes. Scoop into bowls, and serve.

1 lb lean pork, cut into 1-inch cubes
2 tablespoons butter
2 tablespoons onions, finely chopped
2 garlic cloves, finely chopped
1 teaspoon ground cinnamon
1/2 teaspoon chili powder
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon turmeric
2 tomatoes, seeded and chopped
2 teaspoons tomato puree
1/2 cup water
3 tablespoons coconut cream
1 green chili, seeded and sliced
1 teaspoon paprika
1 teaspoon salt

Steps:

  • Heat a pot and melt the butter.
  • Fry the onions and garlic for 3 minutes.
  • Add the cinnamon, chili powder,coriander, cumin and turmeric, stir and fry for 2 minutes.
  • Add the pork and cook for 3 minutes stirring to coat the meat with the spices.
  • Add the chopped tomato and puree with the water, mix well and add the chopped chili coconut cream and paprika.
  • Cover pot and cook on low heat till the meat is tender, approx 30 minutes.
  • Season with salt to taste.
  • Serve with rice and a vegetable curry for a complete meal.

water, to cook potato
2 tablespoons margarine (or butter)
1/4 cup all-purpose flour
2 cups milk
1/2 teaspoon onion salt
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon garlic powder (optional)
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 tablespoon grated parmesan cheese

Steps:

  • Cook potato in water in med. saucepan until tender. Drain and then coarsely mash.
  • Melt margarine in medium saucepan. Stir in flour until smooth. Slowly whisk in milk. Add next 4 ingredients. Heat and stir until boiling and thickened.
  • Stir in spinach. Turn potato into greased 2 quart (2 L) baking dish. Pour sauce on top. Poke randomly with spoon to allow some sauce down into potato.
  • Sprinkle with Parmesan cheese. Bake in 350°F (175°C) oven for 30 minutes until hot. Serves 6.

This is an easy curry recipe. You can eat it with rice, or you can use it as a samosa stuffing. After you make it, let the flavors marry a bit before eating.

3 lbs potatoes, peeled and diced
1/4 cup oil
2 teaspoons black mustard seeds
1 teaspoon cumin seed
1 -2 teaspoon minced garlic
10 ounces chopped spinach
1/2 teaspoon turmeric
1 -1 1/2 teaspoon cayenne powder
2 teaspoons salt
1 1/2 teaspoons curry powder
1/2 teaspoon garam masala
2 teaspoons lemon juice

Steps:

  • Steam or boil the potatoes in salted water until very tender.
  • Drain and set aside.
  • In a large dutch oven put the oil, mustard seeds, and cumin seeds.
  • Heat over high heat until the mustard seeds have popped for a few seconds.
  • Quickly stir in the garlic.
  • Reduce heat to medium.
  • Add the spinach (fresh or frozen) and stir-fry until tender, adding a couple Tablespoons of water if needed.
  • If the spinach is still half frozen, that doesn't matter, just add it anyway.
  • Once the spinach is cooked, stir in the turmeric, cayenne, salt, curry powder and garam masala.
  • When everything is well blended, add the cooked potatoes and mix until the spinach mixture is evenly distributed with the potatoes.
  • Turn off heat and sprinkle with lemon juice.
  • Gentle stir.
  • Instead of spinach, you can also make this with watercress or fenugreek (methi) leaves.

2 cups four cheese italian blend shredded cheese, divided
1 (16 ounce) jar prepared roasted garlic alfredo sauce, divided
1 cup finely chopped red bell pepper, drained on paper towels, divided
4 slices crispy bacon, crumbled plus two crispy strips crumbled for garnish
6 tablespoons butter, divided
1 shallot, minced
1/2 teaspoon minced garlic
2 tablespoons all-purpose flour
1 (10 ounce) package frozen spinach (thawed, drained and chopped)
1 cup prepared roasted garlic alfredo sauce
3/4 cup chicken broth, divided
1 pinch of grated nutmeg
sea salt and black pepper
4 center cut skinless salmon fillets

Steps:

  • Cook the Simply Potatoes® Traditional Mashed Potatoes according to package directions. Add in 1 cup of the four cheese Italian blend shredded cheese, 3 tablespoons of the Alfredo sauce, 1/2 cup of the red bell peppers and bacon; stir gently to combine. Set aside.
  • Meanwhile, heat a large skillet to medium; add 3 tablespoons of the butter, shallots and garlic to the pan and cook, stirring often until shallots and garlic are just tender, not browned (turn fire down if cooking too quickly). Add the flour and cook, stirring constantly for 1 minute. Add the spinach, 1 cup of Alfredo sauce, 1/2 cup chicken broth, nutmeg and sea salt and cracked black pepper to taste. Stir to combine; reduce heat to low and let simmer, stirring on occasion.
  • Meanwhile, coat a baking sheet with olive oil cooking spray. Preheat the oven to broil and set oven rack in mid-way position. Season the salmon filets with the sea salt and cracked black pepper to taste. Heat another large skillet to medium heat, add the remaining 3 tablespoons of butter to pan and let melt and then add the salmon filets and cook until golden brown on one side; about 5-7 minutes. Turn salmon and cook for 3 minutes more, until almost cooked through.
  • Remove the salmon filets to a baking sheet. Divide the potato mixture into 4 portions and mound the potatoes on top of each filet and pat down to make uniform. Divide the remaining cheese between each potato crusted salmon filet and sprinkle on top of potatoes. Broil the potato crusted salmon filets until the potatoes and cheese are bubbly and golden; about 3-5 minutes.
  • While the fish is in the oven, heat a small pan on low heat. Add the heavy cream and chicken broth into the jar of roasted garlic Alfredo sauce; shake well and add to pan to warm through.
  • To serve, ladle 1/4 of the spinach mixture on top of each of 4 plates. Top each plate with the potato crusted salmon filets and drizzle the cream sauce on top of potatoes and around the plate. Sprinkle with the reserved red peppers and bacon.

2 teaspoons ground cumin
1 teaspoon turmeric
1 (200 g) carton natural yoghurt
1 lemon, juiced
1 kg lean lamb fillets, diced
40 ml vegetable oil
2 onions, chopped
2 cloves garlic, crushed
2 1/2 cm fresh ginger, grated
1 kg potato, cut into 2.5 cm dice (I would use a red potato)
1 (410 g) can peeled crushed tomatoes
40 ml tomato paste
salt and pepper
1 bunch english spinach, trimmed and washed

Steps:

  • Combine the coriander, cumin, turmeric, yoghurt and lemon juice in a large bowl and add the lamb.
  • Mix well and cover.
  • Place in the fridge and marinate for at least 3 hours-overnight would be better.
  • heat the vegetable oil in a large saucepan over medium heat and fry the onion, garlic and ginger for 5 minutes or until soft.
  • Add the lamb (and the marinade) and the potatoes, crushed tomatoes and paste.
  • Season with salt and pepper, stir and bring to the boil.
  • Reduce the heat and simmer gently uncovered for 1-1 1/4 hours or until the lamb is very tender.
  • Check and adjust the seasonings if necessary.
  • Add the spinach and simmer for a further 3 or 4 minutes.
