2 pounds beef tips
1 teaspoon black pepper
2 (.87 oz) packages brown gravy mix
2 cups of beef broth
2 tablespoons oil (canola or olive oil)
1 medium onion chopped
3 large cloves garlic, minced
2 tablespoons Worcestershire sauce
1 (1 oz) package onion soup mix
8 ounce sliced mushrooms
1 can (10.5 oz) cream of mushroom soup
3 tablespoons cornstarch

Steps:

  • 1. Sprinkle pepper on your beef tips. Set aside. In a large bowl, whisk together beef broth and gravy packets. Set aside. 2. Set Instant Pot to sauté mode and add oil. Add beef tips and sauté until browned on all sides, about 3-5 minutes. Add onion, sauté for 3-4 minutes with beef. Add garlic, sautéing for 30 seconds, then turn off sauté mode. 3. Add Worcestershire sauce and onion soup mix to the instant pot, then pour in the gravy/beef broth mixture. Spread mushrooms on top of the beef tips. Then spread cream of mushroom soup in as even of a layer as you can on top of the mushrooms. 4. Seal the pressure cooker with the lid. Select Manual (or Pressure Cook button depending on your instant pot model) and cook on high pressure for 25 minutes. Don't forget, it will take about 10 minutes for the instant pot to come to pressure and then the timer to start counting down. 5. When the cook time finishes, let the pot sit undisturbed for a 20 minute natural release (meaning do not touch the instant pot for 20 minutes after it says it's done cooking). Then turn the steam release knob to Venting to release any remaining pressure and open the lid. 6. Stir the beef tips and the gravy. If you are happy with the thickness, you can serve it immediately. If you prefer a thicker gravy like me, use the cornstarch to make a slurry. 7. How to make a slurry: Place cornstarch in a small bowl. Add 2 tablespoons of broth/gravy from the instant pot into the cornstarch and stir. Continue adding gravy 1 tablespoon at a time until the slurry is smooth and a good consistency. Then stir the slurry into the instant pot, and stir really well. Let beef tips rest for 5 minutes and the gravy will thicken! 8. Serve as desired over mashed potatoes or egg noodles! Don't forget the buttered rolls to soak up the extra gravy!

1 beef top sirloin steak, cubed (1 pound)
1/2 teaspoon salt
1/4 teaspoon pepper
1/3 cup dry red wine or 1/3 cup beef broth
1/2 lb sliced baby portabella mushroom
1 small onion, halved and sliced
2 cups beef broth
1 tablespoon Worcestershire sauce
3 -4 tablespoons cornstarch
1/4 cup cold water
hot cooked mashed potatoes

Steps:

  • Select saute setting, and adjust for high heat, in a 6-qt. electric pressure cooker. Heat 2 teaspoons oil. Sprinkle beef with salt and pepper. Brown meat in batches, adding oil as needed. Transfer meat to a bowl. Add wine to cooker, stirring to loosen browned bits. Return beef to cooker; add mushrooms, onion, broth and Worcestershire sauce. Lock lid; make sure vent is closed. Select manual setting; adjust pressure to high, and set time for 15 minutes. When finished cooking, quick-release pressure according to manufacturer's directions.
  • Select saute setting, and adjust for high heat; bring liquid to a boil. In a small bowl, mix cornstarch and water until smooth; gradually stir into beef mixture. Cook and stir until sauce is thickened, 1-2 minutes. Serve with mashed potatoes. Yield: 4 servings.

1 tbsp olive oil
1 onion (finely diced)
1 lb well-marbled sirloin steak (cut into 1 inch pieces)
1 cup red wine
2 cups beef broth (warmed)
16 oz baby bella or crimini mushrooms (sliced)
1 1/2 lbs potatoes (cut into 1 inch cubes)
2 tbsp butter
2 tbsp sour cream
1 tsp salt
3 tbsp cornstarch
1 tbsp Worcestershire sauce (or Kitchen Bouquet/Gravymaster)
Chopped italian parsley for garnish (optional)

Steps:

  • Add olive oil to the Instant Pot. Using the display panel select the SAUTE function.
  • When oil gets hot, add meat and onions. Brown the meat on all sides, 4-5 minutes.
  • Add broth and wine to the pot and deglaze by using a wooden spoon to scrape the brown bits from the bottom of the pot.
  • Add mushrooms and stir to combine. Add a steam rack or riser on top of the mushrooms. (Use the one that came with your pot,)
  • Place potato cubes into a steamer basket and place basket on the steam rack or riser.
  • Turn the pot off by selecting CANCEL, then secure the lid, making sure the vent is closed.
  • Using the display panel select the MANUAL or PRESSURE COOK function*. Use the +/- keys and program the Instant Pot for 15 minutes.
  • When the time is up, quick-release the pressure.
  • Carefully remove the potatoes to a bowl. Add butter, sour cream and salt and mash to desired consistency.
  • Remove steam rack or riser and stir in worcestershire.
  • In a small bowl, mix together 1/2 cup of pot liquid and cornstarch. Stir into the pot until thickened, returning to SAUTE mode as needed. Adjust seasonings.
  • Serve beef and mushrooms over mashed potatoes. Garnish with chopped italian parsley (optional)

1 lb beef tips or 1 lb lean stew meat
1 (6 1/2 ounce) can sliced mushrooms, drained
1 (10 3/4 ounce) can cream of mushroom soup
1 (2 ounce) package onion soup mix or 1 (2 ounce) package onion and mushroom soup mix
2 tablespoons olive oil
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/2 teaspoon onion powder
1/2-1 teaspoon salt
1 soup can water

Steps:

  • Mix salt, pepper, onion powder and garlic powder together and sprinkle over stew meat. Stir to coat.
  • Heat oil in bottom of pressure cooker until barely smoking. Add meat and sear quickly, keeping heat up enough to form a nice crust on all sides of the meat. Add sliced mushrooms about halfway through, stirring frequently to prevent sticking.
  • When meat is nicely browned, mix mushroom soup, water and soup mix and pour over meat. Stir to combine.
  • Cover pressure cooker and slowly bring to pressure to avoid scorching the gravy. Cook for 20 minutes. Use quick release method to depressurize cooker.
  • Serve over hot rice.

The original stovetop pressure cooker recipe from November 2000 Southern Living (http://www.food.com/recipe/sl-roast-with-onion-and-mushroom-gravy-6-qt-pressure-cooker-513644) needed to be tweaked to succeed in the popular electric pressure cookers available today (2018). While I was tweaking, I did away with the can of condensed mushroom soup and replaced it with a mock "Condensed Cream of Whatever" recipe (thank you, Jill Selkowitz [aka "This Old Gal"]), and sauteed an entire 8-ounce carton of cremini mushrooms (aka baby bella mushrooms) with a splash of dry sherry to suit us mushroom lovers (we vote for 1 pound of mushrooms next time!). However, you may use a can of Condensed Cream of Mushroom Soup if you wish. By the way, Cook Time includes time for pressure cooker to come to pressure and then depressurize. It is important to allow a full natural release (pin going down without any intervention) for the texture of the meat. You will get A LOT of gravy.

2 lbs boneless chuck roast, trimmed (up to 3 pounds)
1/2 teaspoon fresh ground black pepper
1 ounce onion soup mix
2 beef bouillon cubes
2 cups water
3 tablespoons unsalted butter (up to 1/4 cup for 1 pound of mushrooms)
8 ounces cremini mushrooms, trimmed, thickly sliced (up to 1 pound)
1 ounce dry sherry
1 cup milk (cold)
1/4 cup cornstarch
1 1/2 tablespoons butter, softened
1 teaspoon beef bouillon granules
1/2 teaspoon sea salt
1 dash black pepper

Steps:

  • Press Saute button on electric pressure cooker to heat up pan. When the display says "Hot", add the oil, and wait until it shimmers.
  • Sprinkle roast evenly with pepper.
  • Brown chuck roast in one layer (if it doesn't all fit, brown in 2 batches, but it is best if all fits on one level) on both sides. Remove chuck roast temporarily.
  • Add onion soup mix, beef bouillon cubes, and 2 cups water. Using a flat spatula, deglaze bottom of pan. Return chuck roast to pan.
  • Secure lid. Set for Pressure Cooking at High pressure, adjust time if necessary to 25 minutes. Begin "SAUTE MAUSHROOMS".
  • When pressure cooking has completed, allow pressure to reduce naturally, until the pin drops on its own, about 20-30 minutes. Remove lid, directing steam away from you.
  • Remove roast, keep warm. Press Saute button.
  • SAUTE MUSHROOMS:.
  • While roast is cooking, saute mushrooms. Once sauteed, toss in a splash of dry sherry, and let cook down until liquid evaporates. Magic is happening. Once cooked, remove from heat.
  • MOCK CREAM OF WHATEVER SOUP:.
  • In a 2-cup liquid measuring cup, whisk milk and cornstarch until well blended. Whisk in softened butter, beef bouillon granules, salt and pepper.
  • In the pressure cooker pan (which should be on Saute on the "Normal" or "More" setting), whisk continuously as you slowly add the milk/cornstarch mixture to the pressure cooker pan.
  • Whisk until the contents come to a boil (easier at "More" setting). Press Keep Warm/Off button. Press Saute button, then press Adjust button until it shows "Less". Simmer for one minute to thicken.
  • FINISH:.
  • Add sauteed mushrooms to sauce, and simmer for 1-2 minutes.
  • Slice roast into large chunks or thick slices, and plate.
  • Pour onion and mushroom gravy over slices, or serve in a gravy boat.

3 pounds beef tips (or beef stew cubes or beef roast cut into pieces)
salt, pepper, and garlic powder (to taste)
2 Tablespoons olive oil (or more as needed)
1 onion (diced)
1 cup fresh mushrooms
15 ounces beef broth
2 Tablespoons Worcestershire sauce
2 Tablespoons ketchup
2 Tablespoons red wine vinegar
½ teaspoon Italian seasoning
2 Tablespoons cornstarch
2 Tablespoons water

Steps:

  • Season beef with salt, pepper, and garlic powder on all sides.
  • Press the SAUTE button the Instant Pot and let it heat up. Once it's hot, add olive oil to pot.
  • Add half of the beef tips to the hot pot and saute for about 1 minute (just to sear the outside). Flip over and saute for one more minute. Remove beef tips from Instant Pot.
  • Repeat with other half of beef tips, adding more olive oil if needed.
  • Dump all beef tips back into Instant Pot and place onions and mushrooms on top. Stir and scrape the bottom of the pot, loosening up all the browned bits so that you don't get the "BURN" message on your pot (and getting maximum flavor in your dish!).
  • In a mixing bowl, mix together beef broth, Worcestershire sauce, ketchup, red wine vinegar and Italian seasoning. Pour on top of beef tips, onion, and mushrooms.
  • Place the lid on top of the Instant Pot and move the valve to SEALING. Press the MANUAL (PRESSURE COOK) button and set timer for 30 minutes.
  • When the timer is done, let the pressure do a NATURAL RELEASE (it will take at least 20 minutes, but I even prefer to let the beef sit in there for a couple hours to make sure it is super tender).
  • Remove the lid and press the SAUTE button.
  • In a separate small bowl, mix cornstarch together with water in a separate bowl. Pour cornstarch mixture into Instant Pot and mix well. Cook on SAUTE for a few minutes or until the liquid starts to thicken and turns into a gravy.
  • Serve over mashed potatoes, rice, or hot noodles.
