2 cups uncooked elbow macaroni
½ cup butter
2 (12 ounce) cans evaporated milk
1 tablespoon ground black pepper
3 eggs
1 teaspoon salt
4 cups shredded Cheddar cheese
1 pinch paprika, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

2 cups dried short cut macaroni
3 tablespoons butter, plus extra for greasing
3 tablespoons white flour
2 cups milk
1 teaspoon mild prepared mustard
1/2 teaspoon ground cinnamon
1 1/2 cups sharp cheddar cheese, grated
1 egg, beaten
4 scallions, finely chopped
1/2 cup peas (optional)
3 tablespoons chopped plum tomatoes, canned (or fresh)
2/3 cup corn kernel (fresh or canned or frozen)
salt
pepper
fresh parsley, chopped (to garnish)

Steps:

  • Preheat the oven to 350*F. Bring a large pan of lightly salted water to a boil and cook the macaroni until al dente(about 8 minutes). Rinse under cold water and drain.
  • Melt 2 tbls. of the butter in a pan and stir in the flour. Cook for 1-2 minutes, stirring. Gradually add the milk, whisking constantly until the sauce boils and thickens.
  • Stir in the mustard, cinnamon and 1 cup of the cheese. Cook gently, stirring often, until the cheese has melted, then remove from the heat and whisk in the egg. Set aside.
  • Melt the remaining butter in a small fryiing pan and cook the scallions, chopped tomatoes and corn over a gentle heat for 5-10 minutes. Add peas now if using. Season to taste.
  • Tip half of the cooked macaroni into a greased ovenproof dish. Pour over the other half of the cheese sauce and mix well. Then spoon the tomato and corn mix over the macaroni.
  • Stir the remaining macaroni into the remaining cheese sauce, then spread this carefully over the tomato and corn mixture. Top with the rest of the cheese. Bake for 45 minutes, or until the top is golden and bubbling.

This macaroni pie is just as good if not a wee bit better. It certainly needs to be compared side by side to be sure....but then, what would I do with all that pie? This recipe was titled in the magazine "Libba's Macaroni & Cheese"

  • Cook pasta, according to package directions; drain well.

  • Preheat oven to 350 degrees. Lightly grease 1 1/2 quart baking dish.

Steps:

  • Preheat the oven to 350 degrees. Oil a 9 by 13 by 2 inch baking pan.
  • In a large bowl, combine the cooked pasta with the soppressata and transfer to the baking pan.
  • In a bowl, whisk together the eggs, milk, 3/4 cup of the cheese. Add salt and pepper to taste. Pour over pasta. Sprinkle remaining cheese on top.
  • Bake the pie for 20-25 minutes or until eggs are set. If you want it slightly golden on top, broil until desired color is reached. (If you don't have soppressata, or don't want to use it, you can substitute with pepperoni.).

This is a dish from my childhood that has taken me years to recreate. I think I've finally done it. I can't go to family dinners without it! In Jamaica, we use Scotch Bonnet peppers but you can use as much or as little hot peppers as you like. Feel free to vary the combination of seasonings until you find the combination that makes your taste buds dance. You can also cut the pie into little squares and serve them on toothpicks as an appetizer. And the best thing? It freezes very well and tastes even better as leftovers!

1 (14 ounce) package macaroni
4 cups grated yellow cheddar cheese
1 (12 ounce) can evaporated milk
1 large egg
3 ounces butter
1 small onion, chopped
2 stalks scallions, chopped (white part only)
1 clove garlic (chopped)
1/2 cup chopped green pepper
1 hot chili pepper, chopped (no seeds)
1 cup dried breadcrumbs
salt

Steps:

  • Cook the macaroni in salted water until it is well done but not soggy.
  • Drain well.
  • Meanwhile, place the onion, garlic, escallion, green pepper and hot pepper in a blender with a little of the milk and puree.
  • Set aside.
  • Take out 1 cup of the grated cheese and mix with the breadcrumbs.
  • Set aside.
  • Grease a 10"x6" casserole dish with a little bit of the butter.
  • Heat oven to 350 degrees F.
  • Mix the hot macaroni with the butter until all the butter is melted.
  • Add the remaining cheese and all of the seasoning mixture and mix until the melted cheese begins to form a sauce.
  • Once everything is well incorporated, add the egg and mix well.
  • Pour mixture into the prepared baking dish and top with breadcrumb/cheese mixture.
  • Pour remaining evaporated milk slowly over the top of the mixture, taking care not to let the dish overflow.
  • Let stand for about 15 mins so that the milk is absorbed.
  • Bake for about 30 mins or until the top is brown and crusty and the milk has been absorbed.
  • Let stand for another 15 minutes before serving.

8 ounce uncooked Macaroni
2 Tablespoon unsalted butter
1-2 tablespoon jalapenos pepper minced (seeded)
1 teaspoon minced garlic
½ teaspoon smoked paprika
1 teaspoon thyme
½ cup finely diced onion
1 tablespoon flour
1 cup evaporated milk
1 egg
4 ounce mozzarella cheese (grated)
4 ounce sharp cheddar cheese (grated)
1 teaspoon salt (I used creole salt)
½ teaspoon white pepper
½ teaspoons dry mustard (optional)

Steps:

  • Cook macaroni according to package directions.Be sure to salt water before cooking.
  • Meanwhile, in a saucepan, sauté the garlic, thyme, Jalapeno pepper, smoked paprika for about 1 minute in 2 tablespoons butter.
  • Then add onions and continue cooking for about a minute more.
  • Proceed by adding the flour; whisk until blended. Gradually add milk. Bring to a boil; cook and stir until mixture thickens. Remove about ¼ cup of the mixture and slowly whisk with the egg making sure it doesn't curdle. Dump the tempered egg back into the pan.and mix well to incorporate all ingredients.
  • Stir in more than half of the cheese (leave the rest to sprinkle on top) .
  • Drain macaroni and add to sauce; stir until coated. Add mustard and white pepper .Adjust seasonings. Transfer to a greased 2-quart baking dish or 13-in. x 9-in. baking dish. Sprinkle remaining cheese on top . Bake, uncovered, at 350° for 20 -30 minutes or until heated through.

  • Make up the pasta, according to the pack instructions - drain well and divide between 2 medium dishes or 1 large one
  • Make a roux - melt the butter, add the green seasoning and hot pepper sauce, to taste. Add the flour and stir well. Gradually add the milk, stirring well between additions. When it has the consistency of really thick cream, stir in half of the cheese. Add enough milk to a double cream consistency. Check for seasoning and add salt and pepper to taste.
  • Mix the sauce with the pasta, don't make it too wet. It should come to the top of the pasta, that should be enough. Cover the surface with the rest of the cheese and put in a pre-heated oven 180c for approx 45 minutes

  • In a large bowl, mix the Cheddar and mozzarella, and set aside. In a small bowl, whisk the evaporated milk, egg, tomato paste, garlic and onion powders, mustard, thyme, Scotch bonnet pepper, 1 teaspoon salt, and a generous pinch of black pepper until very well blended.
  • Cook macaroni in boiling salted water according to the package directions for al dente. Drain and return to the pot. Stir in the tablespoon of butter until melted, then add half the cheese and stir until it's fully combined and starting to melt. Stir in the milk mixture until the pasta is evenly coated. Pour the pasta into the buttered dish, spread it evenly and sprinkle the rest of the cheese on top.
  • Bake until the top is bubbling and golden brown, 35 to 40 minutes.
  • Remove from the oven and let rest for at least 10 minutes to help it firm up. The dish can be made up to a day in advance, tightly covered with foil or plastic wrap, and refrigerated, or cut into serving sizes, wrapped tightly and frozen. Reheat covered with foil in a 350-degree oven or in a covered skillet on the stove.
