I made this recipe as a spin-off of Portuguese kale soup. I liked it so much! I like to serve this with freshly squeezed lemon juice or grated Parmesan cheese (but not both).

4 tomatoes, peeled and chopped
1 tablespoon butter
1 tablespoon dried minced onion
salt and ground black pepper to taste
2 tablespoons olive oil
4 stalks celery, chopped
1 onion, chopped
3 cloves garlic, minced
2 bay leaves
8 cups hot water
½ head green cabbage, shredded
½ cup beef base
1 teaspoon herbes de Provence
1 pinch red pepper flakes
1 (15 ounce) can kidney beans, rinsed and drained
1 bunch kale, chopped

Steps:

  • Combine tomatoes, butter, dried minced onion, salt, and black pepper in a small saucepan over medium heat. Bring mixture to a simmer, place a cover on the saucepan, and cook at a simmer for 15 minutes.
  • Heat olive oil in a stock pot over medium heat. Cook and stir celery, onion, garlic, and bay leaves in hot oil until onion is translucent, about 5 minutes. Add tomato mixture; cook and stir another 5 minutes.
  • Remove and discard bay leaves. Pour water into the stock pot. Stir green cabbage, beef base, herbes de Provence, and red pepper flakes into the water. Loosely cover the stock pot and cook the mixture for 25 minutes.
  • Stir kidney beans and kale into the soup. Again loosely cover the pot and continue cooking another 15 minutes.

DH and I have been going to a little place called Cafe Rio for years. About the only thing we ever order there is Portuguese kale soup. I have tried to duplicate the recipe for several years and this is as close as it gets. The linguica sausage is a must.

1 bunch kale
1/2 head green cabbage
6 -8 cups chicken stock or 6 -8 cups canned reduced-sodium chicken broth
1 lb linguica sausage, sliced 1/4 inch thick
1 lb red potatoes, diced
2 (15 1/4 ounce) cans dark red kidney beans
1 (14 1/2 ounce) can diced tomatoes
1 medium onion, chopped
3 garlic cloves, minced
2 teaspoons crushed red pepper flakes
3 bay leaves
1/8 teaspoon Hungarian paprika
1 -2 tablespoon olive oil
coarse salt
fresh ground black pepper

Steps:

  • Wash kale under running water.
  • Strip from tough stem, coarse chop and set aside.
  • In the food processor, using the medium shredder blade, shred cabbage, drain and rinse beans.
  • Heat the olive oil in a large stock pot, add sausage, chopped onion and minced garlic.
  • Cook, stirring occasionally until the onion is transparent.
  • Add remaining ingredients, bring to a boil, reduce heat and simmer for about 45 minutes to 1 hour.
  • Adjust chicken stock as needed for desired consistency.
  • Add salt and pepper to taste, remove bay leaf and serve hot with a coarse bread.

CABBAGE AND KALE SOUP

3 qt chicken stock
1 medium savoy cabbage chopped
2 bunch kale chopped
16 slice toasted italian bread
1 clove garlic
1 lb bacon cut in to lardons
1 can(s) anchovies
3 sprig(s) rosemary sprigs
7 oz fontina cheese
5 oz parmesan cheese

Steps:

  • 1. Preheat your oven to 350 degrees F. Bring the stock to the boil in a large saucepan and add the cabbage and kale. Cook for a few minutes until softened (I did this in 2 batches). Remove the cabbage and kale to a large bowl, leaving the stock in the pan.
  • 2. Toast all but 5 of the bread slices or in a toaster or on a cookie sheet in your oven, then rub them on 1 side with the garlic as they come out of the oven or toaster, and set aside.
  • 3. Next, heat a large deep fry pan on the stovetop, start to fry your lardons of bacon (lardon is bacon cut into rectangular pieces) now add your anchovies. When the bacon is golden brown and sizzling add the anchovies. Once the anchovies are melted, add the rosemary and cooked cabbage and toss to coat the greens in all the lovely flavors. Put the mixture and all the juices back into the large bowl.
  • 4. Place 4 of the toasted slices in the casserole-type dish, in 1 layer. Spread over 1/3 of the cabbage leaves, sprinkle over a 1/4 of the grated fontina and Parmesan and add a drizzle of olive oil. Repeat this twice, but don't stress if your pan's only big enough to take layers - that's fine. Just pour in all the juices remaining in the bowl and end with a layer of untoasted bread on top. Push down on the layers with your hands.
  • 5. Pour the stock gently over the top until it just comes up to the top layer. Push down again and sprinkle over the remaining fontina and Parmesan. Add a good pinch of salt if you did not add the anchovies and drizzle over some good-quality olive oil. Bake in the preheated oven for around 30 minutes, or until crispy and golden on top.
  • 6. This is a great hearty dish for those crisp cool nights!

This soup is probably my mom's favorite thing that I've ever made. The funny thing is, it's inspired by her guilty pleasure: the Olive Garden. I can see why she likes it, though-it's hearty, with bright green kale, homemade sausage, and a little Parmesan to take the savory flavor to a whole new dimension.

1 1/3 tablespoons fennel seeds
1 pound pork shoulder, boneless, cubed
1 tablespoon Espelette pepper
1 teaspoon red pepper flakes
Salt, to taste

5 cloves garlic

3 Yukon Gold potatoes, peeled
1 tablespoon sherry vinegar
1 bunch kale, stems removed, roughly chopped

Steps:

  • For the sausage: Heat a dry skillet and toast the fennel seeds until fragrant. Add toasted fennel to the pork along with the Espelette pepper, red chili flakes and a big pinch of salt. Toss and set aside. Over high heat, coat the bottom of a soup pot or Dutch oven with olive oil. Position the meat grinder over the pot. Add 5 whole garlic cloves and the onions to the meat mixture. Turn the grinder on high and run the sausage mixture through the grinder. Use the plunger if needed to push the meat through and into the heated soup pot to brown.
  • For the soup: When the sausage has begun to brown and caramelize, add the onions and garlic, roughly chopped, to the pot. Stir the sausage mixture so it doesn't stick to the bottom; then add olive oil and cook 2-3 more minutes. Add the stock and a pinch of salt, scrape the bottom of the pot with a wooden spoon, and cover. Bring to a rolling boil over high heat.
  • As the soup comes to a boil, thinly slice the potatoes on a mandoline. Stir them into the soup, making sure the slices come apart. Add plenty of freshly ground black pepper and another pinch of salt. Cover, bring back to a rolling boil, and continue to let boil for 20 minutes.
  • Finish the soup: Reduce heat to low and remove lid. The potatoes should be broken down and the soup thickened. Adjust the seasoning with salt and pepper; then stir in the vinegar. Pull the fibrous stem out of the kale leaves and discard; roughly chop the leaves and add to the soup to wilt. Ladle into bowls and serve with more pepper, salt, a drizzle of olive oil, and a fresh grating of Parmesan.

This is an incredibly tasty soup, despite the fact that the ingredients don't sound that exciting when you first read it. Kale is very nutritious and the soup is low in fat and carbs I believe. It's a really good addition to a diet.

Steps:

  • Saute the chopped onion in the olive oil until golden.
  • Add chopped kale, carrot and shredded brussel sprout and allow to soften a little.
  • Pour over the stock and bring to the boil, adding the sprig of rosemary. Simmer for 45 minutes adding more stock if required. At this stage the soup will be very watery.
  • Drain the can of beans, rinse in a colander and then mash with a fork or blend. Add the mashed beans to the soup. This will make th broth a little thicker and give it an interesting texture and flavour.

MOM'S CABBAGE SOUP

On rainy days, I often want comfort food-something to warm my belly and my soul! This very easy cabbage soup recipe is something my mother would make for me on days just like this. Her version has a ham hock, but you can use kielbasa instead, or go no-meat, the way I did.

2 tablespoons olive oil
1 large onion, chopped
4 stalks celery, chopped
1 cup chopped carrots (from 4 medium carrots, peeled)
2 cloves garlic, minced
Kosher salt and freshly ground pepper
Crushed red pepper flakes
Handful fresh cherry tomatoes, halved (about 10 small cherry tomatoes)
One 28-ounce can diced tomatoes
64 ounces vegetable stock (2 quarts) (8 cups), plus more if desired
1 medium head cabbage, cored and chopped (about 1 3/4 pounds)
One 15-ounce can cannellini beans, drained and rinsed
1/2 cup chopped fresh flat-leaf parsley
1 loaf your favorite French bread, sliced on the diagonal
Olive oil, for brushing and drizzling
Minced garlic, for topping (optional)
Flaky or crystal sea salt, for sprinkling

Steps:

  • For the soup: Heat the olive oil in a stockpot over medium heat. Add the onion, celery, carrots and garlic and cook, stirring often, until the onions are translucent (not browned), about 8 minutes. Add salt, black pepper and crushed red pepper flakes to your desired preference. Then stir in the fresh tomatoes, canned tomatoes and vegetable stock and bring the entire mixture to a boil.
  • Once boiling, stir in the cabbage and beans and keep it simmering, stirring occasionally, until the cabbage is tender, 35 to 40 minutes. Add more stock or water if you prefer more liquid and taste and season with more salt and pepper, if necessary. When finished, sprinkle over and stir in the parsley for color and flavor.
  • Ladle the soup into bowls and serve with crostini or garlic bread, if desired.
  • For the crostini: Preheat your oven to 350 degrees F.
  • Place the bread slices on a baking sheet. Brush the tops with olive oil. You can also smear minced garlic over the top, if desired.
  • Bake until crunchy and golden brown, 15 to 20 minutes. Take the crostini out of the oven, drizzle the tops with olive oil and sprinkle sea salt over the top.

Steps:

  • Add in garlic, ginger and fresh turmeric, (if using ground, add later) cook for 1 more minute.
  • Add mushrooms and sauté for about 10 minutes or until the mushrooms soften.
  • Add salt, pepper, ground turmeric (if using) water or stock and bring to a boil.
  • Simmer covered for 30 minutes to develop flavors.
  • Add cabbage and kale. Simmer for 5-10 minutes until cabbage and kale are tender.
  • Taste to adjust salt.
  • Serve warm garnished with hemp seeds (optional). Store for up to 1 week in the refrigerator.
