1/2 cup julienned red bell pepper
1/2 cup julienned yellow bell pepper
1 cup snow peas, stringed and julienned
3 1/2 -ounce package enoki mushrooms
1 cup bean sprouts
1 recipe seasoned Buckwheat or Soba Noodles, recipe follows

1 tablespoon balsamic vinegar
1 teaspoon chili flakes
1 teaspoon kosher salt

Steps:

  • In a large bowl filled with warm water, soak 1 rice paper wrapper for about 20 seconds or until soft. Lay wrapper out on a tea towel to absorb excess water. Transfer wrapper to a flat surface. Turn in the sides and continue rolling up from the bottom.
  • To serve, slice the roll in half on a bias. Serve with Orange-Chili Dipping Sauce.
  • In a medium sized bowl, whisk together the sesame oil and rice wine vinegar. Toss the cooked buckwheat noodles in the sesame mixture. Set aside.

RAINBOW RICE PAPER ROLLS

Rainbow rice paper rolls image

Escape from a lunchtime sandwich rut with these rice paper rolls. Red cabbage and radishes add a lovely pop of colour, or try iceberg or Little Gem lettuce

Provided by Cassie Best

Categories     Lunch

Time 40m

Yield Makes 12

Number Of Ingredients 14

50g fine vermicelli rice noodles
12 rice paper wraps
handful of mint or coriander leaves, or snipped chives (or a mixture)
200g cooked prawns , or cooked and shredded chicken
¼ cucumber , trimmed and finely sliced into matchsticks
1 carrot , trimmed and finely sliced into matchsticks
40g red cabbage , very finely sliced
small handful of radishes , trimmed and thinly sliced
½ mango , stoned, halved and finely sliced
2 tbsp sweet chilli sauce
1 tbsp tahini
1 tbsp low-salt soy sauce
1 tsp sesame oil , plus extra for drizzling
½ lime , juiced

Steps:

  • Soak the noodles in boiling water from the kettle, following pack instructions. Drain and rinse under cold running water to cool, then toss in a little sesame oil to stop them sticking together.
  • Next, make the dipping sauce by mixing all the ingredients together. Set aside.
  • Fill a wide, shallow dish a few centimetres deep with warm water. Working with one rice paper wrap at a time, soak it for a few seconds until it's flexible, then lay it on a chopping board. Scatter some of the herbs down the centre, then top with a couple of prawns or a little bit of chicken, then some veg pieces and mango, and a small bundle of noodles. Try to keep the fillings in the centre, and don't overfill. Tuck the ends of the wrap over the ingredients to slightly enclose them, then roll up from the sides, keeping everything as tight as you can. Put the finished rolls on a plate covered with a damp sheet of kitchen paper until you're finished assembling all the rolls. Will keep in the fridge for up to 24 hrs. Serve with the sesame dipping sauce.

  • While the tofu is baking you can begin to prepare all of your ingredients. Finely julienne the red pepper, carrot, and cucumber (you can use a julienne peeler for the carrot and cucumber as well) I aim for slices between 4-5 inches long (but this depends on the size of your rice paper, mine are about 8" (20 cm).) Thinly slice the spinach and green onion.
  • Soak a single rice paper in the hot water until it's completely soft and flexible. This could take anywhere from a few seconds to more than 30 seconds depending on the brand/type of rice paper. I have best results soaking them for about 30 seconds.
  • Lift the side of the rice paper that's closest to you, gently pull it forward (away from you) over the fillings. Hold the wrap firmly while you fold in each end of the wrap. Continue rolling to seal the seam. Refer to the GIF above for a demo.
  • Combine all ingredients in a bowl and whisk vigorously OR combine all ingredients in food processor and pulse.

  • While the tofu is baking, prepare the vegetables. Shred the carrot using a julienne peeler or mandoline, or a very sharp knife. Cut the other vegetables into similar sizes, and as thinly as possible.
  • In a medium-sized bowl, whisk together sesame oil, almond butter, liquid aminos, rice vinegar, brown sugar, ginger, crushed garlic. Add a bit of sambal oelek or other chili paste if using, to taste.
  • Create and assembly station with a large dish of cold water for soaking the rice papers, something to assemble on (a cutting board does nicely), lettuce, veggies, tofu, and fresh herbs.
